1 teaspoon butter
9 large eggs
½ cup sour cream
½ cup milk
1 teaspoon salt
2 green onions, chopped
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish with butter.
  • Beat eggs, sour cream, milk, and salt in a bowl until blended. Stir in green onions. Pour mixture in the prepared baking dish.
  • Bake in the preheated oven until set, 25 to 30 minutes. Sprinkle Cheddar cheese over eggs and continue baking until cheese is melted, 2 to 3 minutes more.

6 eggs
1/2 cup milk
1 cup shredded cheese (whatever you have in your fridge)
1/4 cup sliced fresh mushrooms
1/4 cup diced green pepper
1 tablespoon dried onion or 1 tablespoon fresh onion, if you prefer
salt and pepper

Steps:

  • Whip eggs and milk together. Add in rest of ingredients.
  • Pour into round casserole dish --> or pie dish.
  • Cook at 350 for 20-25 minutes.
  • Can also add meats like bacon, sausage, or ham. Also chopped tomatoes are good in this recipe --> just make sure you take all the gunk out (seeds). Asparagus lovers just chop and throw in, mighty tasty.
  • Many different variations to this recipe.

1 cup milk
1 teaspoon canola oil
½ cup diced onion
1 cup diced low-fat ham
6 slices reduced-fat provolone cheese
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.
  • Beat eggs together in a large bowl. Stir milk into eggs.
  • Heat oil in a skillet over medium heat; saute onion until softened, 5 to 10 minutes. Add ham; cook and stir until ham is warmed, 2 to 3 minutes. Transfer onion-ham mixture to the prepared baking dish. Layer provolone cheese over onion-ham mixture. Pour egg mixture over cheese; season with salt and pepper.
