2 tablespoons butter
2 tablespoons flour
1 cup milk
1/2 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chicken bullion
1 teaspoon parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup water
1/2 cup sour cream
1 cup chicken (cooked)
3 cups rice (cooked)
Carrots
Olives
Cheese
Pineapple
Lo Mein Noodles
Peas
Green Onions

Steps:

  • In a medium skillet, heat butter until melted. Stir in flour and cook for 2-3 minutes.
  • Add milk, onion powder, garlic powder, bullion, salt, pepper, and parsley, stirring constantly.
  • When the sauce is slightly thickened, add water and sour cream. Bring to a simmer and add chicken.
  • Simmer for 5 minutes.
  • Serve over rice and with toppings of your choice.

2/3 cup sour cream
3 thinly sliced green onions
2 tablespoons oil-packed sun-dried tomatoes, chopped
2 tablespoons minced fresh cilantro
2-1/2 teaspoons Tex-Mex seasoning, divided
1 package (3-1/2 cups) refrigerated shredded hash brown potatoes
1/2 cup panko bread crumbs
1/3 cup shredded Mexican cheese blend
1/4 teaspoon salt
5 tablespoons canola oil, divided
6 large eggs
1/2 cup salsa
4 cooked bacon strips, coarsely chopped
Finely chopped green onions, optional

Steps:

  • Combine sour cream, green onions, sun-dried tomatoes, cilantro, and 1/2 teaspoon Tex-Mex seasoning; set aside., Squeeze hash brown potatoes dry with paper towel to remove excess liquid. In a large bowl, combine potatoes, bread crumbs, cheese, salt and remaining Tex-Mex seasoning., On an electric griddle, heat 3 tablespoons oil over medium-high heat. Drop potato mixture by 2/3 cupfuls into oil; press to flatten slightly. Fry, adding oil as needed, until crisp and golden brown, 5-7 minutes. Drain on paper towels; keep warm., On same griddle, heat remaining oil over medium heat. Break eggs, one at a time, onto griddle. Reduce heat; cook until whites are set and yolks have begun to thicken. Flip eggs if desired; cook to desired doneness., To assemble, top each potato patty with an egg, salsa, bacon and sour cream mixture. If desired, sprinkle with green onions.

2 cups kidney beans, cooked
1 teaspoon salt
2 tablespoons chili powder
1 teaspoon ground black pepper
1 (14.5 ounce) package corn tortilla chips
1 head iceberg lettuce - rinsed, dried, and shredded
2 large tomatoes, chopped
1 green bell pepper, chopped
1 onion, chopped
1 (10 ounce) can chopped black olives
1 carrot, shredded
1 cup shredded Cheddar cheese
½ cup sour cream
1 cup salsa

Steps:

  • In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.
  • To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese. Top with salsa and sour cream.

1/4 cup cornstarch
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1 teaspoon seasoning salt
3/4 cup flat beer
2 eggs, lightly beaten
1 large onion, cut into slivers

Steps:

  • Combine dry ingredients.
  • Add remaining ingredients except for onions, and mix well.
  • Stir onions into batter.
  • Using heat resistant metal tongs to place onion stacks into hot oil.
  • Cook 3 minutes or until done.

HAYSTACK ONIONS

Super-thin, crispy and light onions! Made these last night and everyone couldn't get enough of them! This recipe came with a kitchen gadget I bought at Birmingham's HUGE Christmas Village craft show. It's called a "Country Cutter" and was made by a man from El Dorado, AR if anyone near there is interested in getting one. It looks like one of those apple peelers with a crank handle, and it cuts onions, potatoes, etc. into one long very thin spiral. You could probably get similiar results using a mandoline and slicing your onions super thin.

1 egg, beaten
1/2 cup milk
2 sweet onions, thinly sliced (I like vidalias)
2 cups all-purpose flour
2 teaspoons seasoning salt
oil (for frying)

Steps:

  • Make egg wash by mixing egg and milk.
  • Put sliced onions in a bowl and pour egg wash over them. Turn onion slices so that they're all thoroughly coated, then pour onions into a colander to drain.
  • Put flour and seasoning salt in a plastic zip-top bag. Add onions and shake to coat.
  • Slowly add onions to hot cooking oil in batches. They fry up quickly, so make sure not to burn them.
  • My DH says these are so good they're "no ketchup needed." I like eating them with ranch dressing.
