3 large yellow onions, sliced
4 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons beef broth or 2 tablespoons water
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 400°F.
  • Line a baking sheet with aluminum foil.
  • Add the onions to the prepared baking sheet and top with the remaining ingredients. Toss to combine thoroughly, separating the onion slices.

  • By now the onions should be softened and golden in color. If it appears dry, add a splash more broth or water.
  • Continue to bake for 15-20 minutes, tossing twice.

1/4 cup extra-virgin olive oil
1 1/4 pound onions (2 large), halved and thinly sliced
14 to 16 ounces pizza dough, thawed if frozen
1/4 pound Gorgonzola dolce, crumbled (1 cup)
1/2 cup walnuts, toasted and coarsely chopped
1/4 cup chopped flat-leaf parsley

Steps:

  • Heat oil in a 12-inch heavy skillet over medium heat until it shimmers, then cook onions with 1/2 teaspoon salt and 1/4 teaspoon pepper, covered, stirring occasionally, until golden, 15 to 20 minutes. Transfer to a small bowl and keep warm, covered.
  • Put a large heavy baking sheet (17 by 14 inches) on lowest rack of oven, then preheat oven to 500°F.
  • Meanwhile, roll out dough on a lightly floured surface with a floured rolling pin, stretching corners with your hands to form a 16- by 13-inch rectangle. (Dough will be easier to roll out as it warms.) Transfer to a large tray lined with sheet of parchment paper. Lightly prick dough all over with a fork, then slide dough (on parchment) from tray onto hot baking sheet.
  • Bake until top is puffed and pale golden in patches, about 10 minutes. (Prick any large bubbles with a fork and flatten.) Remove crust from oven and leave oven on.
  • Sprinkle crust evenly with cheese, walnuts, and parsley. Bake pizza until edge of crust is deep golden, cheese is bubbling and golden in patches, and underside is golden brown, 2 to 4 minutes. Serve immediately.

These made be made on the grill or in the oven, great to take camping as you can prepare the foil packages ahead of time then just stick on the grill, they are great on top of burgers, steaks and even fish -- one onion for each packet but of coarse you may make as many packets as desired! --- see bottom of recipe for oven cooking :)

1 large sweet onion (peeled and cut into wedges)
1 1/2 tablespoons butter (can use 2 tablespoons) or 1 1/2 tablespoons margarine, finely cubed (can use 2 tablespoons)
1 teaspoon beef bouillon powder
1 pinch garlic powder
1/8 teaspoon salt (or to taste, I use Lawry's seasoned salt)
fresh ground black pepper (to taste)

Steps:

  • Set outdoor grill to medium.
  • Place the onion wedges on a large square of heavy-duty foil.
  • Dot the top of the wedges with butter cubes, then sprinkle with bouillon powder, garlic powder, salt and ground black pepper.
  • Fold the foil square into a packet.
  • prick a small hole in the top of the packet to allow heat to escape.
  • Place the packet (hole-side facing up) on the preheated grill.
  • Cook for about 45 minutes to 1 hour or until the onions are a deep golden brown (shake the packet or open and stir the onions about halfway through to prevent burning).
  • For oven baking; place the sealed foil packets on a small jelly-roll sheet.
  • Bake 375 degrees F for about 45-50 minutes.

CARAMELIZED ONIONS - OVEN BAKED - GREAT FOR OAMC

I love caramelized onions but being a busy cook, I often end up with burnt onions if I'm distracted. My mother taught me this oven method and it's just the thing when I'm preparing my OAMC and need onions. I usually throw 1/4 - 1/2 cup in the zip lock bag when assembling anything that calls for ONIONS! Another nice thing about using the oven for these is how much can be prepared at one time. I chop my onions into big 1" pieces if using for soups, stews, or roasted meats. If using in a dish that will be frozen, cool the mixture before adding to other ingredients. You can also add a little cayenne pepper before baking if you want to spice them up. And if you're making burgers for the family, slicing them into 1/2" rings (and separating)before baking looks pretty cool.

  • Preheat oven to 500°F.
  • Spread a large sheet of foil on top of a baking sheet leaving enough to pull around the onions (and seal) once they're baked.
  • Roughly chop and place the onions in a large bowl. Toss with just enough of the oil to lightly coat. Salt and pepper to taste. You can also use a little cayenne or red pepper flakes if you like the spice.
  • Put prepared onions on the foil covered tray and spread out as much as possible.
  • Bake 30 - 40 minutes Do not let onions burn.
  • Remove from oven and carefully seal the onions in the foil they were baked on.
  • Set foil packet aside for 5-10 minutes so onions can finish steaming.
  • If preparing to use as a sauce or condiment, substitute melted butter for the olive oil. I don't use butter if I'm making these to use in my freezer meals.

1 package dry yeast (about 2 1⁄4 teaspoons)
1 cup warm water (100°to 110°), divided
2 tablespoons extra virgin olive oil, divided
1 to 2 teaspoons chopped fresh rosemary
11⁄2 teaspoons salt, divided
Cooking spray
2 1⁄4 cups vertically sliced red onion
1 tablespoon sugar
1/2 teaspoon grated orange rind
1/8 teaspoon freshly ground black pepper
1/4 cup coarsely chopped walnuts
20 Oven-Dried Fig halves**
1/2 cup (2 ounces) crumbled blue cheese

Steps:

  • Lightly spoon flour into dry measuring cups; level with a knife. Combine 1⁄2 cup flour and yeast in a large bowl, stirring with a whisk. Add 1⁄2 cup warm water; let stand 30 minutes. Add 2 cups flour, remaining 1⁄2 cup water, 1 tablespoon oil, rosemary, and 1 1/4 teaspoons salt; stir until a soft dough forms. Turn dough out onto a lightly floured surface. Knead until smooth and elastic (about 8 minutes), and add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel tacky). Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size. (Press two fingers into dough. If an indentation remains, the dough has risen enough.) While dough rises, heat remaining 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add onion and sugar; cook 15 minutes or until deep golden brown, stirring mixture occasionally. Add remaining 1⁄4 teaspoon of salt, orange rind, and pepper. Cool mixture slightly. Preheat oven to 425°. Punch dough down; form into a ball. Place dough on a baking sheet coated with cooking spray; let rest 5 minutes. Roll dough into a 14 x 12-inch rectangle (about 1⁄4 inch thick). Arrange onion mixture, walnuts, and Oven-Dried Fig halves evenly over dough, leaving a 1⁄2 inch border on all sides. Sprinkle with cheese, and gently press toppings into dough to adhere. Bake at 425 degrees for 20 minutes or until flatbread is golden brown and cheese melts. ** To make Oven-Dried Figs, arrange figs in a single layer on a foil-lined baking sheet coated with cooking spray. Bake at 250 deg for 1-1/2 to 2 hours or until almost dry but still soft.

This is a great alternative to traditional. It is much less labour-intesive and produces very sweet and flavourful onions. Recipe is from Bob Blumer, the Food Network's "Surreal Gourmet".

2 medium red onions
1 1/2 cups chicken stock or 1 1/2 cups vegetable stock
2 tablespoons balsamic vinegar
4 sprigs rosemary (or both) or 4 sprigs thyme (or both)
salt and pepper

Steps:

  • Preheat oven to 400 degrees.
  • Remove papery skin from onions. Slice onions in quarters from top to bottom so each quarter includes some of the core to hold it together.
  • Set quarters in a small baking dish, pointy side up. Season with salt and pepper, add stock and balsamic and top with herbs. Cover tightly with aluminum foil and bake for 45 minutes. Remove foil and bake for 30 more watchful minutes or until onions are very caramelized and the liquid is reduced to a thick glaze.

SUN OVEN SPLIT PEA SOUP WITH CARAMELIZED ONIONS

2 cups dried split peas, picked over and rinsed
1 teaspoon dried basil
2 bay leaves
6 cups water
4 cups thinly sliced onions
1 teaspoon cumin seed
4 tablespoons olive oil
salt and pepper

Steps:

  • Set Sun Oven out to preheat. If necessary, remove the leveling tray and set a rack on the floor of the cooking chamber to accommodate your large pot. Click here for more info on fitting large pots in your Sun Oven. Combine the peas, basil, bay leaves, and water in a large pot. Pour the oil into a shallow pot or cake pan that fits on top of the soup pot. Add the onions and cumin seed, stirring to coat. Cover and place in the Sun Oven. Cook until the onions are golden and the peas are falling apart, 1 1/2 to 2 hours. Discard the bay leaves. Using an immersion blender puree the soup in the pot. Season to taste with salt and pepper. Stir in the onions and serve.
