I have used this recipe for many a years...The kids loved this because they could grab it and go...by the slice...at times I would make my raisin lemon sauce for it too like I do for my gingerbread recipe...I serve the sauce hot on the cake...This is a fabulous recipe I found in one of my old readers digest cookbooks....

2 c cake flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3/4 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp clove, ground
2 Tbsp milk
1 tsp pure vanilla extract
1 c applesauce
1/2 c butter, softened
1 c brown sugar, firmly packed
3/4 c walnut pieces
2 large eggs, beaten

Steps:

  • 1. Preheat oven to 350*...Spray cake pan with cooking oil and flour pan lightly...Oblong cake pan
  • 2. Sift flour with baking soda and baking powder, salt and spices then set aside...Mix milk, vanilla, and applesauce...set aside...Cream butter till light, add sugar gradually, cream till fluffy....add eggs beaten, beat mixture for 1 minute...
  • 3. Add dry ingredients alternating with applesauce mixture, begin with dry and end with dry, adding 1/3 of the total at a time...Beat till smooth...Mix in nuts... Spoon into cake pan, bake for 35 minutes or till springy...serve warm or cooled...with or without sauce or frosting...

3 large eggs
1 ¼ cups applesauce
⅓ cup vegetable oil
1 cup chopped nuts
1 container Duncan Hines® Creamy Home-Style Classic Vanilla Frosting
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F. Grease and flour 13x9-inch pan.
  • Combine cake mix, eggs, applesauce and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes. Stir in nuts. Pour into bake pan.
  • Bake at 350 degrees F for 40 minutes or until toothpick inserted into center comes out clean. Cool in pan 15 minutes. Invert onto cooling rack. Turn right-side up. Cool completely.
  • For frosting, combine frosting and cinnamon; stir until blended. Spread over cooled cake.

3 ½ cups all-purpose flour
½ teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cloves
3 teaspoons baking soda
½ cup butter
2 cups packed brown sugar
2 eggs, beaten
3 cups unsweetened applesauce
½ cup raisins
½ cup dates, pitted and chopped
1 cup chopped walnuts
½ cup butter
1 cup packed brown sugar
¼ cup milk
1 teaspoon vanilla extract
2 cups sifted confectioners' sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
  • Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
  • Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
  • Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
  • To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

4 pounds tart apples
1 cup water
1 cinnamon stick or 1/2 teaspoon cinnamon extract
1/2 to 1 cup sugar

Steps:

  • Peel, core and quarter the apples. In a Dutch oven, bring apples, water and cinnamon to a boil. Reduce heat; cover and simmer 10-15 minutes or until apples are tender. Remove from the heat. Add sugar to taste and stir until dissolved. If you used a cinnamon stick, remove and discard. Mash apples with a potato masher until desired texture is reached. Serve warm or chilled.

2/3 cup shortening, softened
1 1/4 cups granulated sugar
1 cup brown sugar, packed
3 eggs
1 3/4 cups unsweetened applesauce

3 cups sifted flour

1 cup dates (or half of each) or 1 cup raisins (or half of each)
1 cup walnuts
1 3/4 teaspoons salt
1/4 teaspoon nutmeg
3/4 teaspoon allspice
1/2 teaspoon clove
1 1/4 teaspoons cinnamon
1 3/4 teaspoons baking soda
1 cup brown sugar, packed
1/4 cup milk
3 tablespoons butter, softened
1 teaspoon vanilla
1 1/2-2 cups confectioners' sugar

Steps:

  • Cream shortening, sugar, and eggs; add applesauce and mix well.
  • Stir dry ingredients into mixture, alternating with water.
  • Blend fruit and nuts into batter.
  • Pour into greased and floured 9"x13" pan.
  • Bake at 350 degrees for 55 to 60 minutes.
  • Cool in pan and frost.
  • Make frosting: Combine brown sugar, 1/4 cup milk and 3 tablespoons butter in top of double boiler.
  • Cook rapidly for about 3 minutes, stirring.
  • Cool to luke warm and add 1 teaspoon vanilla.
  • Beat in confectioner's sugar to right consistency.
