8 cups torn Bibb lettuce or salad greens of your choice
3 green onions, sliced
1 can (15 ounces) mandarin oranges, drained
1/4 cup canola oil
2 tablespoons white vinegar
2 tablespoons sugar
2 tablespoons minced fresh parsley
1/2 teaspoon salt, optional
Dash pepper
4 drops hot pepper sauce
1/4 cup slivered almonds, toasted, optional

Steps:

  • In a salad bowl, toss the lettuce, onions and oranges; set aside. In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, parsley, salt if desired, pepper and hot pepper sauce; shake well. Drizzle desired amount over salad; toss to coat. Sprinkle with almonds if desired. Refrigerate any remaining dressing.

1 cup plain yogurt
1/2 cup fresh orange juice
1/4 cup honey
2 tablespoons orange zest

Steps:

  • Whisk together all the dressing ingredients and refrigerate.

1/2 teaspoon Dijon mustard
1/4 cup orange juice
2 teaspoons finely chopped shallots

1 large head boston lettuce, torn into bite-size pieces (5 cups)
1 cup grated carrot (1 carrot)
1 cup grape tomatoes, rinsed and cut in half
2 tablespoons snipped fresh tarragon (optional) or 2 tablespoons chives (optional)

Steps:

  • To prepare dressing: Whisk mayonnaise and mustard in a small bowl. Slowly whisk in orange juice until smooth. Stir in shallot. Season with pepper.

1 tablespoon sugar
1 tablespoon white vinegar
1/2 teaspoon celery seed

1 package (3 ounces) slivered almonds
2 teaspoons butter
2 tablespoons sugar
2-1/2 cups torn mixed salad greens

1kg young fennel
6 tbsp orange juice
2 tbsp Dijon mustard
salt & pepper
3 tbsp walnut oil
2 Cos lettuces or 8 Little Gems, torn into bite-size pieces

Steps:

  • Quarter, core and finely shred the fennel. A mandolin or the slicing balde of a food procesor works well.
  • Whisk together the orange juice and Dijon mustard with salt and pepper, then whisk in the walnut oil. Pour the dressing over the fennel and leave to marinate for up to 24 hours.
  • Tear the lettuce into bite-size pieces. Put in a large bowl, then tip in the fennel and dressing. Toss everything together and serve.

SUGARED ALMONDS
1/2 cup(s) sliced almonds
3 tablespoon(s) granulated sugar
SALAD MAKINGS
1 cup(s) celery, diced
2 - green onions, chopped
1 small can(s) manadarin oranges, drained
SALAD DRESSING
1/2 teaspoon(s) salt
1/4 cup(s) salad oil
2 tablespoon(s) apple cider vinegar
dash(es) black pepper
2 tablespoon(s) granulated sugar
1 tablespoon(s) fresh parsley, chopped
dash(es) tobasco sauce

Steps:

  • Sugared Almonds: Cook almonds and sugar on stovetop stirring constantly until like toffee. Remove from stove. Cool on aluminum foil. Break into smaller pieces when cooled. Set aside
  • Combine salad makings in a large bowl. Stir in cooled almonds. Toss with dressing and serve immediately.
  • Dressing: Combine dressing ingredients. I prepare in a small canning jar so I can shake the ingredients together.

2 units celery
1 units green onions
0.25 cups vinegar
0.25 cups sugar

6 drops tabasco
12 units orange

Steps:

  • Put nuts in fry pan and add butter. Add sugar and heat till the sugar melts and the nuts are coated stir constantly so the sugar does not burn. Let cool and separate any stuck together.
  • Chop up lettuce, celery, and onion in a bowl. Mix dressing and pour over the top of salad. Add nuts and oranges. Serve.
