Chocolate bundt cake, stuffed with Oreo sandwich cookies, topped with chocolate ganache, and cookies 'n cream pudding frosting!

1 box chocolate cake mix
1 box instant Oreo Cookies 'n Cream pudding mix
4 eggs
1 c. sour cream (reduced-fat is fine)
1/4 c. vegetable oil
about 20 Oreo cookies (divided; 8 whole, and the remainder coarsely chopped)
1 c. milk or semi-sweet chocolate chips
1/4 c. heavy cream
3 tbsp. butter
1 box instant Oreo Cookies 'n Cream pudding mix
3/4 c. cold milk
1 - 8 oz. container whipped topping (thawed)

Steps:

  • In a large bowl, stir together cake mix, pudding mix, eggs, sour cream, oil, and 1/2 of the coarsely chopped Oreos (eyeball it).
  • Spray a large tube pan or bundt pan with non-stick spray.
  • Spread half the batter evenly into prepared pan.
  • Arrange the 8 whole Oreos around the batter.
  • Spread with remaining batter.
  • Bake at 350 degrees for 40-45 minutes, or until a toothpick inserted near the center comes out clean.
  • Remove pan to a wire rack to cool for 10 minutes, then invert the cake onto the wire rack to cool completely. Do not cool it completely in pan - it will stick and become difficult to remove!
  • In a small microwave-safe bowl, combine chocolate chips, heavy cream, and butter.
  • Microwave on high at 30-second intervals until chocolate is melted and the mixture is smooth.
  • Drizzle over bundt cake.
  • Allow 10-15 minutes for ganache to set.
  • In a medium bowl, whisk together pudding mix and cold milk.
  • Fold in whipped topping.
  • Spread or pipe over the cake.
  • Sprinkle with remaining Oreo cookie pieces. Cut and serve.

Calling all chocoholics: This Oreo cake boasts cocoa and dark chocolate in the batter plus a cream cheese frosting that's speckled with crushed Oreos. We'll learn how to bake a rich layer cake that's ultra fluffy (thanks to plain yogurt), as well as, how to frost and decorate with piped rosettes.

1 1/2 sticks (6 ounces/180 grams) salted butter, at room temperature, plus more for greasing
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon fine salt
1 cup (8 ounces/225 grams) granulated sugar
3 large eggs, beaten
1 1/2 teaspoons pure vanilla extract
1 cup (10 ounces/282 grams) plain yogurt
1/4 cup (1.5 ounces/43 grams) bittersweet chocolate, melted and at room temperature
2 cups (16 ounces/454 grams) cream cheese, at room temperature
1 stick (4 ounces/115 grams) salted butter, at room temperature
2 1/2 cups (1 pound 4 ounces/574 grams) confectioners' sugar, sifted
2 teaspoons pure vanilla extract
7 Oreos, crushed into crumbs, plus 12 whole mini Oreos for decorating

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter three 6-inch round cake pans or springform pans then line the bottoms with parchment.
  • In a medium bowl, combine the flour, cocoa powder, baking powder, baking soda and salt. Gently mix using a spoon.
  • Beat the 1 1/2 sticks butter and the granulated sugar with an electric mixer on medium speed in a alarge bowl until light and fluffy.
  • Add the eggs and vanilla and beat on high speed until incorporated. (High speed will prevent this mixture from separating.)
  • Add the yogurt and melted chocolate and mix on medium-high speed quickly until incorporated.
  • Add the dry ingredients to the wet ingredients and fold in with a rubber spatula until no streaks of flour remain.
  • Divide the batter equally among the 3 prepared pans. Bake until a toothpick inserted in the center comes out clean, 22 to 25 minutes.
  • Loosely cover the pans with foil and let them cool completely on wire racks. Remove the cakes from the pans and peel off the parchment.
  • For the frosting: Beat the cream cheese and butter with an electric mixer on medium-high speed in a large bowl until smooth. With the machine running, slowly add the confectioners' sugar one spoonful at a time until the frosting is smooth and creamy (do not overbeat). Stir in the vanilla and Oreo crumbs. Refrigerate until needed.
  • When the cakes are cool, trim off the domed tops with a serrated knife to make the cakes level.
  • Place one cake trimmed-side down on a cake stand or platter. Spread a spoonful of frosting on top in an even layer. Top with the second cake, trimmed-side up and spread another layer of frosting on top. Repeat with the third cake, trimmed-side down, and some more frosting.
  • Once all the cake layers are stacked, spread a thin layer of the frosting over the top and sides of the cake with an offset spatula. (This is the crumb coat.) Refrigerate until chilled, at least 30 minutes.
  • Cover the cake with more frosting, reserving some of the frosting for decorating the top. Frost the cake as evenly as possible. Sprinkle some of the remaining Oreo crumbs over the top of the cake. Transfer the reserved frosting to a pastry bag with a medium round tip. Pipe rosettes around the rim of the cheesecake then top each rosette with a mini Oreo. Enjoy right away or refrigerate for up to 3 days.

My husband is a huge chocholate fan but I do believe I was finally able to satisfy his cravings for chocolate with this cake. It is supper moist and supper chocholaty!! It was a hit at our Ramsey Painting Party at our son's new place.

1 box(es) fudge cake mix (or whatever you like)
1 3/4 cup(s) milk
2 - eggs
1 small package of chocolate pudding mix
CREAM CHEESE FILLING
16 ounce(s) cream cheese, softened
1/2 cup(s) sugar
2 - eggs
- 12 oreo cookies crushed
GLAZE
6 ounce(s) dark chocolate chips
1/4 cup(s) (or 1/2 a stick) of butter cut into small pieces
1 tablespoon(s) more or less of heavy whipping cream

Steps:

  • Cake: mix first 4 ingredients together and reserve about 1 cup of the cake batter. Pour the batter, not the reserve, into a well greased and floured large bundt pan. I used Pam Baking Spray works great!
  • Filling: combine cream cheese and sugar and mix well. I used my stand up mixer. Add the eggs one at a time and mix well. Fold in the oreo cookies. Pour the cream cheese mixture over the batter and then cover the cheese with the reserve batter.
  • Bake at 350° for 50 to 55 minutes or until toothpick in center comes out clean. Cool for about 15 minutes before removing cake from pan. Put a wire cooling rack over the cake and flip to remove the cake. Cool completely before the next step.
  • Glaze: In a double boiler or a saucepan with a glass bowl on top and water in pan, melt the chocolate chips until nice and smooth, add a few pieces of the butter and continue to stir until blended, next add the cream until you reach the consistency for pouring. You will be pouring this glaze over the cake. I put my cooled cake on my cake plate to do this. I added a few more crushed oreo cookies on top. You can determine how much or not at all. 1 3/4 c milk
2 large eggs
1 small pkg. chocolate pudding mix
filling
16 oz cream cheese softened
1/2 c sugar
2 large eggs
12 oreo cookies crushed
glaze
12 oz dark chocolate chips
1/4 c butter cut into pieces
1/4 c heavy cream

Steps:

  • 1. Mix cake mix, milk, eggs and pudding mix. Place half of the batter in greased bundt pan.
  • 2. Mix the cream cheese, sugar, eggs well. fold in cookies. Pour over top cake mixture. Pour the other half of batter over top.
  • 3. Bake at 350 degrees for 50 to 55 minutes. Invert onto platter and cool.
  • 4. Melt chips, butter, and cream in microwave and drizzle over cake

3 cups white sugar
¾ cup butter
⅔ cup evaporated milk
2 cups white chocolate chips
1 (7 ounce) jar marshmallow creme
1 teaspoon vanilla extract
½ cup crumbled chocolate sandwich cookies (such as Oreo®)
1 cup crushed chocolate sandwich cookies (such as Oreo®)

Steps:

  • Line a 13x9-inch baking pan with parchment paper.
  • Bring sugar, butter, and evaporated milk to a boil in a heavy-bottomed saucepan, stirring constantly; cook and stir at a boil until mixture is smooth, 3 to 5 minutes. Remove saucepan from heat; stir white chocolate chips and marshmallow creme into the sugar mixture until completely melted. Add vanilla extract; stir.
  • Gently fold 1/2 cup crumbled cookies into the white chocolate mixture until just incorporated; spread into the prepared pan. Sprinkle 1 cup crushed cookies evenly over the top. Press cookies lightly into the fudge. Cool at room temperature until set. Cut into small squares to serve.
