2 slices toast, preferably home made bread
1 (100 g) can sardines, in spring water
2 teaspoons vinegar, white
pepper
1 tomatoes, sliced
2 teaspoons mayonnaise

Steps:

  • Drain the sardines and mash well in a bowl, add the vinegar and pepper and mix well.
  • Divide into half and add to each piece of the toast, cover the top with sliced tomatoes and add some mayonnaise over the tomatoes.

This recipe is a no-cook, simply slice and serve way to enjoy meaty, plump sardine fillets in a tin. Perfect for a small gathering, the fillets get served over a bed of cucumber, lettuce, red onion and dill for freshness. Rye bread is also sauced with creme fraiche and yellow mustard for subtle tanginess that complements the oily, rich fillets.

1 tablespoon crème fraiche
1 teaspoon yellow mustard
2 slices rye bread
Persian cucumber, thinly sliced
Bibb lettuce leaves
Tinned sardine fillets, packed in oil
Thinly sliced red onion rings
Flaky salt, for sprinkling
Chopped fresh dill

Steps:

  • Combine the crème fraîche and mustard, then spread on 1 side of each slice of bread. Top each bread slice with some cucumber slices, bibb lettuce, sardine fillets drizzled with oil from the tin and a few red onion rings. Sprinkle with flaky salt and chopped dill.

With their saline flavor and buttery texture, all sardines need is some good bread and a little crunchy onion to set them off.

4 thick slices crusty sourdough bread
1 garlic clove, halved
Softened butter, as needed
1 large ripe tomato, thinly sliced
1 can sardines (6 to 7 ounces), deboned if you like
1/4 small sweet or red onion, thinly sliced
Extra-virgin olive oil, for drizzling
Fresh lemon juice, to taste
Flaky sea salt
Coarsely ground black pepper
Fresh basil leaves, torn (optional)

Steps:

  • Toast the bread under a broiler (on both sides) or in the toaster.
  • While the toast is still warm, immediately rub it (aggressively!) with the cut side of the garlic clove, then spread toast generously with butter. Top butter with tomato slices and lightly salt them.
  • Top tomatoes with sardines and then onion slices. Drizzle with olive oil and lemon juice, then season with more salt and pepper. Garnish with basil if you like and serve immediately.

2 seven-grain bread or 2 slices jewish rye bread, sliced thick
2 garlic cloves
2 ripe tomatoes
8 1/2 ounces sardines (a good quality packed in olive-oil)
1/4 cup thinly sliced red onion
rocket

Steps:

  • Toast the bread.
  • Cut the garlic cloves in half and rub the cut side over the surface.
  • Halve the tomatoes and squeeze and rub the flesh over the bread.
  • Top with rocket, sardines, and onions or top with sardines & onions & then with rocket.
  • Serve with an ice cold beer.
