SEASONED PARMESAN CROUTONS



Seasoned Parmesan Croutons image

Take a boring salad and dress it up with some delicious crispy croutons, flavored with garlic, herbs, and Parmesan cheese.

Time 1h

Yield 2 cups

Number Of Ingredients 7

5 slices bread
2 tablespoons butter
2 tablespoons olive oil
1 teaspoon minced garlic
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon crushed dried oregano
1/2 teaspoon crushed dried thyme

Steps:

  • Preheat the oven to 300 degrees F. Slice the crusts from the bread and then cut the bread into 1/2 inch cubes. Heat a skillet over medium heat and add the butter and olive oil. When hot, add the garlic and cook, stirring constantly, for one minute (make sure the garlic doesn't burn). Stir in the bread cubes and quickly stir to coat in the garlic butter. Remove from the heat and let cool for 5 minutes. In a large bowl, combine the Parmesan cheese, oregano, and thyme. Mix well then add the bread cubes and stir to coat them in the mixture. Spread the bread cubes in an even layer on a rimmed baking sheet. Bake at 300 degrees F for 30-40 minutes or until lightly toasted. Stir the croutons occasionally so they brown evenly. Remove from the oven and let cool completely. Transfer to an airtight container. These can also be frozen.

15 slices bread
¼ cup butter, melted
2 teaspoons garlic salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove crusts from stale bread slices. Brush bread on both sides with melted butter. Cut bread slices up into small cubes. Sprinkle with garlic salt (if desired). Arrange cubes on an ungreased cookie sheet.
  • Bake at 350 degrees F (175 degrees C) for 15 minutes or until browned. Let cool. Store croutons in a covered container or plastic bag. Serve in soups or salads.

2 large garlic cloves, sliced thin lengthwise
1 teaspoon dried oregano, crumbled
1 teaspoon dried basil, crumbled
1 teaspoon dried thyme, crumbled
1/2 teaspoon salt plus additional to taste
1/2 teaspoon pepper
1/2 cup olive oil
1 loaf of Italian bread, cut into 3/4-inch cubes (about 7 cups)
1/4 cup finely grated fresh Parmesan

Steps:

  • In a small saucepan combine the garlic, the oregano, the basil, the thyme, 1/2 teaspoon of the salt, the pepper, and the oil and simmer the mixture for 5 minutes, and discard the garlic. In a bowl toss the bread cubes with the oil mixture, spread them in a jelly-roll pan, and bake them in ht e middle of a preheated 350°F oven for 8 minutes. Sprinkle the croutons with the Parmesan and bake them for 7 minutes more, or until they are golden. Sprinkle the croutons with the additional salt and let them cool. The croutons keep in an airtight container for 1 week. Serve the croutons as a topping for tossed green salad.

5 thick slices day-old bread with crusts removed, cut into cubes

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix butter, Parmesan cheese, oregano, thyme, garlic powder, and salt together in a large, flat-bottomed bowl; add bread cubes and turn with a spatula to coat. Spread coated bread cubes onto a baking sheet.
  • Bake in preheated oven until golden brown, 15 to 20 minutes. Cool croutons completely before storing in an airtight container.

These croutons are a much more delicious version made at home versus the ones in a box from the store. This is the perfect way to add flavor and crunch to any tossed salads!

1/2 c olive oil
5 large cloves garlic, pressed
1 large loaf french baguette
3/4 c grana padano or parmigiano- reggiano cheese, grated and divided
1/4 tsp ground thyme
1/4 tsp dried basil
1/4 tsp dried oregano
1 small pinch cayenne pepper, or to taste
freshly ground black pepper, to taste (i always use mixed peppercorns)

Steps:

  • 1. Mix together olive oil and garlic; let it infuse for 4 to 5 hours at room temperature.
  • 2. Preheat oven to 300ºF. Cut a baguette in half, then half and then in cubes; place in a big bowl.
  • 3. Using a fine sieve, strain oil infusion over the bread cubes, pressing garlic with the back of a spoon. Toss very well with a spatula until bread is completely coated. Mix half a cup of cheese with thyme, oregano, basil, cayenne and black pepper; toss well.
  • 4. Place cubes on a baking sheet in a single layer; bake for 15 minutes. Remove from oven and toss again; bake for another 15 minutes. Remove from oven (they won't be cook) and press them against each other. Sprinkle the rest of Parmesan cheese; return to the oven until done and crispy, about 13 to 15 minutes. Store them in a Ziploc bag when they are completely cool.

THE BAREFOOT CONTESSA'S PARMESAN CROUTONS

This recipe comes from Ina's book, The Barefoot Contessa Cookbook. She says it was devised to use leftover baguettes and she uses them as crackers for appetizers, on top of soup and as a snack. She suggests that you grate whole parmesan rather than buying the already grated kind.

1 baguette
1/4 cup olive oil
1 tablespoon kosher salt
2 teaspoons ground black pepper
1/4 cup grated parmesan cheese

Steps:

  • Preheat the oven to 400 degrees.
  • Slice baguette diagonally into 1/4 inch thick slices. Depending on the size of the baguette, you should get about 20 to 25 slices.
  • Lay the slices in one layer on a baking sheet and brush each with olive oil and sprinkle liberally with salt and pepper. You can use either plain or flavored olive oil such as basil or garlic. The measurements for the salt and pepper in the ingredients are just estimates and you use whatever amount suits you. Sprinkle with the grated parmesan and bake for 15 to 20 minutes until they are browned and crisp. Serve at room temperature.
