The warmth of the ginger and cloves and the brightness of the orange zest come together to make this a family favorite! You can use frozen cranberries if you can't find fresh--just simmer a few minutes longer. Make this ahead of time, and save yourself some stress on the big day!

¾ cup water
¾ cup brown sugar
¼ cup freshly squeezed orange juice
1 cinnamon stick
1 teaspoon grated fresh ginger
1 teaspoon grated orange zest
⅛ teaspoon salt
⅛ teaspoon ground cloves
⅛ teaspoon ground allspice
1 (12 ounce) bag fresh cranberries

Steps:

  • Combine water, sugar, orange juice, cinnamon stick, ginger, orange zest, salt, cloves, and allspice in a medium saucepan and bring to a boil. Reduce heat and simmer until sugar is dissolved, 3 to 5 minutes.
  • Stir cranberries into the sugar mixture in the saucepan and return to a boil over medium heat. Cook until cranberries start to burst and mixture thickens slightly, 8 to 10 minutes; sauce will thicken further upon cooling.
  • Transfer cranberry sauce to a bowl; remove and discard cinnamon stick. Store in the refrigerator; for best flavor, bring to room temperature before serving.

1 cup orange juice
1 cup white sugar
1 (12 ounce) package fresh cranberries
2 pears, diced
⅓ cup honey
2 cinnamon sticks

Steps:

  • Heat orange juice and sugar in a saucepan over medium heat until sugar is dissolved. Stir in cranberries, and cook until they start to pop, 5 to 10 minutes. Stir in pears, honey, and cinnamon sticks and cook for 10 minutes. Remove from heat, and transfer to a bowl. Cranberry sauce will thicken as it cools. Remove cinnamon sticks before serving.

1 (12 ounce) bag cranberries
1 cup sugar
1/2 cup orange juice
1/4 cup tangerine juice
1/4 cup pineapple juice

Steps:

  • Place cranberries in colander, rinse and drain. Pick over and discard cranberries as needed.
  • Combine sugar and citrus juices in saucepan. Bring to a boil, stirring constantly.
  • Add cranberries. Bring back to a boil, and boil for 10-15 minutes, until cranberries "pop".
  • Refrigerate. Freezes well.

4 lbs. of pork spareribs
for the marinade
½ cup cranberry juice
½ cup orange juice
¼ cup ketchup
¼ cup soy sauce
¼ cup water
¼ cup vinegar (any kind)
1 tsp. ground cumin
1 tsp. ground curry
1 tsp. salt
1 tsp. garlic powder
1 tsp. black pepper

Steps:

  • 1. Combine all of the ingredients for the marinade in a bowl and stir. Place ribs in the marinade and refrigerate for at least one hour or more or up to overnight. Preheat oven to 325 degrees F. Place the ribs in a roasting pan with the marinade. Bake uncovered for 2 - 2 ½ hours or until the ribs are fall off the bone tender. Allow the marinade to evaporate in the cooking process. Let the ribs cool slightly; then separate the ribs with a cooking scissor and plate.
