SAUSAGE O'PATTIES

1 small Idaho potato, peeled
1 small onion, coarsely chopped, about 1/3 cup
3/4 pound ground pork
A few sprigs fresh parsley
1 teaspoon ground thyme, 1/3 palm full
Salt and pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan

Steps:

  • Grate the potato onto a cutting board, salt it, then transfer to a paper towel lined bowl or plate to drain.
  • Place potato, onion, pork, parsley, thyme, salt and pepper in the food processor and pulse grind to form a sausage mixture. Heat a large nonstick skillet over medium heat with extra-virgin olive oil. When oil is hot, form 8 potato-sausage patties 3 inches wide, 1/2-inch thick, and set into skillet. Cook patties 6 to 7 minutes on each side until they are deeply golden brown in color.

Grilled Sweet and Hot Sausage Hoagies with Grilled Onion Marmalade and Red Peppers image

3 red onions, sliced in half
3 tablespoons olive oil
Salt and freshly ground pepper
1 clove garlic, finely chopped
1 small jalapeno pepper, finely diced
1 cup red wine vinegar
1/4 cup creme de cassis
1/4 cup grenadine
1/4 cup red wine
1/4 coarsely chopped parsley
2 red peppers, grilled, quartered and seeded
1 pound hot Italian sausage, sliced in half, vertically, then quartered
1 pound sweet Italian sausage, sliced in half, vertically, then quartered
4 hoagie rolls

Steps:

  • Preheat grill. Brush the onions with 1 tablespoon of the olive oil and season with salt and pepper and grill until lightly brown. Remove from the grill and slice thinly. Heat the remaining olive oil in a medium saucepan over medium heat. Add the onions, garlic, and jalapeno and cook for 1 minute. Add the vinegar, cassis, grenadine, red wine and reduce until the liquid has almost evaporated. Remove from heat, add the parsley and salt and pepper to taste. Grill sausages. Serve at room temperature. Each sandwich gets sausage, red pepper and marmalade on a hoagie.

This is one of the greatest comfort food sandwiches and one I can make most times I'm craving (like right now) as I nearly always have some frozen meatballs on hand (I use Recipe #59573).

1 hoagie roll, toasted lightly and split lengthwise, but not all the way through
1/4 cup shredded mozzarella cheese
1/4 cup shredded provolone cheese
5 -6 precooked meatballs (heated through)
1/2 cup homemade marinara sauce, heated through (or bottled Italian sauce, but homemade MAKES IT!)
1 teaspoon grated parmesan cheese
1 dash dried oregano
1 dash dried basil

Steps:

  • Preheat oven to 350F and lightly toast hoagie roll. (A toaster oven is ideal for this, if you have one).
  • Sprinkle both cheeses in the bottom of the hoagie roll, holding back about 1 tablespoonful for the top of the roll.
  • Place the meatballs down the centre of the roll and ladle hot marinara sauce on top.
  • Sprinkle tablespoonful of reserved shredded cheese and the parmesan cheese over top. Rub some dried oregano and basil between your fingers and sprinkle over top.
  • Put meatball sub in an oven-safe dish and return to oven for a couple of minutes to heat through and melt the cheeses. Cool for a minute before tucking in .
  • Place a large napkin around your neck, take a step back and take a big bite. Tastes good, yes?

1/4 pound bulk pork sausage
2 tablespoons chopped onion
2 tablespoons chopped sweet red pepper
1/4 cup sour cream
3 eggs, separated
3 tablespoons milk
1/4 teaspoon salt
1/4 teaspoon baking powder
1/8 teaspoon pepper
1 tablespoon butter

Steps:

  • Crumble the sausage into a small microwave-safe dish; add onion and red pepper. Cover and microwave on high for 2 minutes; drain. Stir in sour cream; set aside., In a small bowl, whisk the egg yolks, milk, salt, baking powder and pepper. In a large bowl, beat egg whites until stiff peaks form. Gently fold into egg yolk mixture. , Place the butter in a greased 9-in. microwave-safe pie plate. Microwave on high for 30 seconds. , Pour egg mixture into plate. Microwave, uncovered, at 50% power for 3-5 minutes or until partially set. Lift edges, letting uncooked portion flow underneath. Cook at 50% power 2-3 minutes longer or until eggs are set. Spoon sausage mixture over one side; fold omelet over filling.

Ooey-Gooey Sandwich image

The name says it all. And the thicker you spread the mixture the more ooey and gooey it gets, which is my own personal preference. This makes for a nice picnic or in my case a potluck in which everyone enjoyed. The spread doesn't have to be eaten all at once, so refrigerate whatever is leftover or want for later on.

1/2 cup strawberry jam
1/4 cup sugar-free chocolate syrup
1 1/2 tablespoons Splenda granular, sugar substitute
1 large banana, mashed
2 tablespoons liquid honey
12 slices whole wheat bread
6 slices tomatoes (optional)

Steps:

  • In a medium bowl mix everything, except the bread and tomatoes together.
