Vegetable Omelette image

This vegetable omelette is both healthy and delicious. It's super easy to make and you can prep the vegetables ahead of time. It's like enjoying a garden salad in an omelette. It's packed with the nutrition you need to keep going all morning!

1 tablespoon olive oil
½ cup sliced baby bella or white mushrooms
½ teaspoon minced garlic
¼ cup sliced zucchini
½ cup cherry tomatoes (Cut in half.)
¼ cup chopped bell pepper
4 cups fresh spinach
2 tablespoons butter
6 large eggs (Beaten)
salt and pepper (You can vary this according to your taste. I usually do ½ teaspoon salt and ¼ teaspoon pepper per omelette.)
¼ cup sliced black olives
1 teaspoon chopped fresh basil (You can substitute ½ teaspoon of dried basil.)
2 tablespoons grated Parmesan cheese

Steps:

  • Add olive oil to medium non-stick skillet over medium heat. Allow oil to heat for 2-3 minutes.
  • Add sliced mushroom and garlic and cook for 3-4 minutes, stirring frequently.
  • Add zucchini, tomatoes and bell pepper. Saute until soft but not mushy, about 3 minutes.
  • Add spinach and cook until spinach cooks down and wilts, about 3-4 minutes.Remove vegetable mixture to a bowl and set aside. Wipe skillet with a paper towel.
  • Add eggs and salt and pepper to a blender and blend for about 1 minute. Alternatively, you can add the eggs and salt and pepper to a medium bowl and whisk vigorously for 1-2 minutes. Melt 1 tablespoon butter in skillet over medium heat.
  • Reduce heat to low-medium. Add half of the egg mixture and cook until warmed and the edges are beginning to set, about 30 seconds. Using a heatproof spatula, lift the cooked edges and gently push them toward the center. At the same time, lift and tilt the pan to allow the liquid egg on top to flow underneath, then cook for 30 seconds longer. Repeat as necessary along the perimeter until no liquid egg remains.
  • When the eggs are almost set but still moist on top, sprinkle half of the vegetable mixture on one side of the omelette.
  • Sprinkle ½ of cheese, basil and black olives on top of the vegetable mixture. Cook for 30 seconds to 1 minute longer.
  • Using a wide spatula, fold the untopped half of the omelette over the filled half. Allow to cook about 30 seconds longer to allow the cheese to melt and the omelette to meld together. Slide the omelette onto a serving plate.Repeat steps 6-9 for the second omelette. Serve warm with chopped basil as a garnish, if desired.

2 tablespoons butter
1 small onion, chopped
1 green bell pepper, chopped
4 eggs
2 tablespoons milk
¾ teaspoon salt
⅛ teaspoon freshly ground black pepper
2 ounces shredded Swiss cheese

Steps:

  • Melt one tablespoon butter in a medium skillet over medium heat. Place onion and bell pepper inside of the skillet. Cook for 4 to 5 minutes stirring occasionally until vegetables are just tender.
  • While the vegetables are cooking beat the eggs with the milk, 1/2 teaspoon salt and pepper.
  • Shred the cheese into a small bowl and set it aside.
  • Remove the vegetables from heat, transfer them to another bowl and sprinkle the remaining 1/4 teaspoon salt over them.
  • Melt the remaining 1 tablespoon butter (in the skillet just used to cook the vegetables) over medium heat. Coat the skillet with the butter. When the butter is bubbly add the egg mixture and cook the egg for 2 minutes or until the eggs begin to set on the bottom of the pan. Gently lift the edges of the omelet with a spatula to let the uncooked part of the eggs flow toward the edges and cook. Continue cooking for 2 to 3 minutes or until the center of the omelet starts to look dry.
  • Sprinkle the cheese over the omelet and spoon the vegetable mixture into the center of the omelet. Using a spatula gently fold one edge of the omelet over the vegetables. Let the omelet cook for another two minutes or until the cheese melts to your desired consistency. Slide the omelet out of the skillet and onto a plate. Cut in half and serve.

1/4 cup water
1/4 teaspoon cream of tartar
2 eggs
1/4 teaspoon salt

Fold in the whites., In a 10-in. ovenproof skillet coated with cooking spray, melt butter. Pour egg mixture into skillet. Cook for 5 minutes over medium heat or until puffed and lightly browned on the bottom. Salt and freshly ground pepper to taste
2 to 3 teaspoons milk
2 teaspoons unsalted butter or extra virgin olive oil
1/3 cup Roasted Winter Vegetable Medley
1 tablespoon crumbled feta

Steps:

  • Break eggs into a bowl and beat with a fork or a whisk until frothy. Whisk in salt and pepper to taste and 2 to 3 teaspoons milk.
  • Heat an 8-inch nonstick omelet pan over medium-high heat. Add 2 teaspoons unsalted butter or olive oil. When butter stops foaming or oil feels hot when you hold your hand above it, pour eggs right into the middle of the pan, scraping every last bit into the pan with a rubber spatula. Swirl pan to distribute eggs evenly over the surface. Shake pan gently, tilting it slightly with one hand while lifting up edges of the omelet with the spatula in your other hand, to let eggs run underneath during first few minutes of cooking.
  • As soon as eggs are set on the bottom, spoon roasted vegetables over the middle of the egg "pancake" and sprinkle feta over vegetables. Jerk pan quickly away from you then back towards you so that the omelet folds over onto itself. If you don't like your omelet runny in the middle, jerk pan again so that omelet folds over once more. Cook for 30 seconds to a minute longer. Tilt pan and roll omelet out onto a plate.

2 tablespoons chopped red bell pepper
1 tablespoon chopped onion
1/4 cup sliced mushrooms
1 cup loosely packed fresh baby spinach leaves, rinsed
1/2 cup fat-free egg product or 2 eggs, beaten
1 tablespoon water
Dash salt
Dash pepper
1 tablespoon shredded reduced-fat Cheddar cheese

Steps:

  • In 8-inch nonstick skillet, heat oil over medium-high heat. Add bell pepper, onion and mushrooms to oil. Cook 2 minutes, stirring frequently, until onion is tender. Stir in spinach; continue cooking and stirring just until spinach wilts. Remove vegetables from pan to small bowl.
  • In medium bowl, beat egg product, water, salt and pepper with fork or whisk until well mixed. Reheat same skillet over medium-high heat. Quickly pour egg mixture into pan. While sliding pan back and forth rapidly over heat, quickly stir with spatula to spread eggs continuously over bottom of pan as they thicken. Let stand over heat a few seconds to lightly brown bottom of omelet. Do not overcook; omelet will continue to cook after folding.
  • Place cooked vegetable mixture over half of omelet; top with cheese. With spatula, fold other half of omelet over vegetables. Gently slide out of pan onto plate. Serve immediately.

1 tablespoon sunflower oil
1 carrot, shredded
120 g fresh shiitake mushrooms
100 g fresh bean sprouts
3 spring onions, thinly sliced
1 teaspoon gingerroot, peeled and grated
1 garlic clove, grated
3 tablespoons soy sauce
3 eggs
1 teaspoon sunflower oil

Steps:

  • Remove the stems from the mushrooms and slice finely.
  • Heat the tbsp oil and fry the carrot and mushroom for 2 minutes.
  • Add ginger, garlic, onion and beansprouts and cook for another 2 minutes.
  • Season with the soy and set aside.
  • Beat together the eggs with the 1 tsp oil.
  • Heat a medium frying pan and add a little egg (enough to just cover the bottom).
  • Swirl in the pan and then flip when the edges become golden.
  • Remove from pan and repeat until you have 6 pancakes.
  • Cut each pancake in half.
  • In the centre of the half moon place a spoonful of vegetable filling.
  • Roll up so filling is secure, tucking the edges in as you go, repeat for the rest of the pancakes.
  • Steam the rolls briefly to warm up (or microwave briefly) and serve.
