ORZO PASTA SALAD WITH PESTO
A simple pasta salad that is perfect for Summer. Made with orzo pasta, pesto and veggies.

Steps:
- Cook orzo according to back of the box usually 9 minutes. Strain in a colander and rinse with cold water.
- In a medium sized bowl combine orzo, veggies and cheese.
- Stir in pesto and Italian dressing.
- Refrigerate for at least 1 hour before serving. Enjoy!

- Bring a large pot of salted water to a boil. Cook the orzo according to package directions. When the pasta is cooked, drain it in a colander. Rinse the orzo with cool water and drain twice more.
- Place the drained, cooled orzo in a large bowl. Stir in the pesto. Depending on how thick you pesto is, you may need to add some olive oil to loosen up the pasta. Drizzle olive oil in as needed.
- Halve the cherry tomatoes and tear the basil leaves into small pieces. Toss both into the bowl of orzo along with the spinach. Give everything a good stir to mix and add more olive oil if needed.
- Tear the bocconcini into bite sized pieces and add them to the bowl. Stir to combine.
- Season the pasta salad with salt and pepper to taste. Serve at room temperature as a meal or as a side.

An orzo salad packed with freshly-made basil and olive oil pesto, toasted pine nuts, shredded baby spinach and parmesan cheese. This is a simple, subtle salad that would be perfect served with other 'little' salads or as part of a buffet.

- Cook the pasta according to the packet instructions (you want it to be al dente so don't overcook), then drain in cold water and put into a medium bowl. Meanwhile, toast the pine nuts in a dry frying pan on a medium heat. Keep jiggling them around until they are lightly brown.
- Put about two thirds of the basil, a handful of the toasted pine nuts, the garlic and the 6 tablespoons olive oil into a food processor (a baby one is perfect) and whizz for a few seconds until well combined (the pesto can be slightly chunky or totally smooth - doesn't really matter). Tip the pesto over the orzo and combine well. Then add the chopped spinach, the rest of the basil (chopped a little), the rest of the pine nuts, the parmesan and vinegar and combine again. Season to taste.
- Spoon the pasta salad into a nice bowl (if you like) to serve, then drizzle over a little extra olive oil.

- Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned.
- Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.
- Mix in Parmesan cheese and basil. Season with salt and pepper. Transfer to shallow bowl. Garnish with basil sprigs.
