3 pounds chicken wings (, separated at the joints and tips removed)
1 to 2 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon paprika
½ teaspoon black papper
½ cup butter
½ cup Frank's RedHot Wings buffalo sauce
½ teaspoon Tabasco sauce
½ teaspoon garlic powder

Steps:

  • Pre-heat the oven to 400°F.
  • In a large bowl, toss the wings with 2 teaspoons of salt.
  • Spread the wings out over a wire rack on a baking sheet.
  • Mix the cayenne pepper, paprika and black pepper in a small bowl. Then sprinkle it over the wings.
  • Bake at 400°F for 45 minutes.
  • Remove from the oven.

These easy to make hot wings are crispy without being fried. Always yummy to snack on. They only take 10 minutes for prep, but need to be refrigerated for about an hour so the flour coating is firm. You can add more cayenne or use a higher hot sauce to butter ratio if you like them spicier! Enjoy.

¾ cup all-purpose flour
½ teaspoon cayenne pepper
½ teaspoon garlic powder
½ teaspoon salt
20 chicken wings
½ cup melted butter
½ cup hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk together the melted butter and hot sauce in a small bowl. Dip the wings into the butter mixture, and place back on the baking sheet. Bake in the preheated oven until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes. Turn the wings over halfway during cooking so they cook evenly.

For chicken wings that come out of the oven as crisp and tender as their fried counterparts, coat the wings in salt and baking powder. The combination promotes even browning, crackly-crisp skin and moist, tender meat. (Do this for roast chicken, too!) Then, cook them directly under the high heat of the broiler, which renders fat and fuses the spicy buttery sauce to each wing. You can buy any combination of meaty drumettes, wingettes (flats) or wing tips, or buy whole wings and break them down yourself, cutting at the joints to separate each wing into three pieces. 3 ounces blue cheese, crumbled (about 3/4 cup)
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon fresh lemon juice or apple cider vinegar
1 to 3 tablespoons milk or buttermilk, or to taste
Kosher salt and black pepper
3 pounds chicken wings, or any combination of drumettes, wingettes and tips
1 tablespoon baking powder
Kosher salt and black pepper
1/3 cup Buffalo-style hot sauce, such as Frank's
3 tablespoons unsalted butter, melted
2 tablespoons fresh lemon juice
2 garlic cloves, minced (about 2 teaspoons)

Steps:

  • Make the blue cheese dip: In a small bowl, stir together blue cheese, mayonnaise, sour cream and lemon juice. Thin with milk until spoonable. Season with salt and pepper and set aside. (Dip keeps for up to 4 days in the refrigerator; thin as needed with more milk.)
  • Place an oven rack 4 to 6 inches from the broiler. Heat the broiler.
  • Prepare the chicken: Pat the wings dry. If the wings are not yet broken down into three pieces, cut each wing at the two joints. To do so, flip the wing over and wiggle each part to find the joint. Cut at the joint hinge to separate the meaty drumette from the wingette (also known as the flat) and the wingette from the smaller wing tip.
  • In a large bowl, toss the baking powder with 1 tablespoon kosher salt. Add the wings and toss until evenly coated. Spread the wings in an even layer on a foil-lined baking sheet. (To prepare them in advance and allow them to dry-brine, let the wings sit out at room temperature for up to 1 hour after coating, or in the refrigerator overnight. Let them come to room temperature before proceeding.)
  • Broil the wings in the oven until golden and crisp all over, turning halfway through, about 15 minutes per side.
  • As wings cook, make the buffalo sauce: In a large bowl, stir together the hot sauce, butter, lemon juice and garlic. Season to taste with salt and pepper.
  • Transfer the wings to the hot sauce-mixture and toss to coat. Using a slotted spoon, return the wings to the baking sheet, leaving extra sauce behind. Broil until sizzling and browned in spots, about 5 minutes. (Depending on your broiler, you may need to rotate the pan so all the food is exposed to the heat source.)
  • Serve with extra buffalo sauce and the blue cheese dip.

This is a great Buffalo Hot Wings recipe whether you are paleo or not. If you are really strict paleo, start with a paleo compliant hot sauce (I have two paleo compliant hot sauces to chose from on this site). If you aren't that picky, use Franks Red Hot Buffalo Sauce.

50 chicken, drumetts (organic) or 25 whole chickens, wings cut into two pieces (discard tips)
2 cups hot sauce (commercial or homemade)
1 cup butter (organic)
2 teaspoons cayenne pepper
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1/2 cup baking powder
olive oil flavored cooking spray (Pam)

Steps:

  • Preheat oven 250°F Line baking sheet with foil. Spray baking rack with Olive oil Pam and place in pan.
  • Spray the chicken pieces with Olive oil Pam, then salt and pepper to taste. Season with garlic powder.
  • In a large zip lock bag, place 1/4 cup of the baking powder and 1 tsp of cayenne pepper. Add half the chicken and toss until coated. Place on the cooking rack. Repeat with other half of chicken and remaining powder and cayenne.
  • Bake coated chicken wings for 20 min at 250 F, then increase heat to 425 F and bake for 20 more minutes. Turn pieces over and bake for another 20 min or until golden brown and chicken is thoroughly cooked.
  • If making your own buffalo sauce, heat prepared hot sauce (commercial or homemade) and butter in a sauce pan until well blended. Pour sauce in a large bowl. If using a commercially prepared buffalo sauce just pour it in a large bowl. I highly recommend my habanero mango sauce (also paleo compliant), but Franks Red Hot Buffalo Sauce is quite good and not terrible from a paleo point of view.
  • Toss all the cooked chicken until evenly coated. Transfer to a platter and serve with your favorite sides.

2 lbs chicken wings
2 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 cup hot sauce
1/3 cup ghee or butter

Steps:

  • Preheat the oven to 410 degrees Fahrenheit (210 Celsius)
  • Place the chicken wings in a bowl and pat them down with a paper towel to remove as much moisture as possible. Toss them in the olive oil and sprinkle with salt and pepper.
  • Lay the chicken wings out evenly on a wire rack placed on top of a baking sheet. Bake them in the oven for 20 minutes until crispy.
  • While the chicken is baking, in a pot melt the ghee on medium heat. Add in the hot sauce and whisk until bubbling and well combined.
  • Once the wings are done baking, toss them in the sauce so they are well coated. Sprinkle them with chopped scallions and serve warm with the ranch dipping sauce on the side.

3 garlic cloves, crushed
2 tbsp olive oil
3 tbsp cider vinegar
1 tbsp paprika
1 tbsp Worcestershire sauce
2 tsp celery salt
4 tbsp pepper sauce (we used Frank's hot sauce)
3 tbsp honey
1 ½kg chicken wings, halved at the joint

Steps:

  • In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
  • Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.

This is an extremely simple oven baked chicken wing "recipe". It's roots came out of me being tired of paying premium prices for those frozen cooked Buffalo Wings in the grocery store! I hesitate to even call it a recipe, since it is so simple. Not fancy, but super simple on time and ingredients.. and still satisfying.

3 lbs chicken wings
2 tablespoons cooking oil
soul seasoning (I use "All Island Soul Seasoning") (optional)
2 teaspoons hot sauce (or more)
3 tablespoons butter

Steps:

  • Preheat oven to 400°F.
  • Prepare chicken wings by using poultry shears and sniping off the wing tips (discard, or freeze for other use, like stock), and snip at remaining wing joint. This gives you "2" wings per wing.
  • Spread oil on baking sheet.
  • Spread wings in single layer on baking sheet.
  • You may choose to slide wings around on the oiled sheet, to put a light coating of oil on the wings. Less oil on wings makes for slightly less crispness.a bit of oil helps seasoning stick. You could omit oil, and spray with a good quality non-stick olive oil product.
  • This step is optional. Sprinkle as liberally as you dare with your choice of seasoning. This is where experimentation comes in, be daring, try what's in your spice cabinet, however I've come to like a common "All Island Soul Seasoning", with a touch of cayanne or ground red or white pepper. If you're cutting back on salt, be cautious of prepared seasoning, as they have a lot of sodium.
  • Bake until browned, cooked through, and a bit crispy. About 40 minutes. Use your nose and eyes to check! I use my convection setting on my oven too, which cuts on the cooking time, but makes a nice crisp even coating.
  • Remove from oven, and cool for about 15 minutes.
  • Melt butter and mix with hot sauce. (again. amount of hot sauce to your taste).
  • Toss with the wings in a serving bowl with the butter/hot sauce mixture.
  • Serve with your favorite Blue Cheese Dressing and celery sticks.
