CRISPY ROASTED GARLIC AND ROSEMARY POTATOES



Crispy Roasted Garlic and Rosemary Potatoes image

Golden potatoes roasted with garlic and rosemary are your perfect side dish.

2 ½ pounds Yukon gold potatoes (cut into 1 and 1/2 inch chunks)
1 head garlic (cloves separated and peeled.)
1-2 tablespoons fresh rosemary (chopped)
1/4 cup olive oil
salt
pepper

Steps:

  • Preheat oven to 425°F with baking sheet in the oven so that it gets hot.
  • In a bowl, add potatoes, garlic cloves, olive oil and rosemary, salt and pepper to taste. Toss until everything is fully coated in oil.
  • When oven is hot, carefully remove baking sheet and pour potatoes onto the hot pan, arranging in a single layer. Flip potatoes so that the cut side is facing the pan (that is how they will get crispy).
  • Bake for 45-60 minutes, flipping halfway through. They are done when potatoes and garlic are golden brown.

5 lb yukon gold potatos, peeled & cubed (medium)
1/4 c olive oil
2 tsp dried rosemary roughly chopped
1 Tbsp freshly grated coarse pepper
2 tsp sea salt
6 clove garlic
1 medium yellow onion diced

Steps:

  • 1. Place peeled and cubed potatos in large bowl, with diced onion,rosemary, salt/ pepper and olive oil. Meanwhile in oven roast garlic cloves in a piece of aluminum foil with a drizzle of olive oil and salt & pepper, secure foil and roast in oven 30-40 minutes til softened,remove from foil, remove garlic skin and smash with fork then add to bowl of potatos, mix all ingredients well and cover and let sit in fridge for about an hour.
  • 2. Remove potatos onto baking sheet, cook in 375 degree oven for abt. an hour or until golden. Move the potatos around and gently turn them to ensure even browning,abt every 10 min or so.
  • 3. Remove from oven once golden brown, Enjoy!!!

1 1/2 pounds small red or white-skinned potatoes (or a mixture)
1/8 cup good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoons minced garlic (3 cloves)
2 tablespoons minced fresh rosemary leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
  • Remove the potatoes from the oven, season to taste, and serve.

2 pounds red-skinned or Yukon gold potatoes
3 tablespoons olive oil
1 tablespoon rosemary
12 cloves garlic, with their skins intact
Coarse salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 350 degrees. Peel away any damaged bits from the potatoes, leaving a generous amount of skin. Cut the potatoes in half, or quarters if they are large.
  • Pour the oil over the bottom of a baking dish large enough to hold the potatoes without crowding them in one layer. (You may need two dishes; a cast-iron pan will also do.) Add the potatoes, rosemary and garlic, season them with salt and pepper and stir them so they are coated with the oil. Bake for one to one-and-a-half hours, turning the potatoes from time to time.
