2 pounds cooked medium shrimp, peeled and deveined
1 medium red onion, sliced and separated into rings
2 medium lemons, cut into slices
1 cup pitted ripe olives, drained
1/2 cup olive oil
1/3 cup minced fresh parsley
3 tablespoons lemon juice
3 tablespoons red wine vinegar
1 garlic clove, minced
1 bay leaf
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a 3-qt. glass serving bowl, combine shrimp, onion, lemons and olives. In a jar with a tight-fitting lid, combine remaining ingredients; shake well. Pour over shrimp mixture and stir gently to coat. , Cover and refrigerate for 24 hours, stirring occasionally. Discard bay leaf before serving.

3 pounds cooked, tail-on medium shrimp, peeled and deveined
1 large Vidalia onion (about 1 lb.), thinly sliced (4½ cups)
1 (3.5-oz.) jar capers, undrained
1/2 cup extra-virgin olive oil
1/4 cup white wine vinegar
2 tablespoons granulated sugar
1 tablespoon Worcestershire sauce
1 tablespoon lemon zest plus 3 Tbsp. fresh juice (from 2 lemons)
1/2 teaspoon table salt
1/2 teaspoon black pepper
1 pint heirloom cherry tomatoes

Steps:

  • Combine shrimp and onion in a large bowl. Add capers and caper brine.
  • Place olive oil, vinegar, sugar, Worcestershire sauce, lemon zest, lemon juice, salt, and pepper in a medium bowl. Whisk until sugar is dissolved. Pour over shrimp. Cover and refrigerate 24 hours, stirring occasionally.
  • Cut tomatoes in half; add to shrimp, and toss to combine. Cover and refrigerate 12 hours.

2 tablespoons fresh lemon juice
2 tablespoons prepared horseradish
2 tablespoons seafood sauce or 2 tablespoons ketchup
1 tablespoon finely chopped chives
1 teaspoon hot pepper sauce (tobasco)
1 clove garlic, smashed
1 teaspoon Dijon mustard

¾ cup vegetable oil
⅔ cup vinegar
2 teaspoons hot pepper sauce
3 teaspoons celery seed
1 teaspoon salt
2 large onions, chopped
1 ½ pounds cooked shrimp, peeled and deveined without tail

Steps:

  • In a large stainless steel or glass mixing bowl, combine the oil, vinegar, hot sauce, celery seed and salt. Mix thoroughly. Place the chopped onions and shrimp into the oil mixture. Toss to coat evenly. DO NOT use an aluminum mixing bowl! The high acid content in the vinegar could cause a reaction with the aluminum and poison the food.
  • Place the mixture in the refrigerator and chill over night.

1 yellow bell pepper sliced
1 c vegetable broth
1 c red wine vinegar
3 Tbsp sugar
1 Tbsp grated lemon rind
3 Tbsp fresh lemon juice
1 Tbsp white wine n worcestershire sauce
1 Tbsp hot pepper sauce
1 Tbsp dijon mustard
1/2 tsp salt
2 cloves garlic minced
1/2 c finely chopped fresh basil

Steps:

  • 1. layer shrimp , red onions, and bell pepper slices in air tight container set aside... in medium bowl add oil,vinegar, sugar,lemon rind and juice,worcestershire, hot sauce, dijon, salt n garlic..whisk together pour over shrimp cover n chill for 24 hours stirring occasionally stir in basil 1 hour before serving :)
