This Breakfast Casserole with Bacon is a classic baked egg casserole loaded with savory rich flavors. - Preheat the oven to 350˚F.
- In a large bowl, mix the eggs, heavy cream, 1/2 cup cheddar, salt and pepper together. Then pour the mixture in a greased 9x13" casserole dish.
- Drop the cubes of cream cheese evenly throughout the egg mixture.
- Bake for 35 minutes, then sprinkle the remaining cheddar cheese and bacon over the top of the casserole and then return to finish baking 10-20 minutes or until the center is just set and springs back when touched.

- Cube bread and leave out overnight or place in the oven at 300°F for about 10 minutes to dry slightly. (Do not brown or toast it).
- Combine eggs, milk, & seasonings.
- Layer ½ of the cubes in a greased 9×13 pan. Top with ½ of the bacon, green onions, red peppers and cheese. Repeat layers one more time.
- Pour egg mixture over top. Cover and refrigerate overnight (or at least 3 hours).
- Remove from fridge and let sit on the counter while preheating the oven to 350°F. Bake covered with foil 45-55 minutes or until a knife inserted in the center comes out clean. (If you are baking 2 pans increase cooking time to 60-80 minutes).

- Cut strips of bacon into 1/2-inch pieces and cook over medium heat until crisp. Blot with paper towels and discard accumulate bacon fat. Remove crusts from bread, and reserve for another use. Cut bread slices into cubes, and set aside. In a large bowl, whisk eggs, milk, cheese, and dry mustard together. Fold in bacon and cubed bread, and spoon mixture into a buttered 8x8-inch square baking dish. Cover tightly, and refrigerate overnight.* Remove from refrigerator and let stand at room temperature for 15 minutes. Bake, uncovered, at 325 degrees for 45 minutes or until a knife inserted midway between center and outer edge comes out clean.

BACON BREAKFAST CASSEROLE

- In a large skillet, cook bacon in batches over medium heat until crisp. Remove to paper towels to drain., In a greased 4- or 5-qt. slow cooker, layer a third of each of the following: potatoes, reserved bacon and cheese. Repeat layers twice. In a large bowl, whisk eggs, milk, salt and pepper; pour over top. Cook, covered, on low until eggs are set, 4-5 hours. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. If desired, sprinkle with parsley.
