Tempting flavors of pumpkin pie and warm, buttery frosting--what could be better on an autumn afternoon?

2 cups Gold Medal™ all-purpose flour
1 1/2 cups granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
2 teaspoons grated orange peel
1/4 teaspoon salt
1/2 cup vegetable oil
1/2 cup orange juice
1 cup canned pumpkin (not pumpkin pie mix)
2 eggs
1/3 cup butter (do not use margarine)
2 cups powdered sugar
1/2 teaspoon vanilla
2 to 4 tablespoons milk

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 15x10x1-inch pan with shortening; lightly flour (or spray with baking spray with flour).
  • In large bowl, beat bar ingredients with electric mixer on low speed, scraping bowl occasionally, until moistened. Beat on medium speed 2 minutes, scraping bowl occasionally. Spread batter evenly in pan.
  • Bake 23 to 27 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In 2-quart saucepan, heat butter over medium heat, stirring constantly, until light golden brown. Remove from heat. Stir in powdered sugar, vanilla and enough milk until smooth and spreadable. Immediately spread frosting over cooled bars. Refrigerate about 15 minutes or until set. For bars, cut into 8 rows by 6 rows. If desired, garnish each bar with orange peel strip.

1 1/2 teaspoons baking soda

1/2 cup butter or 1/2 cup margarine, softened
1/4 cup shortening
3 eggs
1 1/2 teaspoons vanilla extract
1 tablespoon grated orange rind
1 cup golden raisin, chopped
1/2 cup finely chopped pecans
1/2 cup butter or 1/2 cup margarine, softened
4 1/2 cups icing sugar or 4 1/2 cups confectioners' sugar, sifted
1 tablespoon grated orange rind
4 -5 tablespoons orange juice

Steps:

  • FOR THE CAKE: Combine first 10 ingredients. Blend with an electric mixer 30 seconds on low speed; beat 3 minutes on high speed. Stir in raisins and pecans.
  • Pour into 3 greased and floured 8 inch round cake pans. Bake at 350°F for 30 to 35 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans, and cool completely. Spread Williamsburg Butter Frosting between layers and on top and sides of cake. Garnish cake with orange rind and sections. Yield: one 3 layer cake.
  • FOR THE BUTTER FROSTING: Cream butter; gradually add sugar, beating well. Add orange rind and juice; beat until smooth. Yield: enough for one 3 layer cake.

2-1/4 cups sifted cake flour
3/4 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt

1/2 teaspoon ground cloves
1-2/3 cups sugar
2 sticks (1 cup) unsalted butter, melted and cooled
1 cup sour cream
3 large eggs
1 teaspoon vanilla extract
For the Frosting:
1 stick (1/2 cup) unsalted butter, at room temperature
3 cups confectioners' sugar
1/4 cup evaporated milk
1 teaspoon vanilla extract
1 teaspoon orange extract
3 tablespoons dried orange peel

Steps:

  • 1. Center a rack and preheat the oven to 350 degrees F. Prepare the cake pans. 2. Dry whisk the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves together. Whisk in the sugar. 3. With the mixer on medium speed, beat together the melted and cooled butter, sour cream, eggs, and vanilla extract and continue beating on medium speed until thoroughly blended. 4. Gradually add the flour mixture and beat until thoroughly blended. 5. Pour the batter into the cake pans and bake for 25 to 30 minutes, until the cake layers test done. 6. Cool the layers in the pans for 10 minutes, then unmold onto cake racks and cool to room temperature. 7. Do not divide the layers, but do even up the top of the lower layer so that the layer stacks prettily. To Make the Frosting: 8. Cream the butter in the mixer at medium speed. Beat in the confectioners' sugar, evaporated milk, vanilla extract, and orange extract. Mix until smooth. Add the orange peel and mix until incorporated. 9. Frost the cake and refrigerate for 20 minutes to firm up the frosting.
