MARY BERRY'S ORANGE LAYER CAKE

225g baking spread
225g self-raising flour
1 level tsp baking powder
100g golden caster sugar
100g brown sugar
4 large eggs
finely grated zest of 2 oranges
150g butter, softened
300g icing sugar, sifted
finely grated zest of 2 oranges
25g caster sugar
juice of 2 oranges

Steps:

  • Heat oven to 180C/160C fan/gas 4. You will need 2 x 20cm loose-bottomed sandwich tins, greased and bases lined with baking parchment. Measure all the cake ingredients into a large bowl (reserve a little orange zest for decoration) and beat with a wooden spoon or electric hand mixer until combined and smooth.
  • Divide evenly between the 2 tins. Bake for 20-25 mins or until well risen, lightly golden and shrinking away from the sides of the tins. After 5 mins, remove from the tins and leave to cool on a wire rack.
  • To make the icing, put the butter and icing sugar into a bowl and mix with an electric hand mixer until light and fluffy. Stir in the orange zest.
  • Remove the paper from the cakes. Sit 1 cake upside down on a plate. Make the glaze by putting the caster sugar and orange juice into a saucepan, stirring over a low heat until the sugar has dissolved. Boil until reduced by half, then brush half on the upside-down cake, using a pastry brush. Spread half the butter icing over the glazed cake. Sit the other cake on top, brush with the remaining glaze, then spread with the remaining butter icing. Scatter with the reserved orange zest. The cake is best eaten on the day, but will keep for up to 3 days in a cool place. It freezes well un-iced or filled.

1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
1 cup fat-free plain Greek yogurt
1/2 cup orange juice
1/3 cup unsweetened applesauce
2 large egg whites
1 large egg
4 teaspoons grated orange zest
1 cup fresh blueberries or frozen unsweetened blueberries, unthawed

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flours, sugar, baking powder and salt. In another bowl, whisk yogurt, orange juice, applesauce, egg whites, egg and orange zest until blended. Add to flour mixture; stir just until moistened. Fold in blueberries., Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake 24-26 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm.

3 cups fresh raspberries
2 cups fresh blueberries
6-1/2 cups sugar
1/2 cup finely chopped orange segments
2 tablespoons lemon juice
4 teaspoons grated orange zest
1 pouch (3 ounces) liquid fruit pectin

Steps:

  • Place raspberries and blueberries in a food processor; cover and process until blended. Transfer to a Dutch oven. Stir in the sugar, orange segments, lemon juice and orange zest. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Boil for 1 minute, stirring constantly., Remove from the heat; skim off foam. Ladle hot mixture into hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 5 minutes in a boiling-water canner.

BERRY SCONES WITH ORANGE HONEY BUTTER



Berry Scones with Orange Honey Butter image

1 quart heavy cream
Zest of 1 orange
1/2 cup honey
Pinch salt
2 cups all-purpose flour
3 tablespoons sugar, plus more for sprinkling scones
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon kosher salt
3/4 stick cold unsalted butter, cubed
1 1/2 cups fresh mixed berries (e.g. blueberries, raspberries, blackberries), washed and dried
3/4 cup buttermilk, (leftover from orange butter), plus more to brush scones

Steps:

  • You can do this the old fashioned way and add ingredients to a mason jar, cover with the lid and shake vigorously for 10 minutes, or you can use the food processor.
  • In a food processor bowl add all the ingredients and turn on high. The liquid will slosh, whip and then separate after about 4 minutes. When the mixture separates, (these are the butter solids and buttermilk), stop processing and strain out the buttermilk - there will be just under a cup. Reserve the buttermilk to make the scones. Strain out the butter and squeeze dry. Work the butter a couple of times to bring it together to form a nice ball. Refrigerate butter until ready to use.
  • For the scones:
  • Preheat oven to 400 degrees F.
  • In a food processor bowl add flour, sugar, baking powder, baking soda and salt. Add cold butter cubes and pulse until you have the texture of coarse bread crumbs. Transfer to a large mixing bowl, then add 3/4 cup of buttermilk and stir to combine. As it comes together add berries and fold dough to incorporate berries but not break them up too much.
  • Drop spoonfuls of dough onto a parchment lined sheet pan. Using a pastry brush, paint the tops of each scone lightly with buttermilk and sprinkle with sugar.
  • Bake until golden brown, and nice and puffy, about 17 to 20 minutes. Remove from the oven and transfer to a wire rack.
  • Serve warm with the Orange Honey Butter.

6 egg whites, room temperature
½ teaspoon cream of tartar
1 pinch salt
1 cup white sugar
1 teaspoon vanilla extract
½ teaspoon almond extract
1 ½ tablespoons cornstarch
2 cups heavy whipping cream
1 large orange, zested
1 teaspoon vanilla extract
1 large orange, peeled and sliced
¾ cup mixed fresh berries

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C). Draw a 9-inch circle on a large sheet of parchment paper. Place parchment on a large baking sheet with the circle facing down and centered in the pan.
  • Beat together egg whites, cream of tartar, and salt on high speed with an electric mixer in a bowl until soft peaks form. Add in sugar 1 tablespoon at a time, beating continuously, until stiff, glossy peaks form. Mix in vanilla and almond extracts. Sift cornstarch over the egg mixture and gently fold in until just combined.
  • Pour egg mixture into the center of the circle on the parchment paper on the prepared pan. Starting from the center and moving outwards, gently form the meringue into a round no larger than the drawn circle. Create an impression in the center of the meringue so the edges are slightly taller than the middle.
  • Place into the preheated oven and bake until the pavlova feels firm and dry to the touch, 1 to 1 1/2 hours. Turn the oven off without removing pavlova. Leave in the oven to cool for at least 1 hour.
  • Pour heavy whipping cream into a large bowl. Beat at medium-high speed until soft peaks form. Add orange zest and vanilla extract; beat until combined.
  • Gently remove pavlova base from the parchment paper and place onto a serving tray. Top with whipped cream, oranges slices, and mixed berries. Serve immediately.

1/2 cup pecans, toasted
2 1/4 cups all purpose flour
1/2 cup sugar
1 tablespoon grated orange peel
3/4 teaspoon salt
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces
5 tablespoons (about) ice water
1 1/3 cups plus 1 tablespoon sugar
1/4 cup orange marmalade
1/4 cup cornstarch
1 tablespoon grated orange peel
1/4 teaspoon ground allspice
1 3/4 cups frozen unsweetened raspberries, thawed, drained
1 1/2 cups frozen unsweetened blueberries, thawed, drained
1 1/4 cups fresh cranberries or frozen, thawed
1 egg, beaten to blend (for glaze)

Steps:

  • Finely grind pecans in processor. Add 2 1/4 cups flour, 1/2 cup sugar, grated orange peel and salt and process until well blended. Add butter and process until mixture resembles coarse meal. Using on/off turns, blend in enough water by tablespoonfuls to form moist clumps. Gather dough together and divide into 2 pieces, 1 slightly larger than the other. Flatten into disks; wrap each disk in plastic and chill 1 hour. (Dough can be prepared 2 days ahead. Keep refrigerated. Let dough soften slightly at room temperature before rolling out.)
  • Position rack in bottom third of oven and preheat to 375°F. Combine 1 1/3 cups sugar, orange marmalade, cornstarch, orange peel and allspice in large bowl. Add all berries and toss gently.
  • Roll out larger dough disk on floured surface to 13-inch round. Transfer dough to 9-inch-diameter glass pie dish. Trim overhang to 1 1/2 inches.
  • Roll out remaining dough disk on floured surface to 12-inch round. Cut dough into fourteen 1/2-inch-wide strips.
  • Mound filling in crust. Arrange 7 dough strips atop filling, spacing evenly. Form lattice by placing remaining dough strips atop and at right angle to first 7 strips. Trim ends of dough strips even with overhang of bottom crust. Fold strip ends and overhang under, pressing to seal and forming high-standing rim. Brush lattice with egg glaze. Sprinkle with remaining 1 tablespoon sugar.
  • Line baking sheet with foil; place on bottom of oven under rack to catch any drippings. Place pie on rack and bake until crust is golden brown and filling bubbles thickly, covering crust edge with aluminum foil if browning too quickly, about 1 hour 15 minutes. Transfer pie to rack to cool. Serve pie slightly warm or at room temperature.

  • For crust:

  • For streusel topping:
  • Blend flour, sugar, crystallized ginger, orange peel, and salt in processor. Add butter; using on/off turns, blend until coarse crumbs form. Blend in milk (mixture will resemble moist coarse crumbs). Transfer mixture to medium bowl. Stir in almonds. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Position rack in center of oven and preheat to 400°F. Place rimmed baking sheet in bottom of oven to catch any possible spills from pie. Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter glass pie dish. Turn pie crust edge under, forming high-standing rim extending 1/4 inch above sides of pie dish; crimp edge decoratively. Freeze crust while making filling.
  • For filling:
  • Gently toss blueberries, raspberries, blackberries, 1/2 cup sugar, and lemon juice in large bowl. Let stand 10 minutes. Mix cornstarch and remaining 2 tablespoons sugar in small bowl. Add to berry mixture and toss gently to coat. Transfer berry mixture to crust, mounding slightly in center. Bake 30 minutes.
  • Remove pie from oven and reduce oven temperature to 375°F. Sprinkle streusel topping evenly over berry pie filling. Return pie to oven and bake until crust is golden brown and berry juices are bubbling thickly, about 40 minutes. Transfer pie to rack and cool completely.

100g ground almond

200g plain flour
1 tsp baking powder
25g butter , melted and cooled

100g caster sugar
50g ground almond
zest 1 orange
100g plain flour
½ tsp baking powder
1 quantity orange sugar syrup (see below for recipe)
800g fresh raspberry
22cm and a 32cm cake board
200ml raspberry coulis
1 quantity Crème patisserie (see below for recipe)
400g redcurrant
1 egg white
4 tbsp caster sugar
1.8kg chocolate modelling paste (recipe below)
6 plastic dowelling rods
800g small strawberry
200g blueberry
icing sugar , for dusting
4 tbsp caster sugar
6 tbsp water
2 strips orange peel
4 tbsp Cointreau
6 egg yolks
3 tsp vanilla extract
140g caster sugar
50g plain flour
600ml milk
25g butter
142ml pot double cream
500g tub crème fraîche
1 ¼kg plain chocolate , broken up
700g liquid glucose (available from some supermarkets and most chemists)

Steps:

  • TO MAKE THE CAKES: Heat oven to 160C/fan 140C/gas 3. Butter and base-line a deep, 30cm round cake tin (20cm round cake tin for the smaller cake) with baking parchment. Whisk the eggs and sugar together using a hand-held or tabletop mixer until the mixture leaves a trail when the whisk blades are lifted. This could take 8-10 mins, but don't skimp this step as it is crucial to the success of the cake.
  • Fold in the butter, almonds and orange zest using a large metal spoon, then sift in the flour and baking powder. Fold everything together lightly, then pour into the tin. Bake for 50-60 mins (30-40 mins for the smaller cake) until firm to the touch. Cool in the tin for 5 mins, then turn out, peel off the paper and leave to cool completely. The cakes can now be frozen for up to a month.
  • TO MAKE THE ORANGE SUGAR SYRUP: Put the caster sugar in a small pan with the water and orange peel. Heat gently, stirring until the sugar has melted, then boil hard for 2-3 mins until slightly syrupy. Cool, then stir in the Cointreau.
  • TO MAKE THE CRÈME PATISSERIE: Whisk together the egg yolks, vanilla extract and caster sugar using an electric whisk until the mixture is pale and thick. Whisk in the flour. Boil the milk, then gradually whisk into the egg mix. Return to the pan and cook over a gentle heat, whisking until the custard is thick and glossy. Cook gently, stirring for 2 mins more to cook out the raw flour taste. Remove from the heat and beat in the butter.
  • Spoon into a clean bowl, then cover closely with cling film (so it's in contact with the custard) and leave to cool. Whip the double cream, then fold into the cool custard. Can be made up to 2 days ahead and stored in the fridge. Just before using, stir in the crème fraîche. This quantity makes enough to cover both cakes.
  • TO DECORATE: The day ahead of serving, split each cake in half; brush the cut edges with syrup. Lightly crush half the raspberries. Put the base of each cake on a cake board, then spread each with a layer of raspberry coulis. Scatter over the crushed raspberries followed by a thin layer of Crème patisserie (about one-third of the total amount). Cover with the other halves of the cakes, then chill.
  • Select about 6-8 long strands of redcurrant. Lightly beat the egg white and put the sugar in a shallow bowl. Brush redcurrants lightly with egg white, then coat lightly with sugar and arrange over a flat tray lined with baking paper. Leave overnight to dry out.
  • Spread Crème patisserie thinly over the tops and sides of the cakes. Measure the depth and circumference of the small cake, then roll one-third of the modelling paste into a sausage. Put this shape between two large sheets of baking parchment, then roll to the circumference of the cake and about 3-4cm more than the depth. If the paste splits, put it in the food processor with 1 tbsp oil and whizz it up, then re-knead and it should come back again to a smooth paste. Once rolled sufficiently, flip the whole lot over and peel away the uppermost sheet of paper. Trim the base of the paste in a straight line, leaving the top wavy. Carefully wrap the modelling paste around the cake with the straight edge to the base, pressing in the sides, then peel off the parchment. Repeat with remainder of paste for the larger cake.
  • Cut the dowels into equal lengths, about 2cm more than the depth of the larger cake, then insert 4 into the centre of the cake in a square formation, just smaller than the size of the smaller cake, then put two in the middle. On the day, place the smaller cake on top of the larger one, then fill around the edge of the large cake and the top of the small cake with the berries, finishing with the frosted redcurrants. Dust with icing sugar.
  • CHOCOLATE MODELLING PASTE: Melt the chocolate in a bowl set over a pan of barely simmering water, then leave to cool for a few mins. Heat the glucose gently in a pan, then tip into a large bowl. Gradually beat the chocolate into the glucose, beating to a thick paste that leaves the sides of the bowl clean. Place in a polythene bag and leave for about an hour until set firm.
  • To use, knead lightly until slightly softened. Microwave on Defrost for 10-15 secs if really firm, then use as desired. (Takes 10 minutes to prepare, 10 minutes to cook and makes about 1.8kg)

6 ounces pitted cherries, undrained
½ cup blueberries
½ cup blackberries
½ cup raspberries
1 orange, sliced
½ cup sliced fresh strawberries
2 (750 milliliter) bottles red wine
2 cups vodka
1 cup triple sec
ice
1 (32 fluid ounce) bottle club soda

Steps:

  • Combine cherries, blueberries, blackberries, and raspberries in a bowl. Muddle together to release juices.
  • Transfer muddled berries to a punch bowl. Add orange and strawberries. Pour in red wine, vodka, and triple sec; stir to combine. Cover and refrigerate until sangria flavors combine, 8 hours to overnight.
  • Fill a glass with ice and pour in sangria. Top with club soda to taste.

Yield Makes about 5 cups berry purée.

2 cups strawberries, hulled
2 cups raspberries, picked over
2 1/2 cups fresh orange juice
1/2 cup superfine sugar plus additional to taste
1 tablespoon fresh lime juice, or to taste
seltzer water or club soda

Steps:

  • In a blender blend berries, orange juice, 1/2 cup sugar, and lime juice until smooth. Force purée through a fine sieve into a large measuring cup or bowl, pressing hard on solids. Chill purée, covered, until cold and stir in additional sugar.(Purée keeps, covered and chilled, 2 days.)
  • Fill tall glasses with ice and add enough berry purée to fill each glass by three quarters. Top off drinks with seltzer water or club soda and stir well.

Got a great deal on fresh Cranberries at Sam's Club and decided to make a variety of recipes using them. This is a regular made from scratch Whole Berry Cranberry Sauce, but I will also post a lower sugar version. Homemade Cranberry Sauce is one of the easiest recipes you can make. This is my version. I decided to enhance the flavor a bit with added Orange Zest and orange Extract. Taste great, and takes less than 15 minutes to make. Try it and see what you think.
