Cheesy bacon dinner rolls that are both tasty and filling and are made quickly in just 40 minutes!

12 purchased round soft smooth-topped dinner rolls (about 1 to 1 1/2 oz each)*
8 slices bacon
1/4 cup chopped ripe olives, drained (from 4 1/4-oz can)
1/4 cup finely chopped pimiento-stuffed olives (about 16 olives)
4 medium green onions, finely chopped (1/4 cup)
1/4 cup mayonnaise or salad dressing
1 cup finely shredded Cheddar cheese (4 oz)

Steps:

  • Heat oven to 350°F. In each roll, cut a pocket from the top down to within 1/2 inch from each side, cutting almost to but not through the bottom; set aside.
  • Line bacon rack or microwavable plate with microwavable paper towels; place bacon on rack. Cover with paper towel. Microwave on High 4 to 6 minutes or until bacon is crisp. Crumble bacon when it is cool enough to handle.
  • In small bowl, mix bacon, olives, onions, mayonnaise and 1/2 cup of the cheese. Fill each pocket with 1 heaping tablespoon bacon mixture. On ungreased cookie sheet, place rolls; sprinkle each roll with 2 teaspoons cheese. Bake 14 to 16 minutes or until filling is hot.

These are easy to make, plan ahead the rolled tortillas need to chill for a few hours before slicing, watch the garlic amount adding in too much will overpower all other ingredients, the garlic flavor will intensify with chilling time, I would suggest no more than 2 teaspoons --- Mexi-blend shredded cheese may be used in place of the cheddar, prep time includes chilling time

1 (8 ounce) package cream cheese, softened
1 -2 teaspoon fresh minced garlic
1/3 cup mayonnaise (do not use salad dressing)
2/3 cup pitted green olives, finely chopped
1 (2 1/4 ounce) can pitted black olives, finely chopped
5 -6 green onions, finely chopped
1/2-1 teaspoon fresh ground black pepper (or to taste)
2 cups shredded cheddar cheese (might use more or less)
8 (10 inch) flour tortillas

Steps:

  • Hand-squeeze out as much excess moisture in the olives as possible before chopping, and make certain to chop finely.
  • In a bowl combine cream cheese with garlic, mayonnaise, green and black olives, green onions and black pepper; mix to combine well.
  • Spread a thin layer of the cream cheese mixture over each tortilla, then sprinkle a small amount cheddar cheese over the top of the cream cheese.
  • Roll up each tortilla as tightly as possible.
  • Place each tortilla onto a plate.
  • Cover with plastic wrap and chill for a couple of hours or up to 24 hours (a longer chilling time will only improve on the flavor).
  • Slice each tortilla into about 1-inch pieces.

I was given this recipe at a party a long time ago by the hostess. It is a really easy appetizer to make and always the first one to disappear. Toothpicks are necessary to secure these little roll ups.

1 (1 pound) loaf white bread, crusts trimmed
1 (8 ounce) package cream cheese, softened
1 pound sliced bacon, cut in half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut each slice of white bread in half horizontally. Spread with cream cheese. Tightly roll each piece of bread with half a piece of bacon. The bacon should be on the outside of the bread. Secure with toothpicks.
  • Arrange roll ups in a single layer on a medium baking dish. Bake in the preheated oven 30 minutes, or until bacon is no longer pink and bread is lightly browned. Serve warm.

This quick bread recipe is from the October 1986 issue of Gourmet Magazine. The bread keeps, wrapped in foil and chilled, for up to 5 days.

2 1/2 cups all-purpose flour
2 1/2 tablespoons sugar
2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon dry mustard
1/8 teaspoon cayenne
1/4 cup unsalted butter
1 cup sharp cheddar cheese, grated
1 large egg
1 cup buttermilk
1 teaspoon Worcestershire sauce
5 slices bacon, cooked, drained and crumbled
1 cup black olives, chopped

Steps:

  • Preheat oven to 375°F.
  • In a bowl combine the flour, sugar, baking powder, baking soda, salt, dry mustard and the cayenne. Add the butter and blend the mixture until it resembles meal. Stir in the cheddar cheese gently.
  • In a small bowl whisk together the egg, buttermilk and the Worcestershire sauce; stir the mixture into the flour mixture until it is not quite combined.
  • Add the bacon and olives and stir once again briefly until the dough is just combined.
  • Turn the batter into a well buttered loaf pan and bake the bread for 30 to 40 minutes, or until a tester comes out clean. Let the bread cool in the pan on a rack for 5 minutes, then turn it out onto the rack and let it cool completely.
