OVEN BAKED SALMON PATTIES

Oven Baked Salmon Patties image

A healthier version of the usual pan fried salmon patties, the recipe is for 2 people, but can be doubled for larger amounts. My DH is not a fan of any fish that is not deep fried, or of Salmon, I had to find something that he would like and would fit into his diet! I combined an oven fried eggplant method into this and he loved it!

OVEN-BAKED SMOKED SALMON, PEPPER & PESTO TORTILLA

Oven-baked smoked salmon, pepper & pesto tortilla image

Use up leftover potatoes in this indulgent Spanish omelette packed with earthy smoked salmon, sweet, roasted red peppers and pesto

Provided by Cassie Best

Categories     Dinner, Lunch, Supper

Time 50m

Number Of Ingredients 7

a little oil , for greasing
8 eggs , beaten
300g cooked potatoes (roasted or boiled are fine), chopped into chunks
140g smoked salmon , torn into small pieces
4 roasted red peppers , from a jar, torn or chopped into small pieces
4 tbsp pesto
salad leaves , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 22cm tart or flan case with a sheet of baking parchment, pushing it into the sides and leaving a 1cm overhang over the top - this is easiest if you scrunch up the parchment first to make it more pliable (don't worry about it looking too neat). Grease the parchment with a little oil.
  • Beat the eggs in a bowl with some seasoning, add the potatoes, smoked salmon and peppers, stir together, then pour into the lined tart case. Spoon blobs of the pesto over the top. Bake the tortilla for 30 mins until just set and starting to brown. Cool for 5 mins before cutting into wedges, or leave to cool completely and serve cold with salad.

QUICK AND EASY, FOUR INGREDIENT, OVEN-BAKED SALMON

Quick and Easy, Four Ingredient, Oven-Baked Salmon image

A simple and foolproof way to cook salmon in just fifteen minutes.

Provided by Marilena Leavitt

Categories     Main Dish

Time 20m

Yield serves 2

Number Of Ingredients 6

2 salmon fillets, center cut and skin on, about 5 oz. each
3 TBSP. extra virgin olive oil
1 small lemon, cut in thin slices
--- sprigs of fresh thyme
½ tsp. sea salt
¼ tsp. freshly ground pepper

Steps:

  • Preheat the oven to 300°F. Once it reaches this temperature, place a small pan with water on the lower shelf (this will create a moist environment while roasting).
  • Brush the salmon generously with two tablespoons of olive oil on both sides, season with sea salt and pepper and place skin-side-down in a small pan, or, in an oven-proof skillet. Tuck some lemon slices and a few thyme sprigs under the salmon and place a couple of thyme sprigs on top of the salmon.
  • Bake for about 12-15 minutes, or, until the color of the salmon turns opaque and begins to flake easily (the baking time will depend on the thickness of the fillet, so check it to make sure). The internal temperature of the salmon should register between 125°F to 130°F when it is ready. Remember that the salmon will continue to cook even after it comes out of the oven.
  • Remove the salmon from the oven. Drizzle the fillets with the remaining olive oil, squeeze some fresh lemon juice over the top, and let the dish rest for 5 minutes.
  • Using a flexible spatula, remove the salmon from the pan, place it on individual plates, and discard the thyme--the skin should come off easily. Serve warm or at room temperature with a simple green vegetable on the side.

Number Of Ingredients 8

1 lb salmon fillet
4 tablespoons cilantro
3 fresh garlic cloves, minced
3 shallots, minced
2 roma tomatoes, sliced (not chopped)
1/2 anaheim chili, chopped
1/2 cup lemon juice
fresh ground black pepper (a lot is better than not enough)

Steps:

  • Spray a glass baking dish lightly with FAT-FREE butter-flavored cooking spray. Preheat your oven to 350. Place 1 lb of salmon in your baking dish, skin-side down. Squeeze the juice of 1/2 a lemon over the top, then coat liberally with fresh ground pepper.
  • Mince your garlic and shallots, finely chop your anaheim chile peppers, mix together in a small bowl, then sprinkle contents evenly over the top of your salmon. If anaheim chile peppers aren't to your liking, substitute cubanelle peppers, which are mild and sweet, rather than hot.
  • Slice your onion into rings, then arrange the rings over the top of your salmon. Slice your roma tomatoes. Discard the end slices. Arrange the remaining slices on and around your salmon. Sprinkle with more pepper and the juice of 1/2 a lemon.
  • Place your baking dish in your oven and cook for about 20 minutes. Salmon is done when it flakes with a fork.
