4 teaspoons kosher salt
2 cups buttermilk
4 eggs
3 cups panko breadcrumbs
4 tablespoons olive oil
2 large yellow sweet onions, such as Maui, sliced 1/4-to-1/2-inch thick

I saw this is America's Test Kitchen today and they looked so delicious! They used Regular Lay's potato chips and saltine crackers for their breading, but they didn't say how much, I am guessing at least 1/2 cup of each.

CRISPY OVEN BAKED ONION RINGS

Crispy Oven Baked Onion Rings image

I am trying to stay healthy, but sometimes you like a burger and some onion rings, right?!?! Well, here's what I came up with for the onion rings. I have used all panko bread crumbs when I didn't have any baked potato chips, and all baked potato chips when I felt naughty, and they are all good. I usually just make this recipe for the 2 of us, and we don't have many leftover if any.....and my husband doesn't normally order rings when we are out! Let me know which way you like best :)

Provided by CookingBlues

Categories     Onions

Time 50m

Yield 14 rings, 4 serving(s)

Number Of Ingredients 10

canola oil cooking spray
2 cups breadcrumbs, panko
2 cups baked potato chips, plain
1/2 teaspoon cayenne
1 cup low-fat buttermilk
2 tablespoons all-purpose flour
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 -2 large vidalia onion, peeled

Steps:

  • Preheat the oven to 450 degrees F.
  • Line a baking sheet with aluminum foil for easy clean-up and spray it slightly with oil and set aside.
  • Place potato chips and panko bread crumbs in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside.
  • In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside.
  • Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.
  • Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat.
  • Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip mixture and place on baking sheet. NOTE: For those having problems with the coating not sticking, the secret is LET THEM REST! Don't just throw them in the oven from the coating! Give them at least 5-10 minutes to soak in all that good coating you just put on and they'll stick just fine.
  • Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.

OVEN BAKED ONION RINGS - CRUNCHY!

Oven Baked Onion Rings - Crunchy! image

From America's Test Kitchen, haven't tried yet, they looked so crunchy and delicious, can't wait to make them. The coating is interesting! Supposedly, the kettle cooked chips provide a great crunch.

Provided by Lakerdog2

Categories     Onions

Time 40m

Yield 24 rings, 4 serving(s)

Number Of Ingredients 9

1/2 cup all-purpose flour
1 large egg, at room temperature
1/2 cup buttermilk, at room temperature
1/4 teaspoon cayenne pepper
salt & fresh ground pepper
30 saltine crackers
4 cups kettle-cooked potato chips, crumbled into smaller pieces
2 large yellow onions, cut evenly into 1/2-inch-thick rounds
6 tablespoons vegetable oil

Steps:

  • Adjust oven racks to lower-middle and upper-middle positions and heat oven to 450 degrees.
  • Place 1/4 cup flour in shallow baking dish. Beat egg and buttermilk together in medium bowl. Whisk remaining 1/4 cup flour, cayenne, 1/2 teaspoon salt, and 1/4 teaspoon pepper into buttermilk mixture.
  • Pulse saltines and chips together in food processor until finely ground and place in separate shallow baking dish.
  • Pull apart the rings in each round, discarding any that are less than 2 inches in diameter. Working one at a time, dredge each onion ring in flour, shaking off excess. Dip in buttermilk mixture, allowing excess to drip back into bowl, then drop into crumb coating, turning ring to coat evenly. Transfer to large plate and repeat with remaining onion rings.
  • Pour 3 tablespoons oil onto each of two rimmed baking sheets. Place in oven and heat until just smoking, about 8 minutes. Carefully tilt heated sheets to coat evenly with oil, then arrange onion rings on sheets.
  • Bake, flipping onion rings over and switching and rotating position of baking sheets halfway through baking, until golden brown on both sides, about 15 minutes. Transfer onion rings to plates lined with paper towels to drain briefly. Serve immediately.
