3 1/2 to 4 lb. beef short ribs, trimmed of fat
1 (14.5-oz.) can diced tomatoes, undrained
1/2 cup beef broth
1/2 cup Zinfandel wine or cranberry juice
1/4 cup all-purpose flour
1/4 cup chili sauce
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried marjoram leaves
1/2 teaspoon salt
1/2 teaspoon garlic-pepper blend
2 cups fresh baby carrots
1 medium onion, halved, thinly sliced

Steps:

  • Heat oven to 325°F. Spray 12-inch nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add short ribs; cook 6 to 8 minutes or until browned on all sides.
  • In ungreased 13x9-inch (3-quart) glass baking dish, combine tomatoes, broth, wine, flour, chili sauce, thyme, marjoram, salt and garlic-pepper blend; mix well. Add browned ribs, carrots and onion; stir gently to mix. (Baking dish will be full.) Cover with foil.
  • Bake covered at 325°F. for 2 hours.
  • Uncover baking dish, bake an additional 20 to 30 minutes or until ribs are tender and liquid is slightly thickened.

1 onion, finely sliced
4 garlic cloves, smashed
1 leek, cleaned and finely chopped
1 carrot, finely chopped
4 sprigs of fresh thyme, or 1 teaspoon dried thyme
1 cup red wine
1/2 cup soy sauce or tamari
1 tablespoon sugar
1/4 teaspoon freshly ground black pepper
3 1/2 pounds short ribs
2 to 3 Idaho potatoes, peeled and cut in quarters (optional)
1 stalk celery, finely chopped

Steps:

  • Mix all the ingredients except the meat and potatoes in a 9- x 15-inch roasting pan. Add the ribs and rub all over with the marinade. The meat should fit comfortably in a single layer in the pan. Cover and let marinate in the refrigerator for 6 hours or up to overnight. Occasionally turn the meat over in the marinade. Remove from the refrigerator 30 minutes prior to cooking.
  • Preheat the oven to 400 degrees Fahrenheit. Braise the short ribs for 2 1/2 to 3 hours, reducing the heat to 350 degrees Fahrenheit after an hour. Turn the ribs over. Add the potatoes in the last 40 minutes of cooking. Add water to the pan if too much liquid evaporates. You want to end up with glistening ribs in a reduced glaze.

SLOW-COOKED BRAISED OVEN SHORT RIBS

These ribs are cooked in the oven on a very low temperature and can also be made in a crockpot, if you are using more than 4 pounds ribs then double the sauce ingredients. These ribs goes great with recipe#186700 or recipe#69020...or mashed potatoes. The cayenne pepper or Tabasco is only optional, add in for extra heat.

1 teaspoon seasoning salt or 1/2 teaspoon white salt

3 -5 tablespoons oil
2 onions, chopped
1 -2 tablespoon minced fresh garlic (optional)
1 cup tomato sauce
1 cup barbecue sauce
1/4 cup molasses
1/4 cup cider vinegar
cayenne pepper (optional) or Tabasco sauce, to taste (optional)

Steps:

  • Grease a roasting pan (large enough to hold the ribs and sauce).
  • In a shallow dish combine flour with seasoned salt, black pepper, paprika and garlic powder.
  • Dredge the ribs in the flour mixture.
  • Heat oil in a large skillet; add in ribs and brown on all sides; remove to the roasting pan.
  • Place the chopped onions over the ribs.
  • In a saucepan mix together the tomato sauce, barbecue sauce, molasses, cider vinegar and fresh garlic (if using) bring to a boil and simmer stirring for 5 minutes.
  • Pour the sauce over the ribs and onions.
  • Cover with foil and bake in a 300 degree oven for 3-4 hours or until ribs are tender.

I love recipes that let the oven do the slow cooking for me especially in the cooler weather. Gives a little extra heat to the house and the smell of the braising food will make you crazy all day.

6 lb beef short ribs, bone in
2-3 Tbsp olive oil, extra virgin, or more for browning ribs
kosher salt
1 large spanish onion, cut into 1/2 inch pieces
2 celery stalks, cut into 1/2 inch pieces
2 large carrots, scrapped and cut into 1/2 inch pieces
2 clove garlic, smashed
12 oz tomato paste
2-3 c hearty red wine
2 c water
1 bunch fresh thyme, tied with kitchen string
2 bay leaves

Steps:

  • 1. Season each short rib generously with salt. In a Dutch oven heat oil.enough to accommodate all the meat and vegetables with olive oil and bring to a high heat. Add the short ribs to the pan and brown very well, about 2 to 3 minutes per side. Do not overcrowd pan. Cook in batches, if necessary. Preheat the oven to 375 degrees.
  • 2. While the short ribs are browning, puree all the vegetables and garlic in the food processor until it forms a coarse paste. When the short ribs are very brown on all sides, remove them from the pan. Drain the fat, coat the bottom of same pan with fresh oil and add the pureed vegetables.
  • 3. Season the vegetables generously with salt and brown until they are very dark and a fond has formed on the bottom of the pan, approximately 5 to 7 minutes. Scrape the pan fond and let it reform. Scrape the fond again and add the tomato paste. Brown the tomato paste for 4 to 5 minutes. Add the wine and scrape the bottom of the pan. Lower the heat if things start to burn. Reduce the mixture by half. Return the short ribs to the pan and add 2 cups water or until the water has just about covered the meat.
  • 4. Add the thyme bundle and bay leaves. Cover the pan and place in the preheated oven for 3 hours. Check periodically during the cooking process and add more water, if needed. Turn the ribs over halfway through the cooking time. Remove the lid during the last 20 minutes of cooking to let things get nice and brown and to let the sauce reduce.
  • 5. When done the meat should be very tender but not falling apart. Serve with the braising liquid. My favorite accompaniment is creamy polenta and green vegetable.

1 cup dry red wine
1/2 cup KRAFT Original Barbecue Sauce
1 Tbsp. GREY POUPON Dijon Mustard

Steps:

  • Heat oven to 300ºF.
  • Mix 2 Tbsp. flour with 1/4 cup broth to form thick paste; set aside. Coat ribs with remaining flour; gently shake off excess flour.
  • Heat oil in large ovenproof sauté pan with tight-fitting lid or Dutch oven on medium-high heat. Add ribs; cook 3 to 4 min. on each side or until browned on both sides.
  • Add onions to pan; cook and stir 2 to 3 min. or until lightly browned. Gradually add wine, stirring constantly to scrape up any browned bits from bottom of pan. Simmer on low heat 2 to 3 min. until most of the liquid is evaporated.
  • Stir in remaining broth. Return to boil. Stir in barbecue sauce, mustard and reserved flour paste until well blended. Bring to boil, stirring frequently. Remove from heat; cover with lid. Place in oven.
  • Bake 2 hours or until ribs are tender. Skim excess fat from sauce before serving.

3½ to 4 pounds meaty bone-in short ribs
Coarse salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 cup diced yellow onion
½ cup diced celery
½ cup diced carrot
2 cloves garlic, coarsely chopped
1 tablespoon fennel seeds
2 cups hearty red wine
2 bay leaves
1 (28-ounce) can Italian plum tomatoes with juices
1.5 lb peeled baking potatoes, cut into about 2 inch chunks
Combine 1 1/2 tsp of salt and ½ teaspoon of black pepper. Rub over all the surfaces of the short ribs.
Heat a large (7- to 8-quart) enameled cast-iron or other nonreactive Dutch oven over medium heat. Add the olive oil. When hot, add the ribs, being careful not to crowd them or they won't brown properly. (If the ribs don't all fit in the Dutch oven, brown them in two batches, or use a heavy skillet to brown any remaining ribs at the same time.) Cook, adjusting the heat between medium and medium-high to maintain a steady sizzle without getting the pan too hot and turning with tongs as needed, for about 3 minutes per side, or until browned. As the ribs are browned, transfer them to a large bowl.
When all the ribs are browned, spoon off all but 1 tablespoon of the fat from the pot. Add the onion, celery, and carrot, and cook over medium-low heat, stirring, for about 8 minutes, or until golden. Meanwhile crush the garlic and fennel seeds together with a mortar and pestle or with a large chef's knife. Add to the vegetables and cook for about 30 seconds, or until fragrant.

Steps:

  • 4. If necessary, rearrange the oven racks to accommodate the large size of the pan. Preheat the oven to 325°F. 5. Add the wine and bay leaves to the Dutch oven and bring to a boil. Boil for 5 minutes, or until reduced by half. Stir in the tomatoes and again bring to a boil, breaking up the tomatoes with the side of a large metal spoon. Add the browned ribs and any juices that accumulated in the bowl. Turn the ribs to coat them evenly with the tomato mixture. 6. Cover and braise in the lower half of the oven for 1 1/2 hour. Add the potatoes and continue to braise for 1 hour, until the meat is pulling away from the bones. 7. Use a slotted spoon or spatula and tongs to lift the ribs from the pan to a platter. Discard any loose bones. Remove fat and connective tissue. 8. Pour the remaining contents of the Dutch oven through a strainer set over a large bowl. Discard the bay leaves and then spoon the strained vegetables onto the ribs. Cover the platter with aluminum foil and keep warm in the turned-off oven. 9. Use a large metal spoon to spoon off and discard the fat that comes to the top of the bowl and then pour the juices into a small saucepan, or pour the juices into a fat separator and then pour the defatted juices into a small saucepan. Alternatively, chill the strained juices for several hours or overnight and lift off the fat that solidifies on top with a skimmer. Refrigerate the ribs and vegetables, tightly covered, and then return them to the Dutch oven with the defatted juices and slowly reheat over low heat. 10. Reheat the juices to a simmer, taste, and adjust the seasoning with salt and pepper. Pour the juices over the short ribs and vegetables and serve hot.

PENNE WITH BRAISED SHORT RIBS (OVEN OR SLOW COOKER)

The Dijon adds an amazing taste to this dish and is not over powering in the least. . The flavor of the gravy is AMAZING! I adapted this for the crock-pot. I followed the instructions for browning the ribs, added onions, garlic, tomatoes, wine and broth and threw it in the crock pot with the lid propped open with a tooth pic to allow some of the steam to be released and allow the gravy to thicken up beautifully. If using the crockpot, start on high for about one hour and set to low for 4-5 hours. The meat should fall apart and shred when done. Serve over pasta as Giada does or make some mashed potatoes (hold the parmesan). Both are fabulous! I made both. Recipe courtesy of Giada De Laurentiis /Food Network

4 lbs beef short ribs, bone in, I used 2 # boneless
kosher salt, to taste for seasoning
fresh ground black pepper, to taste for seasoning
1/4 cup olive oil
1 large onion, diced
3 garlic cloves, coarsely chopped
5 roma tomatoes, cut into eighths
1 cup red wine, such as Cabernet Sauvignon
3 tablespoons Dijon mustard
2 cups low sodium beef broth
1 lb penne pasta
1/4 cup parmesan cheese, freshly grated is best
1/4 cup fresh flat-leaf parsley, chopped

Steps:

  • Place an oven rack in the lower 1/3 of the oven. Preheat the oven to 350°F.
  • Season the ribs with salt and pepper. In a large heavy-bottomed Dutch oven or ovenproof stock pot, heat the oil over medium-high heat. In batches, add the ribs and brown on all sides, about 8 to 10 minutes. Remove the ribs and set aside.
  • Add the onion and garlic and cook, stirring frequently, for 2 minutes.
  • Add the tomatoes, wine and mustard. Bring the mixture to a boil and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Return the ribs to the pan (or add to crock pot).
  • Add the beef broth, cover the pan and place in the oven for 2 1/2 hours until the meat is fork-tender and falls easily from the bone.
  • Remove the ribs from the cooking liquid. Using a large spoon, remove any excess fat from the surface of the cooking liquid. Using a ladle, transfer the cooking liquid in the bowl of a food processor (or use a stick blender). Process until the mixture is smooth. At this point I added mushroom slices.
  • Pour the sauce into a saucepan and keep warm over low heat.
  • Remove the meat from the bones. Discard the bones. Using 2 forks, shred the meat into small pieces. Stir the shredded meat into the sauce. Season with salt and pepper, to taste.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta and place in a large serving bowl.
  • Using a slotted spoon, remove the meat from the sauce and add to the pasta. Pour 1 cup of the sauce over the pasta. Toss well and thin out the pasta with more sauce, if needed. Sprinkle the pasta with Parmesan cheese and chopped parsley before serving.
  • Notes: I decided to serve over mashed potatoes and omit the parmesan cheese. I also added sliced crimini mushrooms, white mushrooms will work too.

1/4 pound pasilla chiles-stemmed, seeded and rinsed
Boiling water
2 unripe medium green tomatoes, cored
1/2 cup plus 1 tablespoon extra-virgin olive oil
1 onion, finely chopped
5 garlic cloves, minced
1 tablespoon minced oregano
1/2 cinnamon stick (1 1/2 inches)
5 allspice berries
3 whole cloves
Kosher salt
Pepper
1 1/2 tablespoons white vinegar
Eight 10-ounce English-cut beef short ribs (cut between the ribs)
1 1/2 cups beef stock or low-sodium broth

Steps:

  • 1. In a heatproof bowl, cover the chiles with boiling water and let stand until softened, 20 min. 2. Meanwhile, roast the tomatoes directly over an open flame , turning occasionally, until charred in spots and just starting to soften, 5 to 8 min. Transfer to work surface and let cool slightly, then coarsely chop. 3. In a large saucepan, heat 1/4 C of oil until shimmering. Add the chopped tomatoes, onion, garlic, oregano, cinnamon stick, allspice, cloves and a generous pinch each of salt and pepper. Cook over moderate heat, stirring occasionally, until softened and saucy, 8 to 10 min. Let cool slightly; discard the cinnamon. 4. Drain the chiles, reserving 2 C of the soaking liquid. Add to a blender along with tomato mixture and puree until mole sauce is smooth. In a large saucepan, heat 1/4 C of the oil. Add sauce and bring to a boil. Cover and simmer over moderate heat, stirring occasionally, until reduced to 3 1/2 C, about 30 min. Stir in vinegar &season mole with salt and pepper. 5. Preheat oven to 350°. In a large skillet, heat remaining 1 T of oil until shimmering. Season short ribs with S & P. Cook half of ribs over moderately high heat, turning occasionally, until browned about 10 min. Transfer to a small roasting pan. Pour off all but 2 Tof fat from the skillet and repeat with the remaining ribs. 6. Spread 2 T of mole on each rib and arrange bone side up in roasting pan. Add stock to roasting pan and cover tightly with foil. Braise ribs in oven for about 3 hours and 30 min, until very tender. 2-3 russet potatoes, peeled and cut into chunks (optional)

Steps:

  • Combine all of the ingredients except the short ribs and potatoes in a large roasting pan (it should be large enough that the ribs fit comfortably in a single layer). Add the short ribs and turn to coat with the marinade. Cover and marinate in the refrigerator for at least 6 hours or even overnight. Flip the ribs a few times (if possible - if you can't, don't sweat it) while they marinate (I marinated mine for 6 hours and flipped every 2 hours). Remove the short ribs from the refrigerator 30 minutes to 1 hour before you plan to cook them so they can come up in temperature a bit. Meanwhile, preheat oven to 400 F. Cover the pan with aluminum foil and braise for 1 hour, then reduce the oven temperature to 350 F and continue cooking for another 1 1/2 hours. Remove the pan from the oven and uncover. Flip the ribs over and add the potatoes. If too much of the liquid has evaporated from the bottom of the pan you can also add some water. (These are very forgiving, don't worry.) Continue cooking for another 30-40 minutes, or until the potatoes are tender. Serve drizzled with the glaze in the bottom of the pan. (Those veggies that have been cooking with the meat the whole time were delicious too, though quite broken down.)
