WILD ONION CLAM CHOWDER

I'm not sure where this recipe came from but I started making this for my grandfather when I was 12 yrs old. My grandfather will be turning 92 this year and still enjoys my clam chowder.

1 cup scallion, chopped
1 cup onion, chopped
4 tablespoons butter
4 tablespoons flour
1 quart milk
2 (8 ounce) cans minced clams (and juice)
1 potato, diced
1 teaspoon salt
1/8 teaspoon pepper
1 dash celery salt

Steps:

  • In a large pot, saute' scallions and onions in butter; about 5 minutes.
  • Add diced potato, then the flour; blend well.
  • Add milk.
  • Heat to almost boiling; stirring constantly.
  • Add clams with juice, salt, pepper, and celery salt.
  • Continue to cook another 10 minutes.

2 cups onions, finely chopped in food processor
2 teaspoons salt
3 cups boiling water
2 cups milk
2 tablespoons butter, softened
2 tablespoons flour
fresh ground pepper

Steps:

  • Boil onions in salted water for 30 minutes. Remove from heat, add milk, and return almost to boiling.
  • Blend butter and flour; stir into soup; cook and stir until slightly thickened (about 5 minutes).

3 lbs leeks
1 tablespoon butter
2 tablespoons all-purpose flour
1/2 teaspoon white pepper
6 cups low sodium chicken broth
3 cups green onions, thinly sliced
3 tablespoons lemon juice
salt
thin lemon slice
sour cream

Steps:

  • Trim ends and all but 3 inches of green tops from leeks; remove tough outer leaves.
  • Split leeks lengthwise; rinse well, then thinly slice crosswise.
  • Melt butter in a 5-6 quart pan over medium-high heat.
  • Add leeks; cook, stirring often, until soft (8-10 minutes).
  • Stir in flour and white pepper; then stir in broth.
  • Bring to a boil over high heat, stirring, add onions; cook, stirring, just until onions turn bright green (2 minutes).
  • Stir in lemon juice and season to taste with salt.
  • To serve, ladle soup into bowls.
  • Garnish each serving with lemon slices and a dollop of sour cream.
  • Makes 6 servings.
