1 cup crumbled chocolate sandwich cookies (such as Oreo®)
½ cup unsalted butter, at room temperature
3 ounces cream cheese, at room temperature
1 cup white sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup miniature semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Place crumbled cookies in a small bowl.
  • Beat butter and cream cheese in a mixing bowl with an electric mixer on medium speed until smooth and creamy. Add sugar and vanilla and mix until well-combined. Add flour and mix on low speed until incorporated. Stir in chocolate chips.
  • Scoop cookie batter into 1 1/2- to 2-inch balls and roll in the cookie crumbs. (The dough will be soft but don't worry if it doesn't scoop into a well-formed ball, the crumbs will help hold it together.) Place the balls on the prepared baking sheet.
  • Bake in the preheated oven until edges are golden and the tops are slightly puffed, 12 to 15 minutes. Cool on the baking sheet for 2 minutes before removing to a wire rack to cool completely.

CRUST:
1 1/2 cups crushed graham cracker
1/4 cup packed light brown sugar
7 tablespoons unsalted butter, melted
CHEESECAKE:
2 1/4 cups heavy cream
1 pound cream cheese, softened
2/3 cup sugar
1/2 teaspoon salt
1 tablespoon lemon juice
2 teaspoons vanilla powder
3/4 cup Oreo cookies, crushed

Steps:

  • CRUST: Combine graham cracker crumbs with sugar. Add melted butter and blend until combined. Press into desired pan (a 9-inch springform or regular muffin tins work fine). Set aside. CHEESECAKE: Beat heavy cream until medium peaks form. Set aside. Add cream cheese, sugar, salt, vanilla powder, lemon juice to a bowl and beat with a paddle attachment until smooth (approximately 3 to 5 minutes). If you do not have a stand mixer or a paddle attachment a hand beater will work as well, but will take twice as long to achieve a smooth consistency. Add cream cheese mixture to heavy cream and beat until incorporated. Gently fold in Oreo cookies. Fill chosen pan with a slight mound at the center, as the cheesecake will become slightly sunken at the center. Refrigerate for at least 6 hours to set or overnight for best results. Remove from refrigerator and smooth top to level with edges. Serve with whipping cream and garnish with mini Oreos. Cook's Notes: I made these as Mini Oreo Cookies and Cream Cheesecake, but the recipe will work just as well in a 9 inch cheesecake pan or springform. If you do not have vanilla powder you can omit it. I don't recommend vanilla extract or it will end up coloring your cheesecake with a slight brownish color. For best results refrigerate overnight. Keep refrigerated up until 20 minutes before serving.

1 cup butter, room temperature
8 ounces cream cheese, room temperature
2 cups sugar
2 teaspoons vanilla
2 cups all-purpose flour
3 cups Oreo cookie crumbs, divided

Steps:

  • 1.Preheat oven to 375.
  • 2.Line a baking sheet with parchment paper, I highly recommend using parchment paper when baking these cookies.
  • 3.In the bowl of a stand mixer with a paddle attachment cream together butter and cream cheese until well combined.
  • 4.Add in sugar and vanilla and mix well.
  • 5.Add in flour one cup at a time, with the mixer on low, until it is just combined.
  • 6.Stir in 1 cup of Oreo crumbles into the cookie mix.
  • 7.Pour remaining Oreo crumbles into a bowl.
  • 8.Roll cookie dough into 1.5" balls then roll into the cookie crumbles, making sure to coat each ball thoroughly (this will help hold the cookie together as it cooks).
  • 9.Place cookies 1-2" apart on baking sheet.
  • 10.Bake on center rack for 14-15 minutes or until the bottom just starts to brown.
  • 11.Allow to cool on the baking sheet for a few minutes before removing to a rack to cool completely.
