Yield 8

Number Of Ingredients 16

cooking spray
1 ⅓ cups all-purpose flour
2 tablespoons white sugar, divided
½ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
½ stick cold unsalted butter, cubed
2 ½ tablespoons orange zest
6 tablespoons orange juice
1 medium egg
1 ½ tablespoons white vinegar
1 tablespoon milk, or as needed
½ cup confectioners' sugar
2 tablespoons confectioners' sugar
4 teaspoons orange juice
1 tablespoon orange zest

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and grease with cooking spray.
  • Mix flour, 1 tablespoon sugar, baking soda, baking powder, and salt. Cut in butter using a pastry cutter. Mix in orange zest.
  • Make a well in the center of the flour mixture. Whisk orange juice, egg, and vinegar together and pour into the flour mixture. Stir until moistened and sticky.
  • Transfer dough to a floured surface and knead gently about 10 times. Pat into a 6x8-inch rectangle. Cut rectangle into 4 squares; cut each square diagonally into 8 triangles. Arrange scones on the prepared baking sheet. Brush tops with milk and sprinkle with remaining 1 tablespoon sugar.
  • Bake in the preheated oven until golden brown, about 10 minutes.
  • Make the orange glaze while the scones are baking. Mix 1/2 cup plus 2 tablespoons confectioners' sugar and orange juice until thick and smooth; glaze should drip slowly off the back of a spoon. Mix in orange zest.
  • Dunk warm scones in the glaze to fully coat the tops. Let stand for 5 minutes before serving.

Time 35m

Number Of Ingredients 9

1 ½ cups all-purpose flour
¼ cup sugar (plus 1 teaspoon, divided)
1 teaspoon baking powder
1/4 teaspoons salt
1/4 teaspoon baking soda
1/3 cup currants (optional)
2 tablespoons orange zest (freshly grated)
6 tablespoons butter (cold, cut into small pieces)
1/2 cup buttermilk (plain yogurt, or sour cream)

Steps:

  • Preheat the oven to 425°F.
  • Combine the flour, 1/4 cup sugar, baking powder, salt and baking soda in a large bowl. Stir in the currants at this point if you are using them, as well as the orange peel.
  • Cut the butter into the flour mixture, using a pastry blender or two knives. Cut the butter through the flour until the mixture resembles very coarse crumbs. Add the buttermilk and stir it all together until the mixture forms a soft dough that clings together. The dough will be a bit sticky.
  • Lightly flour your hands and shape the dough into a ball. Pat the dough into an 8 inch round on a lightly greased baking sheet. Cut the dough into eight wedges with a floured knife. You don't have to move the wedges apart from each other. Just cut them right through the dough so they are easy to separate once they are baked.
  • Sprinkle the wedges of dough with the remaining 1 teaspoon of sugar.
  • Bake the scones for 18 to 20 minutes in a preheated oven at 425°F or until they are lightly browned on top.
  • Cool and enjoy. These orange scones are wonderful slathered with fresh sweet butter.

ORANGE SPICE SCONES WITH KEFIR GLAZE

Orange Spice Scones With Kefir Glaze image

These sweetly spiced scones were inspired by the holiday tradition of making orange and clove pomanders. Not too sugary, they're the perfect partner for a hot cup of coffee or tea. We used Lifeway Plain Kefir. To cut out some fat and calories from this recipe, replace a half cup of butter with unsweetened applesauce. This will make the dough a little loose, so we recommend chilling it in the refrigerator for about 30 minutes before rolling and cutting it. Please note that this will also result in a scone with a slightly chewier texture than the all-butter version. From Lifeway.net

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 13

4 1/2 cups all-purpose flour
2 tablespoons granulated sugar
2 tablespoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 cup unsalted butter, cold, cut into pieces
2 organic oranges, zested and juiced (reserve juice for glaze)
2 1/4 cups plain kefir
2 cups powdered sugar
1/2 cup orange juice
2 tablespoons plain kefir

Steps:

  • Line two baking sheets with parchment paper and set aside. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt and spices. Use a pastry blender or two forks to cut in the butter until the mixture resembles course crumbs. Stir in the orange zest and create a well in the center of the mixture.
  • Pour in the kefir and gently stir until the dough comes together.
  • Turn the dough out onto a lightly floured surface - we like to tape some plastic wrap down to the counter first, then sprinkle on some flour and use that as the surface, it cuts cleaning time down a lot! Press the dough into an 11" x 7" rectangle, about 1" thick.
  • Using a sharp knife, cut the rectangle in half so you have two 5.5" x 7" pieces, and then cut each of those halves in half in the same direction. You'll have eight 3.5" x 2.5" rectangles. Cut each of those diagonally so you end up with 16 triangles.
  • Place the triangles onto your prepared baking sheets and cover them with plastic wrap. Freeze them for about 2 hours. (Once frozen, these will keep for up to two weeks in your freezer. Make them ahead of time & freeze if you plan on having house guests!).
  • Preheat your oven to 375 degrees and bake the scones for 30-35 minutes, rotating the pans half way through. When they're done, they will be golden, and flecked with brown. Transfer to a wire rack and cool.
  • To make the glaze: Whisk powdered sugar and orange juice together until smooth, add kefir and whisk until incorporated. Dip the top of each scone into the glaze, our pour glaze over the top of scones. Let the glaze set for a few minutes before serving.

Yield 8 scones, 8 serving(s)

Number Of Ingredients 12

1 3/4 cups all-purpose flour
4 teaspoons baking powder
1/3 cup white sugar
1/8-1/4 teaspoon salt
5 tablespoons cold unsalted butter, cut into 1/2-inch chunks
1 cup orange juice
1/4 cup sour cream
1 egg
1 tablespoon milk
2 oranges, zest of
1/2 orange
1 (16 ounce) bag confectioners' sugar

Steps:

  • Preheat oven to 400 degrees F / 200 degrees Celsius.
  • Sift the flour, baking powder, sugar and salt into a large bowl. Add the butter , and using a pastry tool or your hands, mix until the mixture is crumbly and there are still pea-sized lumps of butter visible. Stir in the zest of one of the oranges. Mix together the sour cream and a 1/2 a cup of the orange juice in a measuring cup. Pour all at once into the dry ingredients, and stir gently just until blended. Do not over-do the blending!
  • With floured hands, pat scone dough into balls 2 to 3 inches across, depending on what size you want. Place on greased baking sheet, and flatten lightly. Whisk together the egg and the milk. Brush the tops of the scones with the egg wash. Let them rest for about 10 mintues.
  • Bake for around 12 minutes in the preheated oven, until the tops are JUST golden brown. Transfer to rack to cool.
  • Once cool, you can leave them be, or glaze them if wanted.
  • To make the glaze, combine the rest of the orange juice, the rest of the zest, and the 1/2 orange cut into very small chunks. Simmer the mixture lightly for about 10 minutes, then take it off the heat and let cool. Once cool, add the confectioner's sugar until it reachs a good glazing consistency, and stir until smooth.
  • If any are left over, store in a tightly sealed container at room temperature.
