These get crispy when cool. I named them for May 1, the day I invented them. They taste bright and sunny, like the summer season Beltane is supposed to herald.

1 ¼ cups butter, softened
1 ⅓ cups white sugar
1 tablespoon vanilla extract
1 egg, beaten
3 cups all-purpose flour
½ teaspoon salt
1 tablespoon baking powder
2 tablespoons orange zest
½ cup white chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Sift together flour, baking powder, salt, and orange zest.
  • In a bowl of mixer, cream butter on medium speed, adding sugar gradually. Add vanilla and egg. Add flour mixture gradually, stopping frequently to push down from sides of bowl. When flour mixture is thoroughly combined, mix in chips.
  • Drop dough by scant spoonful onto baking sheet, spacing 1 inch apart, flattening slightly with back of spoon. Bake at 350 degrees F (175 degrees C) 10 to 12 minutes or until beginning to brown. Allow to cool completely on cooling rack.

Delicious, sweet, and aromatic cookies. My little brother closes his eyes when he eats them and thinks they taste like Trix cereal. I think they just taste delightful. The first time I made this recipe I spilled 1/3 bottle of the orange extract in the bowl. The cookies were still great. If you are partial to orange flavor, add a full tablespoon instead of the recommended amount below.

1 cup butter, softened
2/3 cup light brown sugar, firmly packed
1/2 cup granulated sugar
1 large egg
1 tablespoon orange rind, grated
2 teaspoons orange extract
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
2 cups white chocolate chips
nutmeg (to garnish)

Steps:

  • Preheat oven to 350 degrees.
  • Blend butter and sugars until creamy (use medium speed with an electric mixer.)
  • Add egg, orange rind and extract, beating until blended.
  • Combine flour, baking soda and salt in separate bowl.
  • Gradually add flour mixture to sugar mixture, beating just until blended.
  • Stir in white chocolate chips.
  • Drop by rounded tablespoonfuls onto ungreased baking sheets.
  • Sprinkle lightly with nutmeg.
  • Bake for 10 to 12 minutes or until edges of cookies are lightly browned.
  • Cool on baking sheets for two minutes, then remove to wire racks to cool completely.
