ORANGE SHERBET ICE CREAM CAKE WITH SUGAR COOKIES AND LEMON WHIPPED CREAM FROSTING
This dessert is like an orange creamsicle in cake form, with a sugar cookie crust and a lemony whipped cream frosting.

Steps:
- Butter a 9-inch springform pan and line the bottom with a parchment paper circle.
- Cover the bottom of the prepared pan with the sugar cookies. Spread the marshmallow creme on top of the cookies. Scoop the sherbet and frozen yogurt onto the marshmallow layer, packing it in tightly and alternating the scoops to create a marbled or checkerboard effect. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
- Unmold the cake by running a knife around the edge of it, then unhinge the springform and remove. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a plate on the bottom and invert once more.
- Add the heavy cream, lemon curd, confectioners' sugar and vanilla to a large bowl and whip with an electric mixer until soft peaks form. (This makes enough frosting to cover the top and sides of the cake with additional to pipe decorations if desired.)
- Frost the top and sides of the cake with the lemon whipped cream frosting and sprinkle with the almonds. If the cake begins to get too soft, put it back into the freezer for a few minutes.
- Freeze another 1 1/2 to 2 hours or up to overnight. Before serving, let the cake sit at room temperature for about 20 minutes.

I love the combination of any fruit flavor with chocolate. These are super, unique cookies and they are pretty easy to make. Only makes 3 dozen, so you may want to double the recipe :)

- Preheat oven to 350 degrees.
- Combine first 4 ingredients in a large bowl and beat at low speed until smooth and creamy.
- Add vanilla and orange rind and beat well.
- Combine flour and salt and add to cream mixture; beating well.
- Stir in chocolate chips.
- Drop dough by heaping teaspoonfuls on to cookies sheets and bake for 12-15 minutes, or until edges just begin to brown.
- Cool on wire racks.

- Cream butter and cream cheese with mixer. Add the egg and orange extract and mix just until combined on low scraping the bowl several times. Add the cake mix in three parts mixing just until combined after each part. Remove from the mixer and very carefully and slowly fold in blueberries. You don't want them to burst so just take your time. Refrigerate dough for 2 hours. Preheat oven to 350°F. Roll into one inch balls. Place on cookie sheets covered with parchment paper. Bake 12 to 14 minutes or until lightly browned. Cool for 2 minutes and remove to cookie cooling racks. In small bowl whisk powdered sugar, orange zest and orange juice. Drizzle over cooled cookies.

The original recipe came from a magazine, but I doctored it a bit. This recipe incorporates frozen orange juice concentrate, for the added orange flavour that reviewers are missing in other recipes of this type. I think next time I will use orange extract or orange liquor..

- Preheat oven to 350*. Combine flour and salt. Beat shortening, sugar and cream cheese until well-mixed. Beat in the eggs, one at a time. Add the orange juice concentrate and the rind. Blend in the flour and salt. Stir in the chocolate chips.
- Drop dough by teaspoonfuls, 2" apart on lightly greased cookie sheets.
- Bake @ 350* for 10-12 minutes, until light brown around the edges. Cool.
- ICING:.
- Slowly beat icing sugar into the cream cheese until well blended. Stir in the orange juice and orange rind. Ice the cookies.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
- Cream the shortening and brown sugar together until light. Beat in the eggs and vanilla. Combine the flour, 3 tablespoons drink mix, baking powder, and salt. Dissolve the baking soda into the buttermilk. Stir in the flour mixture alternately with the buttermilk mixture. Stir in the white chocolate chips. Drop dough by teaspoonfuls onto prepared cookie sheets.
- Bake for 10 to 12 minutes. Frost cookies while still hot with orange glaze.
- In a small bowl, blend together the butter, 3 tablespoons orange drink mix, and confectioners sugar until smooth. Mix in water 2 teaspoons at a time until a pourable consistency is reached. Drizzle or brush onto cookies while still warm.

CINNAMON ORANGE CREAM CHEESE COOKIES
I love orange and cinnamon together! Yum. You really don't need to chill these for as much time as the recipe calls for. 1 hour would be plenty. I chilled my dough overnight and had to wait for the dough to warm a little before it was able to be rolled out. Cut your cookies small. They do not spread as they cook. Nice shortbread-like cookie. Not too sweet and excellent with a cup of tea or hot chocolate. I double the zest and spices - it gives the cookies freckles. :)

- Mix together flour, cinnamon, allspice and salt.
- In medium bowl, using electric mixer set on low, beat together butter and cream cheese. Beat in sugar . Add orange juice and peel.
- Add flour and spices, and beat until combined. Do not overbeat.

- preheat the oven to 375f/190c. grease a large baking sheet.
- put the butter, sugar, and cream cheese in a large bowl and beat until light and fluffy. beat in the egg. sift in flour and baking soda and add the orange juice and 1 tsp of rind. mix well.
- drop about 30 rounded tablspoons of the batter onto the prepared baking sheet, making sure that they are well spaced. sprinkle with the raw brown sugar.
- bake in the oven for 10 minutes, or until the edges are lightly brown.
- let cool on a wire rack. decorate with the rest of the orange peel before serving.
