This is the best toffee I have ever tasted. It is a popular item at the Christmas Farmer's Market here,with just 4 ingredients it's easy to make. We prefer to decrease the cooking time slightly for a softer toffee.

Number Of Ingredients 4

1/4 cup butter
1 (11 ounce) can condensed milk
1/4 cup corn syrup
1 1/4 cups brown sugar, packed

Steps:

  • Grease an 8" cake pan.
  • In a large heavy saucepan, soften the butter.
  • Stir in remaining ingredients.
  • Stirring constantly, bring to a boil over medium high heat.
  • Candy thermometer should reach 260 degrees or hard ball.
  • Stir constantly as it will stick to the pan easily.
  • Pour into pan quickly and cool.
  • You may make a softer toffee by decreasing cooking time slightly.

OLD FASHIONED ENGLISH ALMOND TOFFEE

This is so buttery rich and brittle! Always reminds me of a Heath Bar! Recipe from 1956 Betty Crocker Cookbook

Number Of Ingredients 8

2/3 c butter
1/2 c sugar
1/3 c water
1/2 tsp salt (kosher)
2/3 c almonds, blanched
1/4 tsp soda
1/2 c semi-sweet chocolate pieces (morsals) or 2 - 7/8 ounce milk chocolate bars. can use white chocolate too!
1/2 c pecans, chopped

Steps:

  • 1. Combine in saucepan... Butter, sugar, water and salt. cook over low heat, stirring constantly until it boils. Cook without stirring to 236 degrees or until a little dropped in cold water forms soft ball.
  • 2. Add.. 2/3 Cup blanched almonds Continue cooking to 290 degrees (soft crack stage), stirring constantly. Remove from heat. Mixture changes to a deep caramel color.
  • 3. Stir In... 1/4 tsp soda Turn out onto greased baking sheet, spread to 1/4 inch thickness.
  • 4. Immediately spread with... semi sweet chocolate pieces Spread chocolate over top as it melts
  • 5. Sprinkle with... chopped pecans Cool and then break into piece! Enjoy!!

Yield 2 pounds candy

Number Of Ingredients 4

1 1/2 cups (6 ounces) chopped walnuts or pecans
2 sticks (1 cup) butter
1 1/2 cups brown sugar, packed
4 cubes (8 ounces) chocolate almond bark (or chocolate chips)

Steps:

  • Spread nuts in a buttered 9x13-inch pan. Set aside. Combine butter and brown sugar in a 2-quart microwave-safe bowl. Microwave for 2 minutes at HIGH (100%). Stir until butter and brown sugar are completely dissolved. Microwave again for 7-9 minutes at MEDIUM-HIGH (70%), until mixture reaches 290° (soft crack stage), stirring two times (with a clean spoon each time). Pour syrup mixture over nuts. Microwave almond bark or chips in a 1-quart microwave-safe bowl for 2-3 minutes at MEDIUM-HIGH (70%). Stir. Spread over toffee. Cool and enjoy!
