ALMOST-FAMOUS BREADSTICKS (OLIVE GARDEN COPYCAT)

Since Olive Garden won't give out the recipe, here's the closest one to the real thing! This recipe calls for a Kitchen-Aid mixer with the paddle attachment, but I'm sure you could use something similar. From Food Network magazine.

1 (1/4 ounce) package active dry yeast
4 1/4 cups all-purpose flour, plus more for dusting
2 tablespoons unsalted butter, softened
2 tablespoons sugar
1 tablespoon fine salt
3 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
1/8-1/4 teaspoon garlic powder
1 pinch dried oregano

Steps:

  • Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
  • Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch pieces. Knead each piece slightly and shape into a 7-inch long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
  • Preheat the oven to 400 degrees F.
  • Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt.
  • Bake until slightly golden, about 15 minutes.
  • Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano.
  • Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.
  • Serve warm with salad.

1 1/3 cups water
4 teaspoons light butter (softened)
4 cups flour
2 tablespoons sugar
2 teaspoons salt
2 teaspoons yeast

Steps:

  • Mix all ingredients in bread Machine on dough setting.
  • Then, roll it out into a log and divide it into 16 pieces. (I can normally only get about 12) Roll these pieces into cigar-shaped sticks of bread. Arrange on a baking sheet.
  • Cover, and let rise for 45 minutes.
  • Preheat your oven to 400*F. Use your brush to butter each stick, saving some butter for later. Sprinkle with kosher salt.
  • Cook for 15 minutes. Remove, then brush twice more and add another sprinkling of kosher salt and a light sprinkle of garlic powder. Tada! Olive Garden breadsticks.
  • For Pizza Hut:.
  • mix: 1/3 cup of parmesan cheese 1 tsp ground black pepper 1 tsp italian seasoning 1/2 tsp garlic powder
  • Then shake these onto your breadsticks to your liking (don't overpower the sticks though) For Cheesesticks Sprinkle shredded mozzarella onto the tops, then pop under the broiler until the cheese bubbles and burns a bit.

I got this recipe from the Internet it is so easy and soooooo good. I let them rise in the oven with just the oven light on then just before they have fininished rising I remove them & preheat the oven. They will keep for a couple of days but I like them fresh fresh. They freeze well

1 loaf frozen bread dough, thawed
light olive oil flavored cooking spray or other vegetable oil cooking spray
2 teaspoons garlic powder (not garlic salt, or more)
2 teaspoons dried oregano, rubbed into a fine powder

Steps:

  • Preheat oven to 375 degrees F.
  • Spray your fingers with a bit of oil and knead the thawed bread dough.
  • Shape the dough 10 cigar sized pieces.
  • Place the breadsticks on a oil sprayed cookie sheet.
  • Let rise in a warm place until doubled in size (up to 2 hours).
  • Lightly spray the top of each breadstick with oil and dust with the garlic powder and Oregano Bake 20-25 minutes or until golden brown.
  • Cool slightly& serve.

1 3/4 c warm water (100 degrees f.)
1 Tbsp active dry yeast (it was less than 2 packets)
4 1/4 c all-purpose flour
2 Tbsp unsalted butter, room temperature
2 Tbsp sugar
1 1/2 tsp salt
3 Tbsp unsalted butter, melted
1/4 tsp fine sea salt
1/4 tsp garlic powder
1/4 tsp dried oregano, crushed in between fingers

Steps:

  • 1. Prepare two baking sheets by lining them with parchment.
  • 2. Place 1/4 cup warm water in the bowl of an electric mixer. Mix in yeast and sugar and allow to stand for 5 minutes until foamy.
  • 3. Stir in the flour, 2 tablespoons room temp. butter, 1 1/2 teaspoons salt, and 1 cup warm water. With the paddle attachment, mix on medium until the dough comes together, adding additional water 1-2 tablespoons at a time.
  • 4. Switch from the paddle attachment to the dough hook and mix for 4 minutes until dough is smooth.
  • 5. Place the dough on a lightly floured surface and cut into 16 pieces. I found it easiest to do this by separating the dough in half, halving it again, and again, etc. until I had 16 pieces. They were more even that way.
  • 6. Roll them into logs about 7 inches long. Place them on the prepared baking sheets about 2 inches apart and cover with a towel.
  • 7. Allow them to rise for 45-60 minutes.
  • 8. In a small bowl, whisk together the fine sea salt, garlic powder, and oregano.
  • 9. Preheat oven to 400 degrees F.
  • 10. Brush each breadstick with half of the melted butter and sprinkle half of the seasoning mixture on the breadsticks.
  • 11. Bake for 15 minutes.
  • 12. Brush each breadstick again with melted butter and sprinkle with remaining seasoning. Serve warm.

These are absolutely the best garlic breadsticks I've ever had. I made them for the first time tonight, and my husband ate 4 of them. They pair well with just about anything; soups, salads, pasta - use your imagination! Recipe adapted from the recipe at readableeatables.blogspot.com

Number Of Ingredients 12

DOUGH
1 1/2 c warm water (appx 110 degrees)
2 Tbsp sugar
2 envelopes (1/4 oz each) active dry yeast
2 Tbsp butter, softened
3 1/2-5 c bread flour (ap will work if you don't have bread flour) - amount depends on humidity & temperature
1 Tbsp (yes, tablespoon) salt
TOPPING
3 Tbsp butter, divided, melted
salt
1 tsp garlic powder
grated parmesan cheese

Steps:

  • 1. Add sugar into the warm water in a bowl or measuring cup and stir well. Sprinkle yeast on top and quickly stir. Let set for about 10 minutes until yeast is foamy.
  • 2. Pour yeast mixture into the bowl of an electric mixer fitted with the paddle attachment. Add the butter and 2 cups of the flour. Mix on low, then add in the salt and mix again.
  • 3. Remove the paddle attachment and attach the dough hook. Add flour, 1/2 a cup at a time, until the dough no longer sticks to the side of the bowl. It should feel slightly firm and not stick to your finger when touched. Mix the dough for about 5 minutes on low once it reaches this point.
  • 4. Spray the inside of a bowl with non-stick spray. Transfer the dough from the mixer bowl into the sprayed bowl. Flip over once to coat the top. Cover and let rise until doubled in size; about an hour. Punch dough down and turn out onto a lightly floured surface. Roll out into a rectangle.
  • 5. Spray a knife or pizza cutter with non-stick spray. Cut the dough into 16-18 equal portions.
  • 6. Set the oven on "warm", or 170 degrees. Meanwhile, with lightly floured hands, roll each of the divided portions into a ball, then roll into a breadstick shape, about 6-8 inches long. Divide breadsticks onto 2 greased baking sheets, about 2 inches apart.
  • 7. Place in the warmed oven for 15-20 minutes until the breasticks have doubled in size. Remove and set the oven temperature to 375. While it's preheating, melt 1 1/2 tablespoons of butter and brush over the unbaked breadsticks. Sprinkle with salt.
  • 8. Bake for 12-14 minutes, one pan at a time, until they're golden brown. Meanwhile, melt the remaining butter and mix in the garlic powder. Remove baked breadsticks from the oven and brush on the garlic butter. Immediately sprinkle with parmesan cheese. Serve warm from the oven.

  • Divide it into 16 peices.
  • Cover and let rise until doubled about 45 minutes.
  • Preheat your oven to 400 degrees.
  • Melt remaining 2 tsp butter in a bowl and thinly brush the breadsticks once.
  • Bake for 15 minutes or until golden brown.
  • Brush with butter again and top with garlic powder to your liking.
