Yield 3-4 servings

Number Of Ingredients 8

4 poblano chiles or 1 small can diced green chiles
1 pound groud bison
1/2 cup finely chopped cilantro
1/4 cup finely chopped onion
1 tsp cumin
1/2 tsp chili powder
1/2 tsp salt (optional)
4 fried eggs

Steps:

  • Cut chiles in half lengthwise and discard seeds. Place halves, skin side up, on a foil-lined baking sheet and broil until blackened, 5-10 minutes. Place in a plastic bag and seal. Let stand 15 minutes. This will loosen the skin so it is easier to peel off. After peeling, discard skins and roughly chop the chiles. In a bowl mix diced chiles with meat, cilantro, onion, spices and salt. Form into burgers and grill. While the burgers are grilling, fry the eggs. Serve the fried eggs on top of the burgers. If you like, garnish with avocado and lettuce.
