Number Of Ingredients 11

8 medium sweet potatoes (about 4 pounds)
2/3 cup packed brown sugar
4 teaspoons cornstarch
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup orange juice
1/4 cup honey
3 tablespoons butter
2 tablespoons water
2 tablespoons grated orange zest
1/2 cup chopped walnuts

Steps:

  • Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain. When potatoes are cool, peel and cut into 1/2-in. slices. Arrange in a greased shallow 3-qt. baking dish; set aside., In a large saucepan, combine the brown sugar, cornstarch, salt and cinnamon. Stir in the orange juice, honey, butter, water and orange zest. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in walnuts. , Pour mixture over the potatoes. Bake, uncovered, at 350° for 25 minutes or until heated through.

Sweet potatoes contain more beta-carotene than carrots plus vitamin C and fiber. In contrast, true yams have no beta-carotene. I found this on the Internet but, I honestly do not remember from where. I do remember, however, I couldn't resist because of my love for orange flavor Combining the orange with sweet potatoes--now that makes me happy!

1 - medium sweet potato (about 8 ounces), scrubbed
2 tablespoon(s) olive oil
1 teaspoon(s) orange zest
1/4 teaspoon(s) salt
- freshly ground pepper
1 teaspoon(s) thyme

Steps:

  • Heat the oven to 325°F and arrange a rack in the middle. Slice the sweet potato into very thin rounds using a mandoline slicer. Mix together olive oil and orange zest in a small bowl. Brush two baking sheets with half of oil mixture. Place potato slices on sheets in a single layer and brush tops with remaining oil. Sprinkle with thyme, salt and freshly ground pepper. For one medium sweet potato you will need two-three baking sheets. Bake one sheet at a time until the edges of the chips curl up, the centers are just golden brown, and the tops are dry to the touch, about 20 minutes. Place the baking sheet on a wire rack and let the chips cool until crisp, about 3 minutes. Using your hands, carefully transfer the chips to a serving dish. Repeat with the second sheet.

Steps:

  • Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
  • Cut the sweet potato into ⅛-inch to ¼-inch (3- to 6-mm) slices. In a medium bowl, toss the sweet potato slices with olive oil until fully coated. Add the seasonings and toss to coat. Arrange the slices on a baking sheet without overlapping the potatoes.
  • Bake for 25 - 35 minutes, flipping halfway, until golden brown. Let the slices cool to room temperature.

1 tablespoon extra-virgin olive oil
1/2 teaspoon coarse salt, preferably sea salt
1 lime, cut into wedges, for serving

2 lbs large sweet potatoes or 2 lbs yams, peeled
1 1/2 lbs yukon gold potatoes, peeled
2/3 cup buttermilk, at room temperature
salt & freshly ground black pepper

Steps:

  • Sweet Potato Chips: Preheat oven to 225°; use 1/2 pound of the sweet potatoes and slice into paper-thin rounds; place on baking sheet and bake 50 minutes; turn twice and don't allow them to brown; when crisp, remove and sprinkle with salt; set aside.
  • Puree: Cut remaining sweet potatoes and potatoes into large chunks and boil until very soft, about 30 minutes; drain.
  • Mash, add buttermilk and mix until creamy and smooth; season with salt and pepper; scrape into serving bowl and partially insert chips into the puree in a decorative fashion.
