0.25 cup pineapple juice
2 tablespoons white rum
1.5 tablespoons fresh lime juice (from 1 lime)
1 tablespoon (½ oz.) dry orange Curaçao
1 tablespoon orgeat syrup or simple syrup
1 teaspoon maraschino cherry juice
1 tabelspoon (½ oz.) dark rum
Mint sprig, maraschino cherry, pineapple slice, for serving

Steps:

  • Combine pineapple juice, rum, lime juice, Curaçao, orgeat, and cherry juice in a cocktail shaker.
  • Fill with ice and shake vigorously for 20 seconds.
  • Strain into an ice-filled rocks glass. Top with dark rum, and garnish with mint, cherry, and pineapple.

The Mai Tai originated in California and was introduced to Hawaii in the 1940s, where orange and pineapple juices were added to create the Royal Hawaiian Mai Tai. This is Ree's favorite version of the famous drink.

6 ounces light rum
3 ounces dark rum
2 ounces lime juice
2 ounces orange liqueur
2 ounces almond syrup (like for coffee)
4 ounces orange juice
5 ounces pineapple juice
1/4 cup maraschino cherry juice, plus a few cherries for garnish
4 small wedges fresh pineapple, for garnish
Fresh mint leaves, for garnish

Steps:

  • Combine the rums, lime juice, orange liqueur, almond syrup, orange juice and pineapple juice in a mason jar and secure the lid. Shake well. Fill 4 rocks glasses with ice and pour over the mixture.
  • Add a splash of cherry juice to each glass. Garnish with the cherries, wedges of fresh pineapple and mint leaves.

2 1/2 cups pineapple juice
1 cup fresh-squeezed orange juice
1/4 cup grenadine
1 1/2 cups spiced rum
1 cup coconut rum
2 cans sparkling clementine juice, such as Izze, optional
1 fresh pineapple
2 clementines or mandarins, peeled and segmented
6 maraschino cherries

Steps:

  • Mix together the pineapple juice, orange juice and grenadine in a large pitcher. Add the spiced rum, coconut rum and sparkling clementine juice if using; mix well to combine.
  • Cut the ends off the pineapple, and then remove the skin, being careful to trim away the eyes. Slice the pineapple about 1/2-inch thick. Use mini cookie cutters to cut fun shapes.
  • Load picks with the pineapple, clementine wedges and cherries.
  • Pour the juice mixture into glasses over ice and garnish with the fruit skewers.

¼ cup white sugar
1 lime, halved, or more to taste
¼ pineapple, cut into wedges
ice
1 fluid ounce gold rum
½ fluid ounce silver rum
½ fluid ounce triple sec
½ fluid ounce orgeat almond syrup

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Place sugar in a shallow bowl. Dip lime halves in sugar to coat.
  • Grill lime and pineapple wedges, turning occasionally, until lightly browned, 5 to 10 minutes. Remove from grill and let cool.
  • Fill a cocktail shaker and Old Fashioned glass with ice.
  • Squeeze 1/2 fluid ounce lime juice and 1 fluid ounce pineapple juice into the shaker. Add gold rum, silver rum, triple sec, and orgeat syrup. Cover and shake until the outside of shaker has frosted. Strain into the glass and garnish with a grilled pineapple wedge.

Mai Tai translates from Tahitian to mean "Out of this World." A fitting description for this cocktail. The Mai Tai came to light in 1944 in Oakland's Trader Vic's. There Victor Bergron, one of the founders of the tiki bar, put together this great drink that deserves to feature the best rum you can get your hands on.
