Orange Colada from the Virgin Islands image

Rum combined with pineapple,orange juice and pina colada mix takes you back to the salty seas of the caribbean. If Cruzan orange rum is not in your budget (like mine), use dark rum with 1 tsp. orange zest. A bit sweet, so some of us would like to add another 2 oz. of rum, your call. Entered into my recipe book for ZWT5.

4 ounces ice (crushed)
4 ounces orange juice
4 ounces pineapple juice
6 ounces orange-flavored rum
1 (15 ounce) pina colada nonalcoholic drink mix

Steps:

  • In a blender combine; cruzan rum, along with pina colada mix,pineapple juice and orange juice.
  • Blend in crushed ice, when processed pour into glasses enjoy!

1 can (6 ounces) frozen orange juice concentrate, thawed
6 ounces frozen nonalcoholic pina colada mix
1 cup milk
2 tablespoons lemon juice
1-1/2 cups crushed ice
Orange slices

Steps:

  • In a blender container, combine first four ingredients. Cover and process on high for 30 seconds or until smooth. Add ice and continue to blend until blended. Serve in a chilled glass. Garnish with an orange slice. Serve immediately.

Coating the bread with an egg custard that includes pina colada mix is genius and delicious. The flavor is very tropical. Orange syrup drizzled on top is the perfect touch....

6 slice bread, your choice
2 large eggs
1/2 c pina colada drink mix
ORANGE SYRUP
1/2 c granulated sugar
1/2 c water
2 Tbsp orange marmalade (heaping spoonfuls)
2 Tbsp frozen orange juice concentrate, undiluted (heaping spoonfuls)

Steps:

  • 1. In a small saucepan, heat sugar and water to boiling, stirring until dissolved. Stir in marmalade and juice. Continue to boil for 1-2 minutes then remove from heat. Place in a serving container.
  • 2. Heat skillet. Spray with nonstick or melt butter.
  • 3. In a bowl, whisk eggs and pina colada mix together.
  • 4. Dip bread slices in the mixture coating both sides.
  • 5. Place coated bread in prepared skillet.
  • 6. Cook to golden brown on both sides. Then remove to a plate.
  • 7. Serve toast with banana slices, orange syrup, and shredded coconut if desired.
