This is a recipe from my past. My best friend in middle school hailed from W. Virginia, and this was a common candy made around holidays. I thought she was crazy, but I did try it... and wow! It just tasted like good peanut butter candy! She passed away in 1991 and I still miss her to this day. This one is for you Marge. Hope...

1 medium potato, peeled and sliced
2 lb confectioners sugar
creamy peanut butter

Steps:

  • 1. In a small sauce pot, cover potato slices with water and cook over medium heat until soft.
  • 2. Drain potato and place in mixing bowl.
  • 3. Beat until mashed.
  • 4. Add 1/2 sugar and mix well.
  • 5. Mix in remaining sugar, scraping down sides as needed.
  • 6. Line a counter top with a sheet of waxed paper dusted with confectioners sugar.
  • 7. Scrape out dough onto waxed paper and dust top with more confectioners sugar.
  • 8. Roll out to a thickness of about 1/4 of an inch.
  • 9. Spread dough with peanut butter and roll up like you are making a cinnamon roll.
  • 10. Once you have rolled into a log, roll log up in your wax paper.
  • 11. Place halves in a gallon zipper bag, seal and store in refrigerator till ready to serve.
  • 12. When ready to serve, slice into 1/4 inch slices. Store leftovers in the refrigerator. Note: There probably won't be any leftovers..... LOL!

This is an old fashioned candy recipe. Now if you're thinking potato candy sounds weird, I can see where you're coming from so I'm gonna let you know what to expect. This candy is kinda in the same taste category as Fudge or Divinity. It is just that good! You won't be disappointed!

YOU CAN ADD A TEASPOON OF VANILLA IF YOU LIKE, BUT YOU DON'T HAVE TO. Y'ALL KNOW I LIKE THINGS AS SIMPLE AS POSSIBLE. YOU CAN ALSO LEAVE THE PEANUT BUTTER OUT AND JUST ROLL IT INTO BALLS, BUT OH MY GOODNESS, I LOVE THE PEANUT BUTTER!
1 - potato, peeled
1 tablespoon(s) vanilla extract
6 cup(s) confectioners' sugar, or more as needed
1 cup(s) peanut butter, or more to taste

Steps:

  • Place potato into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until very tender, about 30 minutes. Drain. Transfer potato to a large bowl and mash until smooth. Stir vanilla extract into mashed potato.
  • Stir confectioners' sugar gradually into mashed potato until consistency is like cookie dough; add more confectioners' sugar if candy is too runny.
  • Sprinkle a large piece of waxed paper with confectioners' sugar and roll potato candy out into a rectangle 1/4 inch thick. Spread peanut butter onto candy. Roll candy and peanut butter into a tight spiral; wrap candy log in waxed paper. Refrigerate until firm, about 1 hour. Cut into slices to serve.

Potato Candy?? That was my reaction! But let me tell you, it's kind of like a candy, fudge, sweet treat, oh and I should mention DELICIOUS! My neighbor used to get my kids off the bus and made this sweet treat for them once in awhile for an after school treat. In all my years of baking and inheriting heirloom recipes, this was a new one for me. It is now requested EVERY Holiday! It's an easy fun treat to make with the kids. They can't mess it up, and if they do, it still tastes delicious! Have fun, make some memories, and add a new tradition!

1 medium potato, cleaned
2 pound(s) powdered sugar
1 teaspoon(s) vanilla
2-3 cup(s) peanut butter

Steps:

  • Gather ingredients. Clean potato (leave skin on), and place in a small saucepan with water. Bring to a boil & cook until done.
  • When potato is done, a fork can go through easily, remove from water. Allow to sit for 5 minutes, then take a paring knife and peel skin off & discard. It will come off easily.
  • Mash potato with a potato masher. Add in vanilla and mix it through well.
  • Add half the powdered sugar, one pound, and mix thoroughly. I use a fork to do this. When powdered sugar is mixed in well, slowly add remaining powdered sugar mixing thoroughly. I add about 1-2 cups at a time. Dough will get firm and difficult to mix with a fork, so I use my hands at this point.
  • When you've mixed all the powdered sugar in and you have a nice ball of dough. Turn it out onto a board dusted with powdered sugar. Roll out to a 18x12 square... roughly. It doesn't have to be perfect. *** I use wax paper to roll my dough. One under dough dusted with powdered sugar and one above. Roll out to desired length and width.
  • Once rolled out, spread peanut butter evenly across dough. You can use more or less depending on your taste. Crunchy peanut butter is pretty fabulous as a filling as well.
  • Once peanut butter is spread on, roll dough, lengthwise like a jelly roll. Wrap in wax paper and place in refrigerator for two hours until set.
  • Remove from the refrigerator, and slice in 1/2 inch pieces. When I serve this for the Holidays, I drizzle with melted chocolate.
