GRAPE-NUT CUSTARD PUDDING

Grape-Nut pudding is a classic New England dessert of lightly-sweetened egg custard combined with Post Grape-Nuts cereal and spices.

1 cup Post Grape-Nuts cereal
4 cups whole milk
5 large eggs
2 to 3 teaspoons vanilla extract
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon (plus more for dusting over the top of the pudding)
Freshly ground nutmeg (for dusting over the top of the pudding)

Steps:

  • Preheat the oven to 350°F and heat a kettle of water to just below boiling.
  • Generously butter the bottom and sides of a glass baking dish (either 13 x 9 or 9 x 9 - see notes).
  • Place the Grape-Nuts cereal in a large bowl and set it aside.
  • Scald the milk in the microwave or a saucepan and pour it over the cereal, reserving 1/2 cup for tempering the eggs.
  • Set the cereal and milk aside for 5 minutes to begin softening.
  • While the cereal soaks, whisk the eggs, vanilla, sugar, salt, and cinnamon together until the sugar is dissolved and the mixture is a little frothy.
  • Start whisking the reserved milk into the eggs, 1 tablespoon at a time.
  • Once the eggs are tempered, add them to the bowl with the milk and cereal.
  • Stir to combine, pour the mixture into the prepared baking dish, and sprinkle some extra cinnamon and nutmeg over the top.
  • Place the baking dish into the center of a large roasting pan and carefully pour the hot water into the outer pan to a depth of about 1-inch.If you aren't familiar with baking custard in a water bath (bain-marie), click here for a more detailed explanation.
  • Carefully place the pan in the oven and bake for 45 to 55 minutes, or until the pudding pulls away from the edges of the dish slightly and a butter knife inserted into the center comes out clean.
  • Remove the pudding from its water-filled outer container and set the dish on a cooling rack to cool completely.
  • To serve, cut into squares for serving and top with whipped cream if desired.

1 cup Grape-Nuts cereal
3 cups milk
1 cup heavy whipping cream
2 teaspoons vanilla extract
4 large eggs, beaten
2/3 cup granulated sugar
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees, and grease a 13x9 casserole dish with butter.
  • Soak Grape-Nuts cereal in hot water to soften for about ten minutes. Drain water.
  • In a mixing bowl, whisk together milk, cream, vanilla, eggs, sugar, cinnamon, and nutmeg.
  • Pour mixture into the casserole dish along with the cereal. Mix to evenly distribute the cereal.
  • Set casserole dish in a roasting pan and fill halfway with water. Bake for about 60-75 minutes until custard is firm all the way through. It took closer to 75 minutes in my oven.
  • Once firm, remove from oven and let cool. Serve warm or cold. Leftovers must be kept covered and refrigerated for up to 3 days.

This recipe has been hanging around our family for generations.....my Mother used to bake this for us....and I still make it for my own children and my grandchildren.......I'm sure many of you remember it, or perhaps you don't make it any more, and will be glad to have the recipe again!.........K. :)

4 large eggs
1/8 tsp salt
2/3 c sugar
1 tsp pure vanilla extract
4 c scalded milk
3/4 c grapenuts cereal
a few dots of butter, and a sprinkle of nutmeg

Steps:

  • 1. preheat oven to 350......mix first four ingredients, then add milk and grapenuts in a round casserole dish that has a cover. dot w/a tiny bit of butter, and sprinkle w/ nutmeg
  • 2. Put the casserole dish into a baking pan of water, and bake for about 1 hour or until a knife comes out clean.....let sit out without cover until it cools, then put in refrigerator with cover on till you're ready to serve!........yum!.....K. :)

2 cups milk
½ cup white sugar
⅛ teaspoon salt
3 large eggs
1 teaspoon vanilla extract
¾ cup wheat and barley nugget cereal (e.g. Grape-Nuts™)
2 tablespoons butter or margarine, cut into small pieces
2 cups hot water
½ teaspoon ground nutmeg

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Beat the milk, sugar, salt, eggs, and vanilla together in a bowl; pour into a baking dish. Sprinkle the cereal over the mixture and dot with the butter pieces. Gently set the baking dish into a larger baking dish. Pour enough hot water into the larger dish to reach at least 1 inch up the side of the dish with the custard.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Sprinkle the nutmeg over the dish to serve.

2-1/2 cups whole milk
4 eggs
1/2 cup sugar
1/4 teaspoon salt
Dash ground nutmeg
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract

Steps:

  • Preheat oven to 325°. In a small saucepan, heat milk until bubbles form around sides of pan. In a small bowl, whisk eggs, sugar, salt and nutmeg. Remove milk from heat; stir a small amount of hot milk into egg mixture. Return all to pan, stirring constantly. Stir in extracts., Transfer to nine 4-oz. ramekins. Place cups in a baking pan; add 1 in. of boiling water to pan. Bake, uncovered, 25-30 minutes or until center is just set (mixture will jiggle). Remove ramekins from water bath; cool 10 minutes. Refrigerate until chilled.
