This is one of the easiest side dishes I've found. I don't even like most tomatoes, but I love these sweet little cherry tomatoes. This is the basic recipe, but you can also add slivered garlic to the roasting pan and/or chopped fresh basil and Parmesan cheese at the end. Very good with pasta!

¼ cup olive oil
1 tablespoon balsamic vinegar
1 ½ teaspoons salt
¼ teaspoon ground black pepper
3 pints cherry tomatoes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk olive oil, balsamic vinegar, salt, and pepper in a large bowl. Add cherry tomatoes; toss to coat.
  • Spread cherry tomatoes in an even layer on a rimmed baking sheet.
  • Roast until skins are slightly shriveled, 35 to 40 minutes.

We made this recipe for my mum's bday buffet and it was so beautiful and so tasty that I just had to share it here. It makes for a wonderful side dish or appetiser that looks beautiful and tastes great! The original recipe comes from the German Women's magazine "Brigitte". I hope youll enjoy it!

Number Of Ingredients 6

1 kg cherry tomatoes, halved
3 sprigs rosemary
1 -2 tablespoon brown sugar
2 -3 tablespoons aceto balsamico (dark balsamic vinegar)
4 -6 tablespoons olive oil
2 teaspoons coarse sea salt

Steps:

  • Chop the needles from 2 of the 3 rosemary sprigs. Leave the thrid one intact.
  • Combine all the ingredients in a suitable oven-proof dish (I'm sorry, I forgot to measure mine).
  • Gently mix so that everything is evenly distributed.
  • Bake at 200 °C/ 400°F in the preheated oven for 20-30 minutes.

Baked Tomatoes With Rosemary and Garlic image

4 plum tomatoes, about 1 pound
Salt and freshly ground pepper to taste
2 tablespoons olive oil
2 garlic cloves, each peeled and cut into 8 slivers
1 tablespoon chopped fresh rosemary or 1 teaspoon dried
2 tablespoons chopped parsley

Steps:

  • Preheat the oven to 450 degrees
  • Cut the tomatoes in half lengthwise.
  • Place the tomatoes flat side down in a baking dish. Sprinkle with salt and pepper and brush them with the oil. With the tip of a pointed knife, make 2 small slits in each tomato half and place a sliver of garlic in each. Sprinkle the tomatoes with rosemary and bake 5 to 6 minutes. Remove the garlic, if desired, and serve sprinkled with parsley.

The rosemary in this recipe really boosts the flavor of the tomatoes. If you can't find cherry tomatoes, winter tomatoes, such as Roma are a good substitute.

2 pints cherry tomatoes
1 teaspoon olive oil
1 1/2 teaspoons chopped fresh rosemary
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
vegetable oil cooking spray

Steps:

  • Combine first 6 ingredients in a zip-lock plastic freezer bag.
  • Gently shake until tomatoes are well coated.
  • Transfer to an aluminum foil-lined jelly-roll pan coated with cooking spray.
  • Bake at 425 degrees, stirring occasionally, 15 minutes or until tomatoes begin to burst.
