2/3 cup Land O Lakes® Half & Half
2 tablespoons all-purpose flour
1/4 teaspoon salt
2/3 cup sugar
2/3 cup Land O Lakes® Butter softened
1/2 teaspoon vanilla

Steps:

  • Combine half & half, flour and salt in 1-quart saucepan. Cook over medium heat, stirring constantly, 3-5 minutes or until mixture thickens and comes to a boil. Boil 1 minute. Cover surface with plastic food wrap; cool completely.
  • Beat sugar, butter and vanilla in large bowl at medium speed, scraping bowl often, until creamy. Gradually add cooled flour mixture. Beat at medium speed, scraping bowl often, until light and fluffy.

So this is how you make marshmallows! This tastes good and is very easy and quick to make. I used the whole bottle of syrup which is 2 cups; just add 3 egg whites instead of 2.

1 1/4 cups light corn syrup
2 egg whites
1 teaspoon vanilla extract

Steps:

  • In a 1 quart saucepan over medium heat, heat light corn syrup to boiling. Remove from heat.
  • In a large bowl, with mixer at high speed, beat egg whites and a dash of salt just until soft peaks form. Slowly pour in hot syrup and continue beating for 6-8 minutes; until frosting is fluffy and forms stiff peaks when beaten. (is raised) Beat in 1 teaspoons Vanilla extract.
  • Frost desired cake.

1 ½ cups miniature marshmallows
1 teaspoon vanilla extract

Steps:

  • In the bowl of a stand mixer, blend egg whites and salt together in a bowl on medium speed until soft peaks form.
  • Meanwhile, bring corn syrup to a boil in a saucepan; add marshmallows and stir until melted.
  • Raise mixer speed to high. Very carefully, pour the hot syrup in a steady stream between the side of the mixing bowl and the moving beater. Beat until mixture is cool enough to touch; mix in vanilla extract. Makes enough to frost a 9x13-inch cake or an 8-inch layer cake.
