1 medium apple, unpeeled, chopped
Juice of 1 lemon (about 2 tablespoons)
2 cups diced cooked chicken (about 1 large breast)
1 cup red seedless grapes, halved
1 stalk celery, finely chopped
1/4 cup golden raisins
1/2 cup toasted walnuts, coarsely chopped
3/4 cup yogurt (preferably Greek non-fat)
1/4 cup mayonnaise
Juice of 1/2 orange (about 1/4 cup)
1/4 teaspoon kosher salt

Steps:

  • Serving suggestion: Baby greens, extra grapes, raisins and walnuts for garnish
  • Coat the chopped apple with the lemon juice in a large bowl. Add the chicken, grapes, celery, raisins and walnuts, and gently combine.
  • In a small bowl, combine the yogurt, mayonnaise, orange juice and salt. Gently fold the dressing into the salad. Serve on a bed of greens.

2 whole Boneless, Skinless Chicken Breasts
1 stalk Celery, Thinly Sliced
1 whole Apple, Chopped
3/4 c. Halved Grapes
3/4 c. (or More) Roughly Chopped, Soaked And Dehydrated Pecans (or Toasted Pecans)
3/4 c. Mayonnaise
1/4 c. Sour Cream
Salt And Pepper, to taste
1/4 Lemon, Juiced

Steps:

  • Preheat oven to 425ºF. Place chicken on a baking sheet and season generously with salt and pepper. Bake in preheated oven for about 23-25 minutes, or until it reaches an internal temperature of 165ºF. Allow to cool completely and slice into bite-sized pieces.Place chicken, celery, apple, grapes, pecans, mayonnaise, and sour cream in a large bowl. Mix until well combined. Taste and add salt, pepper, and lemon juice if needed. Serve immediately. Store any leftovers in the refrigerator.

2 cooked rotisserie chicken breasts, cubed
1 cup seedless red grapes, halved
½ cup dried cranberries
½ Granny Smith apple, cored and cubed
¼ cup chopped red onion
½ cup mayonnaise
½ cup vanilla yogurt
2 teaspoons lemon juice

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Spread chopped walnuts onto a baking sheet.
  • Roast walnuts in the preheated oven until they are fragrant and browned, 3 to 5 minutes. Remove and let cool.

2 gravenstein apples, unpeeled, cored, and cut into bite-sized pieces
1/2 cup chopped celery
1/2 cup diced red onion

butter lettuce, for lining plates
1/2 cup mayonnaise

"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.
