Perfectly pan seared salmon fillets covered with a bright and zesty orange pan sauce. Quick and easy enough for weeknights yet delicious enough to serve to guests on the weekend. Everyone will love this new twist on salmon!

2 tsp olive oil
4 (6 oz) skinless salmon fillets (1-inch thick),
Salt and freshly ground black pepper
2 cloves garlic (, minced)
2 1/2 tsp minced fresh rosemary
5 Tbsp chicken broth (, divided)
1 1/2 tsp orange zest
2/3 cup fresh orange juice
1 Tbsp fresh lemon juice
1 1/2 Tbsp honey
2 1/2 tsp cornstarch

Steps:

  • Heat olive oil in a large non-stick saute pan or skillet over medium-high heat.
  • Season both sides of salmon with salt and pepper.
  • Add salmon and to pan and cooked until browned on both sides and cooked through, about 3 - 4 minutes per side. Transfer salmon to a plate while leaving oil in pan.
  • Add garlic and rosemary to pan and saute 20 seconds, then add 1/4 cup chicken broth and simmer until mostly reduced.
  • Stir in orange zest, orange juice, lemon juice and honey. In a small bowl whisk together remaining 1 Tbsp chicken broth with cornstarch.
  • Pour into pan, season sauce with salt and pepper to taste then bring to a boil and allow to boil 1 minute, stirring constantly.
  • Return salmon to pan, spoon sauce over salmon.

6 (4 ounce) boneless skinless salmon fillet, cut 1 inch thick
1/4 cup frozen orange juice concentrate, thawed
3 tablespoons olive oil or 3 tablespoons cooking oil
2 teaspoons crushed basil
2 tablespoons water
1 teaspoon dried crushed tarragon
1 tablespoon Worcestershire sauce
2 cloves minced garlic

Steps:

  • Spray grill with vegetable spray before starting up grill.
  • Heat grill.
  • While grill is heating, mix together all ingredients except salmon in a bowl; blend well.
  • Pour marinate into a zip-lock bag along with thawed salmon fillets.
  • Marinate for 1/2 hour.
  • Place salmon on grill and cook for 8 to 12 minutes or until salmon begins to flake with a fork.
  • Brush marinate on salmon while grilling.

4 teaspoons grated orange zest
4 teaspoons balsamic vinegar

1 teaspoon cornstarch
1 cup orange juice

1 teaspoon balsamic vinegar
1/4 teaspoon salt

Steps:

  • Preheat oven to 425°. Place salmon in a greased 15x10x1-in. baking pan. In a small bowl, mix orange zest, vinegar, honey and salt; spread over fillets., Roast 15-18 minutes or until fish just begins to flake easily with a fork. 1 teaspoon balsamic vinegar
1 teaspoon honey
1/4 teaspoon salt
2 salmon fillets (6 ounces each), skin removed
DIPPING SAUCE:

1 tablespoon balsamic vinegar
1/2 teaspoon honey
Dash salt
Sliced green onions and orange slices, optional

  • In a small bowl, combine the zest, vinegar, honey and salt. Spread over salmon. Tuck any thin parts of salmon under fillets for even cooking. 1/4 cup butter, melted
1 tablespoon orange juice
2 teaspoons finely chopped fresh basil
2 teaspoons freshly grated orange rind
1 1/2 teaspoons garlic pepper seasoning
1 1/2 lbs fresh salmon, cut into 4 pieces
1/4 cup sliced almonds, toasted

Steps:

  • Heat gas grill on medium-high or charcoal grill until coals are ash white.
  • Combine butter, orange juice, basil and orange peel in small bowl; reserve 2 tablespoons butter mixture. Brush remaining butter mixture onto fish; sprinkle with garlic pepper.
  • Place fish onto grill. Grill, turning once, until fish reaches at least 145* or edges flake easily with fork (10 to 12 minutes).
  • To serve, drizzle fish with reserved butter mixture. Sprinkle with almonds and basil leaves if desired.
