1 cup fresh cranberries, chopped
3/4 cup sugar
2 teaspoons orange zest
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup orange juice
2 large eggs
1/2 cup nuts, chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Grease a 12 cup muffin pan.
  • In a bowl, stir together cranberries, 1/4 cup of the sugar, and orange peel.
  • In a larger bowl, sift together flour, baking powder, salt, and the rest of the sugar.
  • Add oil, orange juice, and eggs all at once to the flour mixture and stir until moistened.
  • Fold in sugared cranberries and nuts.
  • Pour batter into muffin pan, evenly dividing batter between cups.
  • Bake at 400F for 20-25 minutes or until golden brown.

This recipe only produces very large muffins, but the addition of pecans gives the traditional cranberry-orange muffins a whole new flavor. A real treat for Thanksgiving or Christmas brunch!

Number Of Ingredients 10

1 tablespoon orange zest (from a large navel orange)
3/4 cup milk
1/4 cup vegetable oil
1 large egg
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup fresh cranberries, coarsely chopped using blender
1/2 cup pecan pieces

Steps:

  • Preheat oven to 400 degrees for a 6 cup muffin pan or 375 degrees for a dark, non-stick muffin pan.
  • Grease bottoms of jumbo muffin pan with vegetable shortening.
  • Prepare orange zest in a large bowl. Beat orange zest, milk, oil and egg with a wire whisk until well mixed. Using a large spoon, blend four, sugar, baking powder and salt and add all at once to liquid mixture, stirring just until flour is moistened. Batter will be lumpy; do not overmix.
  • Wash 1 cup cranberries. Put in blender on Chop (lowest setting) for 2 seconds ONLY. Fold in cranberries and nuts into muffin batter. Divide among 6 jumbo juffin cups.
  • Bake 20 to 25 minutes until a round toothpick pressed in the center of the muffin comes out clean. Let muffins cool about 5 minutes, then turn out onto a wire rack. Serve warm with butter.

2 cups all-bran cereal
3/4 cup boiling water
1/4 cup vegetable oil
3/4 cup buttermilk
1/4 cup orange juice
2 tablespoons dark molasses
2 tablespoons honey
1 tablespoon orange zest, grated
1 large egg
3/4 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup dates, chopped
3/4 cup walnuts, chopped

Steps:

  • Heat oven to 400 degrees. Grease one 12-cup muffin tin.
  • In a large bowl, combine bran cereal, water and oil, stirring until bran softens.
  • In a small bowl, whisk buttermilk, Orange Juice, molasses, honey, orange zest, and egg until blended.
  • In a small bowl, combine flours, baking soda and salt. Add buttermilk mixture to bran, stirring to combine. Add flour mixture, dates and walnuts to bran mixture, stirring just until flour is moistened.
  • Spoon into muffin cups, and bake until top springs back when lightly pressed, about 18 minutes.
  • Let cool in pan 5 minutes before removing to wire rack.

1/2 cup rolled oats
1/2 cup plain yogurt
1 1/2 cup whole wheat flour
1 Tbsp ground flax seed
1/2 tsp cinnamon (optional)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1medium orange
1/2 cup raw sugar
1/4 cup canola oil
1 egg
1cup blueberries
1/2 cup toasted walnuts or pecans

Steps:

  • Preheat oven to 400. Stir together oats and yogurt in a small bowl. Set aside for 5 minutes. Whisk flour, flax, baking powder,baking soda, salt in a medium bowl. Grate the orange peel add to flour mixutre. Squeeze 1/2 cup orange juice and whisk together with sugar, oil add to oat mixture. Blend oat mixture in to flour mixture, stir until just combined. Fold in berries and nuts. Spoon batter into muffin cups. Bake for 15 minutes or until tooth pick comes out clean.

6 eggs, separated
1/4 teaspoon cream of tartar
4 teaspoons splenda
1/4 cup soy flour
1/4 cup walnuts, ground
1 teaspoon brown sugar
1/2 (8-ounce) package cream cheese
1/4 cup heavy cream
8 teaspoons splenda
1 teaspoon orange extract
ORANGE CREAM CHEESE FROSTING:
1/2 (8-ounce) package cream cheese
1/4 cup whipping cream
1 teaspoon orange extract
splenda , to taste

Steps:

  • 1. Beat egg whites with cream of tartar and add 4 Splenda packets. Beat whites until stiff. Sprinkle the 1/2 teaspoon orange extract over this.2. In separate bowl, beat yolks with 4 Splenda packets and 1 tablespoon Brown Sugar Twin. Add 1/2 teaspoon orange extract. Take a big spoonful of whites and add to yolk mixture and mix together, then pour yolk mixture over whites.3. Mix 1/4 cup soy flour with 1/4 cup ground walnuts (doesn't have to be super fine). Fold all this together and pile mixture into 12 muffin cups sprayed with Pam. Bake at 350° F for 15 minutes until tops of muffins are browned. Reduce oven temperature to 325° F, and bake another 15 minutes. Cool and ice with Orange Cream Cheese Frosting if desired.
