OVEN BAKED PARMESAN FRENCH FRIES

Steps:
- Preheat the oven to 400 degrees F.
- Peel potatoes and cut into half-inch thick slices (lengthwise) cut again into 1/2-inch thick fries. Place the potatoes into a pot with cold water and 1 tablespoon of salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily. Cooked about 3/4 of the way through.
- Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown.
- When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes. Remove and let cool for 2 minutes. Serve.

Coat a large cookie sheet with non-stick spray(or use non-stick aluminum foil). Spread potatoes in a single layer. Bake 450' for 30-35 minutes or until potatoes are crisp and browned. JANETTE'S OVEN-BAKED FRENCH FRIES WITH HOMEMADE KETCHUP

- To make the fries: Preheat the oven to 350 degrees F.
- Peel the potatoes and cut into desired French-fry size. Place in a plastic bag along with the oil and shake until potatoes are evenly coated. Coat a baking sheet with nonstick spray. Put the potatoes on the baking sheet in a single layer and sprinkle with cayenne and black pepper.
- Bake, turning potatoes once, until golden brown, about 20 to 25 minutes.
- Meanwhile, to make the ketchup: Stir all ingredients together in a small bowl and set aside. If you like it chunky serve as is. If you don't want the ketchup chunky, put ingredients into a food processor to puree.
- When the fries are done, sprinkle with salt and serve immediately with the ketchup.

- Preheat the oven to 400°F.
- Oven fried:.
- Pour the oil in to a large bowl, add the potatoes and toss to coat.
- Oil a baking sheet with a little more olive oil, and arrange the potatoes in the sheet. Bake for 50 minutes or until potatoes are golden brown and cooked.
- Sprinkle with the salt and serve with the lemon for squeezing.

- Blot the potato pieces dry with a paper towel. Heat approximately an inch of olive oil in a large heavy frying pan over low heat and add sufficient potatoes to make one layer. Cover and cook until the potatoes begin to turn golden. Remove the lid, increase the heat to medium-high, and frequently turn the potatoes one fry at a time, until they are golden brown. Remove the fries with a slotted spoon to a paper towel lined plate and repeat until all the potatoes are fried. Season to taste.

- Prepare grill heating to 400 degrees. Oil grates well. Place fries on grill lower to 350. Close lid.
- After 15 minutes turn, Close lid.

- Place heavy foil over indirect heat and remove fries from grill and place on foil as they brown and crisp to desired liking.
- Continue cooking till all is done.

- Peel and wash the potatoes, cut into 1/4 inch thick strips. Soak in water for 30 minutes, then dry it with paper towel. Drizzle with olive oil, add salt , pepper and the spice you like, toss well. Place the fries on lined baking sheet, do not overlapped. Bake in preheated oven at 400F for 30 minutes. Flip the fries every 15 minutes. After 30 minutes, turn the temperature up to 425f, bake the fries for 10 to 15 minutes further, or until the edges get a bit brown.
