1/2 cup dry bread crumbs
3/4 teaspoon salt
1/2 cup orange juice
2 tablespoons reduced-sodium soy sauce
1 tablespoon butter, melted
1 tablespoon olive oil
1/2 teaspoon lemon juice
4 orange roughy fillets (6 ounces each)

Steps:

  • In a shallow bowl, combine bread crumbs and salt. In another shallow bowl, combine the orange juice, soy sauce, butter, oil and lemon juice. Dip the fillets into orange juice mixture, then coat with crumb mixture. , Place in a 13-in. x 9-in. baking dish coated with cooking spray. Bake, uncovered, at 450° for 15-18 minutes or until fish flakes easily with a fork.

I found this recipe on finestchef.com, and it looked absolutely amazing. I have yet to try this recipe, but it does sound great. Serve with a side of rice.

2 orange roughy fillets
6 ounces heavy cream
1 lemon, juice of
1 pinch freshly chopped dill
1 tablespoon flour
salt and pepper
2 tablespoons vegetable oil

Steps:

  • Pat dry the orange roughy fillet, season it lightly with salt and pepper and dredge it in the flour.
  • Heat the oil in a non-stick pan and fry the orange roughy on both sides until lightly golden.
  • Transfer the fish in a baking dish over parchment paper and bake it in a preheated oven at high temperature for another 7-8 minutes.
  • While the orange roughy fillet is baking, combine the heavy cream, dill, lemon juice and little black pepper in a small pan and bring to a boil.
  • Reduce the lemon dill sauce slightly and pour it over the ready fish.

I got this recipe from a community cookbook. It was so easy to prepare and very delicious. It is also healthy and low fat. A great weeknight dish.

5 -7 orange roughy fillets
1/2 cup low-fat mayonnaise
2 teaspoons lemon juice
2 teaspoons lime juice
2 teaspoons Dijon mustard
2 -3 tablespoons fresh dill, chopped
2 tablespoons grated parmesan cheese

Steps:

  • Place fish fillets in a baking dish sprayed with Pam.
  • In a bowl, mix mayo, lemon, lime and mustard.
  • Add in dill and stir well.
  • Spread all of the sauce over the fillets.
  • Then sprinkle with the Parmesan.
  • Bake at 375 for 20 minutes (or until fish is done), then broil for 5 minutes to get top crispy and brown.

1 large orange roughy fillet (mine was a little over 1/2 pound)
pepper
1 cup orange juice
2 tablespoons dried lavender
2 carrots, peeled and cut into julienne stripes
3 scallions, sliced into julienne strips
1 teaspoon peanut oil
1 cup white wine
2 tablespoons orange liqueur (I skipped the liqueur) (optional)

Steps:

  • Pepper both sides of the fish.
  • Pour orange juice in a measuring cup (I used ready-made but imagine freshly squeezed from 2 oranges will be so much better), stir in lavender and white wine and set aside.
  • Heat peanut oil (or use unsalted butter) in small skillet, stirring to coat until tender (5 minutes).
  • Meanwhile in a large skillet, suitable for poaching fish, add orange juice mixture and bring to a boil over medium high heat. Add fish and lower heat to a simmer until fish is tender and flakes with a fork (10 - 15 minutes). Remove fish to a platter and keep warm.
  • Add orange liqueur, if using, to pan and turn up heat and reduce by half. Return fish to pan until heated through.
  • Place fish on plates and top with vegetables, spooning sauce over fish.

LEMON-ORANGE ORANGE ROUGHY

1 lemon, juiced
½ teaspoon lemon pepper

  • Heat oil in a large skillet over medium-high heat. Arrange fillets in the skillet, and drizzle with orange juice and lemon juice. Sprinkle with lemon pepper. Cook for 5 minutes, or until fish is easily flaked with a fork.
