FRENCH ONION MEAT LOAF

3 eggs
1 can (10-1/2 ounces) condensed French onion soup, undiluted
1 package (6 ounces) crushed beef-flavored stuffing mix
2 pounds lean ground beef

Steps:

  • In a large bowl, combine the eggs, soup and contents of stuffing package; mix well. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13x9-in. baking pan. Bake, uncovered, at 350° for 1 hour or until meat is no longer pink and a thermometer reads 160°. Let stand 10 minutes before slicing.

3/4 cup quick-cooking oats
1/2 cup ketchup
1 envelope onion soup mix
2 pounds ground beef

Steps:

  • Cut three 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 3-qt. slow cooker. Coat strips with cooking spray. , In a large bowl, combine eggs, oats, ketchup and soup mix. Crumble beef over mixture and mix well. Shape into a loaf. Place loaf in the center of the strips. Cover and cook on low for 5-6 hours or until a thermometer reads 160°. , Using foil strips as handles, remove meat loaf to a platter.

1 tablespoon canola oil
1 large onion, finely chopped
2 large carrots, finely chopped
1 celery rib, finely chopped
2 garlic cloves, minced
1 1/2 cups panko bread crumbs
4 large eggs
2 tablespoons Dijon mustard
2 tablespoons ketchup
2 tablespoons Worcestershire sauce
1 teaspoon Tabasco
Kosher salt and freshly ground black pepper
3 pounds ground beef chuck
1 pound ground pork
1/2 pound Monterey Jack cheese, cut into 1/2-inch cubes
Creamy Onion Gravy
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 large white onions, thinly sliced (about 6 cups)
1/4 cup all-purpose flour
1 quart chicken stock or low-sodium broth
1 cup heavy cream
Salt and freshly ground black pepper

Steps:

  • Meat Loaf 1.Preheat the oven to 400°. In a medium skillet, heat the oil. Add the onion, carrots, celery and garlic and cook over moderate heat, stirring occasionally, until softened, about 8 minutes. Scrape the mixture into a very large bowl and let cool. Add the panko, eggs, mustard, ketchup, Worcestershire sauce, Tabasco, 1 1/2 tablespoons of salt and 1 teaspoon of pepper and stir to form a paste. Using your hands, work in the ground meats and cheese until combined. 2.Line a large roasting pan with parchment paper. Firmly pat the meat mixture into 2 loaves, about 10 inches long. Arrange the loaves 3 inches apart on the parchment and roast in the lower third of the oven for about 1 hour, until lightly browned and an instant-read thermometer inserted in the center of the loaves registers 150°. Let the meat loaves rest for 15 minutes, then cut into thick slices and serve with the Creamy Onion Gravy. Creamy Onion Gravy 1.In a large saucepan, melt the butter in the olive oil. Add the sliced white onions and stir to coat. Cover and cook over moderate heat until the onions are very soft but not browned, 10 to 12 minutes. Stir in the flour and cook for about 2 minutes. Add the chicken stock and cook, whisking frequently, until the gravy is thickened, 7 to 8 minutes. Stir in the heavy cream and simmer the onion gravy over moderate heat for about 5 minutes. 2.Transfer the onion gravy to a blender and puree until smooth. Season with salt and black pepper. Return the onion gravy to the saucepan and simmer until it is reduced to 5 cups, about 5 minutes.

1 (10 1/2 ounce) can condensed tomato soup
1 1/2 lbs ground beef
1 (2 7/8 ounce) can French-fried onions
1 egg, beaten
1 tablespoon Worcestershire sauce
6 small potatoes, cut into quarters
1 tablespoon salt

Steps:

  • Thoroughly mix ½ cup soup, beef, ½ can onions, egg and Worcestershire in a large bowl.
  • Place the mixture in a 13 x 9 x 2-inch baking pan and firmly shape into an 8 x 4-inch loaf.
  • Spoon the remaining soup over the meat load.
  • Arrange the potatoes around the meat loaf & sprinkle with salt.
  • Bake at 400 degrees F for 1 hour or until the meat load is cooked through. Stir the potatoes.
  • Sprinkle the remaining onions over the meat load and bake for 3 minutes or until the onions are golden.

Turkey Meat Loaf
juice from 1 large POM Wonderful Pomegranate* or 1/2 cup POM Wonderful 100% Pomegranate Juice
2 lbs. ground turkey
1 cup fresh breadcrumbs
1 cup caramelized onions, chopped (see instructions below)
2 garlic cloves, minced
1 teaspoon ground sage
2 large eggs
3 tablespoons grated Parmesan cheese
3 tablespoons soy sauce
1 tablespoon Worcestershire sauce
Caramelized Onions (can be prepared ahead; should yield about 1 cup)
1 lb. onions, peeled and cut into 1/4-inch slices, 2 1/2 cups
1 tablespoon butter
1 teaspoon vegetable oil
1 teaspoon light brown sugar
salt and pepper to taste
POM Sauce
1/2 cup arils from 1 large POM Wonderful Pomegranate
1/2 cup bottled ketchup
1 tablespoon light brown sugar
2 tablespoons balsamic vinegar

Steps:

  • Caramelized Onions: 1. Heat butter and vegetable oil over high heat until foamy and hot. 2. Add onions and stir to coat. Lower heat and cook; stir until onions are browned and soft, about 40 minutes. Add brown sugar and cook until brown and caramel colored, about 5 minutes. 3. Add salt and pepper to taste. Turkey Meat Loaf 1. Prepare fresh pomegranate juice.* 2. Preheat oven to 350°F. 3. In a bowl mix turkey, breadcrumbs, pomegranate juice, caramelized onions with all the pan juices, minced garlic, sage, eggs, Parmesan cheese, soy sauce and Worcestershire sauce. 4. Mix well using hands and form into a 9 x 5 loaf. 5. Place in a prepared loaf pan. 6. Bake in a preheated oven for about 1 1/2 hours. 7. Serve with 1 tablespoon of pomegranate sauce. POM Sauce: 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/2 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) 2. Mix ingredients together and heat to dissolve sugar. Serve on cooked turkey meat loaf. * For 1 cup of juice, cut 2-3 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.

2 tablespoons olive oil
1 1/4 pounds red onions, chopped
4 garlic cloves, chopped
1 cup ketchup
1/2 pound ground pork
1/2 pound ground veal
1/2 pound lean ground beef
1 1/2 cups fresh breadcrumbs made from white bread (about 3 slices)
1 5.5-ounce can vegetable juice
1/2 cup finely chopped fresh parsley
1 1/2 teaspoons salt
3/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 350°F. Heat oil in heavy large skillet over medium-high heat. Add onions and sauté until just tender, about 6 minutes. Add garlic; sauté 1 minute. Transfer onion mixture to large bowl. Add 1/2 cup ketchup and all remaining ingredients; mix just until blended. Shape mixture into 9x4-inch loaf on large baking sheet; spread remaining 1/2 cup ketchup over top and sides.
  • Bake meat loaf until thermometer inserted into center registers 160°F, about 1 hour. Let stand 10 minutes. Transfer to platter and serve.
