ORANGE OATMEAL MUFFINS

These are moist muffins with a hint of orange flavoring in it. I received this recipe from my great aunt at the time I was married.

1 cup rolled oats
½ cup orange juice
½ cup boiling water
½ cup butter
½ cup packed brown sugar
⅓ cup white sugar
2 eggs, lightly beaten
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¾ teaspoon salt
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease or paper-line muffin pans.
  • In a small bowl soak oats in orange juice and water for 15 minutes.
  • In a large bowl cream together butter or margarine and sugars. Beat in eggs and oat mixture.
  • In a separate bowl, blend flour, baking powder, soda, salt, and nutmeg. Stir into batter. Stir in vanilla and raisins. Spoon batter into prepared muffin pans, filling 2/3 full.
  • Bake at 350 degrees F (175 degrees C) until golden brown, about 20 minutes.

1 cup all-purpose flour
¼ cup white sugar
2 teaspoons baking powder
¼ cup raisins
1 egg
3 tablespoons grated orange zest, or to taste
3 tablespoons canola oil
1 cup milk
3 tablespoons orange juice
1 tablespoon white sugar

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • Stir the oats, flour, 1/4 cup sugar, baking powder, and raisins together in a bowl; set aside. Beat the egg in a bowl along with the orange zest and canola oil. Whisk in the milk and stir in the flour until just mixed. Evenly divide the batter among the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Remove the muffins from the oven. Stir the orange juice together with 1 tablespoon sugar until the sugar dissolves. I love the orange flavor of these, different for a muffin. Yummy! I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". I usually double or triple the recipe and freeze the extras.(Prep time includes soaking time.)

1 cup oats, soaked in both
1/2 cup orange juice, and
1/2 cup boiling water, for 15 minutes
1/2 cup margarine, softened
1/2 cup white sugar

juice from your zested orange, strained
1/4 cup Nutella
1/3 cup applesauce
3/4 cup mini dark chocolate chunks

Steps:

  • Preheat your oven to 400 degrees. Combine all the dry ingredients in a large bowl: flour, oats, sugar, baking powder, salt, cinnamon. Whisk the egg in a smaller bowl. Add the buttermilk. Microwave the Nutella until it's thinner, like a chocolate sauce, about 20-25 seconds or so (do not do this in the actual Nutella container). Whisk the Nutella into the egg and buttermilk mixture until smooth. While whisking, gradually pour in the juice from your orange. Whisk in the orange zest and applesauce. Pour the wet mixture over the dry ingredient and continue to whisk until the ingredients are well combined. Stir in the mini chocolate chunks. Place paper muffin cups in a standard muffin pan. Fill each cup to the top with batter. Bake for 18-20 minutes.

grated rind of 2 oranges

2/3 cup oil
2 T vinegar
2 cups orange juice
2 cups frozen or fresh blueberries

Steps:

  • Preheat oven to 350. Combine dry ingredients and wet ingredients in separate bowls; add wet to dry and stir until just moist. Fold in blueberries. Pour batter into lined muffin tin carefully. Bake 20-25 minutes.
