1 pound granulated sugar
10 ounces all-purpose flour
8 fluid ounces buttermilk
4 fluid ounces canola oil
3 1/2 ounces cocoa powder, such as Valrhona
1/2 fluid ounce Madagascar bourbon vanilla extract
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon fine salt
2 eggs
Chocolate, Orange and Clove Infused Ganache Filling, recipe follows
Chinese Spiced Tea Buttercream, recipe follows
Chocolate curls, for garnish
Orange sugar crystals, for garnish
1 pound granulated sugar
4 ounces cocoa powder, such as Valrhona
2 ounces cornstarch
1/2 teaspoon fine salt
6 ounces dark chocolate, such as Valrhona
4 ounces unsalted butter
2 fluid ounces orange liqueur, such as Grand Marnier
1 tablespoon ground cloves
1/2 teaspoon orange oil
8 ounces granulated sugar
4 ounces egg whites
2 pounds unsalted butter, at room temperature
1 pound confectioners' sugar
3 tablespoons loose Chinese mandarin orange tea
1 tablespoon loose Chinese mandarin orange tea, ground in a food processor and sifted to remove larger pieces
1 tablespoon Madagascar bourbon vanilla extract

Steps:

  • Preheat the oven to 325 degrees F. Line a cupcake pan with 24 regular-size cupcake liners.
  • Combine the granulated sugar, flour, buttermilk, 8 fluid ounces water, oil, cocoa powder, vanilla extract, baking soda, baking powder, salt and eggs in a mixer and whisk on speed 1 until all the ingredients are incorporated. Scrape down the sides of the bowl with a spatula and mix on speed 2 until the batter is lump free.
  • Fill the cupcake liners half full with the chocolate batter and bake for 25 minutes, rotating halfway through the bake time. Cool the cupcakes completely.
  • To assemble: Place the Chocolate, Orange and Clove Infused Ganache filling into a piping bag and squeeze a small amount of the filling into the centers of the cooled cupcakes. Also pipe a small circle of this ganache around the top edge of the cupcake (so you can see the filling even after it is frosted). Generously pipe the Chinese Spiced Tea Buttercream on top. Garnish with chocolate curls and orange sugar crystals.
  • In a large pot, whisk together the granulated sugar, cocoa powder, cornstarch and fine salt. Once mixed together, add 10 ounces water and whisk until smooth. Cook over medium-high heat until the mixture comes to a boil. Continue whisking for 1 minute. Remove the pot from the heat and add the dark chocolate, butter, orange liqueur, orange oil, ground cloves and orange oil. Allow the mixture to cool.
  • In a medium pot, combine the granulated sugar with enough water to make the mixture resemble wet sand. Place this pot over medium-high heat and cook to 235 degrees F.
  • While the sugar cooks, begin whipping the egg whites in a stand mixer with the whisk attachment to full volume.
  • Once the temperature of the sugar reaches 235 degrees F (soft ball stage), pour the sugar into the egg whites. Continue whipping until the mixture cools to just above body temperature, about 4 minutes.
  • Slowly add in 1 pound butter (about 4 ounce pieces at a time). After each addition, allow the butter to mix in almost completely before adding more. The mixture should separate and come back together.
  • In a small saucepan, heat 8 ounces water to a boil. Remove from the heat and add the loose tea (not the ground tea). Steep for 10 minutes. After 10 minutes, strain into a separate bowl.
  • Once the butter mixture has come back together, remove the whisk attachment and replace with a paddle. Add in the remaining 1 pound butter, confectioners' sugar, steeped tea and ground tea. Paddle this mixture until light and fluffy, about 5 minutes.

1/2 lb unsalted butter, at room temperature
2 cups sugar
4 extra-large eggs, at room temperature
1/4 cup grated orange zest (from 4 large oranges)
3 cups all-purpose flour, plus
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1/4 cup freshly squeezed orange juice
3/4 cup buttermilk, at room temperature
1 teaspoon pure vanilla extract
2 cups good semisweet chocolate chunks
1/2 cup shortening
1/2 cup butter
5 cups confectioners' sugar
6 tablespoons Frangelico
8 ounces nutella
1/2 cup heavy cream

Steps:

  • For the cupcake:.
  • Preheat the oven to 350°F.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy.
  • Add the eggs, one at a time, then the orange zest.
  • Sift together 3 cups flour, the baking powder, baking soda, and salt in a large bowl.
  • In another bowl, combine the orange juice, buttermilk, and vanilla.
  • Add the flour and buttermilk mixtures alternately in thirds to the creamed butter, beginning and ending with the flour.
  • Melt the chocolate and add into the orange batter.
  • Pour 2/3 full into the cupcake wrappers, smooth the top, and bake for 22 to 25 minutes, until a cake tester comes out clean.
  • For the Hazlenut Buttercream Frosting:.
  • Cream butter and shortening with mixer for 3 minutes on high speed.
  • Add Frangelico.
  • Gradually add sugar, one cup at a time, beating well on medium speed.
  • Scrape sides and bottom of bowl often.
  • Mix on high speed for 5 minutes.
  • For the Nutella Ganache:.
  • Melt the Nutella and heavy cream in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
  • After the cupcakes have had a chance to cool, scoop out the tops of the cupcakes with a melon baller and cut off the "cone" part of the middle.
  • Drizzle in the Nutella ganache and replace the top of the cupcake.
  • Spread with the hazelnut frosting.
  • You can decorate them with leftover orange rind, but that's optional.

1/2 teaspoon salt
1/4 cup unsalted butter or regular butter, softened
1/2 cup sugar
1 teaspoon vanilla
1/2 teaspoon almond extract
1 1/2 cups Nutella® hazelnut spread with cocoa (16 oz)
4 eggs
1/4 cup milk
6 oz bittersweet chocolate chips (1 cup)
3 tablespoons unsalted butter or regular butter
4 teaspoons light corn syrup
1/4 teaspoon vanilla
1/3 to 1/2 cup chopped toasted hazelnuts

Steps:

  • Heat oven to 325°F. Place paper baking cup in each of 24 regular-size nonstick muffin cups. In small bowl, stir together flour and salt; set aside.
  • In large bowl, beat 1/4 cup softened butter with electric mixer on medium speed until creamy. Add sugar, 1 teaspoon vanilla and the almond extract; beat until light and fluffy. Add hazelnut spread; beat until well blended, scraping bowl occasionally. Add eggs; beat until smooth. Add half of the flour mixture; beat on low speed just until blended. Add milk; beat until blended. Gently stir in remaining flour until batter is smooth. Spoon batter evenly into muffin cups, filling each half full.
  • Bake 20 to 25 minutes or until set. Cool completely in pan, about 30 minutes.
  • Meanwhile, in small microwavable bowl, microwave chocolate chips, 3 tablespoons butter and the corn syrup on High 1 to 1 1/2 minutes, stirring every 30 seconds, until chips are melted and mixture is smooth. Stir in 1/4 teaspoon vanilla. Top cooled cupcakes with ganache topping. Sprinkle with hazelnuts.

1 cup confectioners' sugar
3/4 cup almond flour
2 tablespoons cocoa
2 egg whites, warmed to room temp
1/8 teaspoon cream of tartar (pinch)
1/4 cup granulated sugar
1/2 cup heavy cream
1 ounce semisweet chocolate
4 -5 tablespoons nutella

Steps:

  • Before you begin get all the ingredients ready. Also prepare your baking sheets by lining them with parchment paper.
  • Start by combining confectioners sugar, almond flour, and cocoa in a food processor. Pulse a few times to get it mixed good. Set aside.
  • Whisk egg whites until they start to get foamy. Add cream of tartar and whisk until soft peaks form. Reduce speed to low and add granulated sugar, once its mixed in, increase speed to high and beat until stiff peaks form (about 3 minutes).
  • Sift the flour mixture into the egg whites (do not use a flour sifter, a regular sieve will work better) fold the mixture until it is smooth.
  • Transfer the mixture into a piping bag fitted with a large round tip. ( Wilton 1a or 2a depending on the size you want) Pipe macaron mixture onto prepared baking sheet about an inch in between each one. Let sit about 30 minutes or until you can gently touch the top and it won't stick to you finger. Meanwhile preheat oven to 325 degrees. When they don't stick to your finger pop them in the oven for about 10 minutes. Take them out and test for doneness by gently trying to slide the top of the macaron. It should just barely move. Let cool while you prepare the filling.
  • For the filling pour the heavy cream in a small saucepan over medium heat. Heat until it simmers. Place the chocolate and nutella in a heat safe bowl. Pour the heavy cream in the bowl and wait a minute or so. Then whisk the mixture until everything is melted. Place in the refrigerator for 20-30 minutes for it to stiffen up.
  • Once the macarons are ready to be assembled, take out the ganache and beat it on high until it changes to a lighter color. Put the macarons together by scooping the ganache on the tip of a teaspoon and placing in the center of one macaron. Take the second macaron and gently press the two together until the ganache comes out to the edge.
  • Store in the refrigerator. Let sit on counter for about 10-15 minutes before serving. Enjoy!

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line a 12-cup muffin tin with paper liners.

1/2 teaspoon salt

  • Preheat oven to 350 degrees.
  • Sift together the flour, cocoa powder and baking soda in a large bowl. Add the salt.
  • Beat the butter and sugar together until light and fluffy. Add the eggs, one at a time. Beat in the butter, sour cream, milk and vanilla.
  • Gradually stir the flour mixture into the batter, until just combined. Do not over-beat.
  • Fill cupcake liners 2/3 full.
  • Bake for 20 to 25 minutes, or until a toothpick comes out clean. Allow to cool for 5 minutes in the pan. Remove the cupcakes from the pan and cool completely.
  • Make the ganache. Heat the cream in a small sauce pan over medium heat until it just comes to a boil, being careful that it does not boil over. Remove from heat. In a double boiler over a gentle simmer, add the Nutella and pour the hot cream over all. Stir in the Kahlua and salt. Whisk until it becomes smooth and silky. Remove from heat and set aside.
  • Once the cupcakes have cooled, turn them upside down and carefully dip them into the ganache, allowing the excess to drip off. If you would rather a whipped topping, beat the ganache to desired thickness, then spread over the cupcakes.
  • Garnish each cupcake with one chopped Ferrero Rocher.
