2 white onions (thinly sliced)
1/4 cup all-purpose flour
2 tablespoons panko bread crumbs
1 teaspoon salt
1/2 pound bacon (diced)
2 cloves garlic (minced)
2 tablespoon all-purpose flour
1 cup chicken broth
1 cup half and half
1/2 teaspoon black pepper
1/4 teaspoon ground nutmeg
2 pounds frozen green beans (defrosted)

Steps:

  • Preheat oven to 450 degrees F. Lightly grease a baking sheet. In a large mixing bowl, toss sliced onions together with 1/4 cup flour, panko bread crumbs, and salt. Spread out in an even layer on the baking sheet. Bake in the preheated oven for 30 minutes, tossing every 10 minutes.
  • Meanwhile, cook the bacon in a skillet over medium heat until crispy. Do not drain the grease. Add in garlic and saute 30 seconds. Stir in flour until completely dissolved. Pour in chicken broth, half and half, black pepper, and nutmeg. Bring to a boil and let simmer until thickened, about 3 minutes.
  • Defrost your green beans in the microwave, or steam if using fresh. Place green beans into a lightly greased 9x13 pan. Pour bacon mixture over the green beans and toss to coat. Bake in the 450 degree oven for 15 minutes.
  • Remove from the oven and sprinkle the cooked, crisp onions on top. Return to the oven for 5 minutes before serving.

3 (15-oz.) pkg. frozen French-cut green beans, thawed and well drained
½ cup salted butter, divided
1 (8-oz.) pkg. sliced fresh cremini mushrooms, roughly chopped
1 large shallot, chopped
6 tablespoons all-purpose flour
4 cups whole milk
4 ounces Parmesan cheese, shredded (about 1 1⁄2 cups)
2 teaspoons kosher salt
½ teaspoon black pepper
1 (8-oz.) can diced water chestnuts, drained
1 cup crispy fried onions or shallots (about 2 oz.)

Steps:

  • Preheat oven to 350°F. Squeeze green beans lightly in hands to remove water.
  • Heat 2 tablespoons of the butter in a Dutch oven over medium-high. Add mushrooms and shallot, and cook, stirring often, until mixture is deeply browned and caramelized, 8 to 10 minutes. Transfer mixture to a plate, and without wiping out Dutch oven, add remaining 6 tablespoons butter to Dutch oven.
  • Melt butter over medium-high; whisk in flour, and cook, whisking constantly, 1 minute. Gradually add milk, whisking until smooth. Cook, whisking, until thickened and bubbly, about 4 minutes. Remove from heat, and whisk in Parmesan cheese, kosher salt, and black pepper until melted and smooth. Stir in green beans, mushroom mixture, and water chestnuts; spoon into a lightly greased 13- x 9-inch (3-quart) baking dish.
  • Bake in preheated oven until bubbly around edges, 15 minutes. Remove from oven; top with fried onions or shallots. Return to oven; bake until topping is golden brown, 15 minutes.

¼ cup onion, diced
1 cup sour cream
3 (14.5 ounce) cans French style green beans, drained
2 cups shredded Cheddar cheese
½ cup crumbled buttery round crackers
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.

2 medium white onions, thinly sliced
1 ½ lb cremini mushroom, sliced and stemmed
5 cloves garlic, sliced
3 tablespoons all purpose flour
1 cup milk
½ cup heavy cream
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 cup chicken broth, or vegetable broth
½ cup grated parmesan cheese
1 cup fried onion

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • In a large pot of salted boiling water, blanch the green beans for 3 minutes, until tender and bright green. Drain and transfer to a 9x13-inch (23x33 cm) baking dish.
  • Melt 4 tablespoons of butter in a large pan over high heat. Add the onions and cook for 8 minutes, until softened and translucent.
  • Add the mushrooms and cook for 5 minutes, until browned. Add the garlic and cook just until fragrant, about 1 minute.

3 cups vegetable oil
6 large shallots, cut into very thin rounds, rings separated
1 1/2 cups all-purpose flour
Coarse salt and ground pepper
2 pounds green beans, trimmed and halved
1/4 cup (1/2 stick) unsalted butter
1 pound button mushrooms, trimmed and coarsely chopped
14.5 ounces low-sodium chicken broth
1 cup whole milk

Steps:

  • Preheat oven to 425 degrees. In a large skillet, heat oil over medium. Line a baking sheet with paper towels. In a large bowl, toss together shallots and 1 1/4 cups flour until shallots are evenly coated. In batches, shake off excess flour from shallots and fry until golden and crisp, about 5 minutes, adjusting heat if shallots are browning too quickly. With a slotted spoon, transfer to sheet and season with salt. Set aside. (Store in an airtight container at room temperature with a layer of paper towels underneath, up to 2 days.)

2 1/2 pounds haricots verts or French green beans, trimmed and cut into 1-inch pieces
1 pound hen of the woods mushrooms (or cremini, oyster or other mushroom), cut into bite-size pieces
2 large shallots, halved lengthwise and thinly sliced into half-moons
4 garlic cloves, minced
2 tablespoons extra-virgin olive oil
Kosher salt and black pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 quart heavy cream or half-and-half
1 teaspoon Cajun seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon chicken base concentrate (or 1/2 bouillon cube)
1/4 teaspoon ground nutmeg
1 3/4 cups shredded or grated Parmesan
1 cup panko bread crumbs
2 cups store-bought or homemade fried shallots or onions

Steps:

  • Heat oven to 400 degrees. Coat a 9-by-13 baking dish with nonstick cooking spray. On a rimmed sheet pan lined with parchment paper, toss together green beans, mushrooms, sliced shallots, garlic and olive oil; season with salt and pepper to taste then spread evenly on the pan. Roast until the vegetables brown in spots and soften, about 30 minutes, tossing halfway through. (Alternatively, if you want the green beans extra soft, set them on an unlined sheet pan, add 3 tablespoons water, cover with aluminum foil, and cook until the vegetables are slightly firmer than you want in the end result, about 30 to 45 minutes.)
  • Meanwhile, in a large saucepan over medium-low heat, melt the butter, then add the flour. Cook for about 1 to 2 minutes, whisking constantly until it comes together and begins to turn golden in color.
  • Add heavy cream and whisk until it starts to thicken, 6 to 8 minutes. Add the Cajun seasoning, onion and garlic powders, chicken base, nutmeg and 1/2 teaspoon pepper. Whisk to combine, then add 1 1/2 cups Parmesan until melted. Taste and adjust seasonings.
  • When the green beans are cooked, add them to the saucepan, and toss to coat until mixture is thoroughly heated. Transfer green bean mixture to the baking dish.
  • In a medium bowl, combine bread crumbs, fried shallots and the remaining 1/4 cup Parmesan. Spread evenly over the top of the casserole.
  • Set the broiler to high, and broil until brown and bubbly (don't walk away!), about 1 to 2 minutes. Serve hot.
