- In a salad bowl, toss the lettuce, onions and oranges; set aside. In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, parsley, salt if desired, pepper and hot pepper sauce; shake well. Drizzle desired amount over salad; toss to coat. Sprinkle with almonds if desired. Refrigerate any remaining dressing.

- Quarter, core and finely shred the fennel. A mandolin or the slicing balde of a food procesor works well.
- Whisk together the orange juice and Dijon mustard with salt and pepper, then whisk in the walnut oil. Pour the dressing over the fennel and leave to marinate for up to 24 hours.
- Tear the lettuce into bite-size pieces. Put in a large bowl, then tip in the fennel and dressing. Toss everything together and serve.

- Sugared Almonds: Cook almonds and sugar on stovetop stirring constantly until like toffee. Remove from stove. Cool on aluminum foil. Break into smaller pieces when cooled. Set aside
- Combine salad makings in a large bowl. Stir in cooled almonds. Toss with dressing and serve immediately.
- Dressing: Combine dressing ingredients. I prepare in a small canning jar so I can shake the ingredients together.

- Put nuts in fry pan and add butter. Add sugar and heat till the sugar melts and the nuts are coated stir constantly so the sugar does not burn. Let cool and separate any stuck together.
- Chop up lettuce, celery, and onion in a bowl. Mix dressing and pour over the top of salad. Add nuts and oranges. Serve.
