1/4 cup mayonnaise
2 teaspoons lemon juice
1 teaspoon dried minced onion
1/4 teaspoon salt
1/4 teaspoon pepper
6 hard-boiled large eggs, chopped
1/2 cup finely chopped celery

Steps:

  • In a large bowl, combine mayonnaise, lemon juice, onion, salt and pepper. Stir in eggs and celery. Cover and refrigerate until serving.

8 medium potatoes, quartered
1/4 cup white wine vinegar
1/4 cup olive oil
salt
fresh black pepper
1 1/2 cups diced celery
1/4 cup finely chopped green pepper
2/3 cup chopped red onion
1/2 cup mayonnaise (low fat is fine)
3 tablespoons Dijon mustard
8 hard-boiled eggs, peeled and chopped
1/3 cup chopped fresh parsley
3 -4 radishes, sliced thinly
paprika

Steps:

  • Cook peeled potatoes until tender firm, about 20 minutes.
  • Drain and dice potatoes- season with oil and vinegar while still warm.
  • Season to taste with salt and pepper.
  • Add vegetables.
  • Mix mustard with mayonnaise and blend with potato mixture.
  • Add eggs and parsley and toss again.
  • Taste and adjust seasoning, adding more mayonnaise if needed.
  • Garnish with radish slices and paprika.
  • Cool,cover and refrigerate overnight.

1 head iceberg lettuce, cut into 1 1/2-inch cubes
4 hard-boiled extra-large eggs, cut into thin slices
3/4 cup sweet onion, thinly sliced
1/2 cup olives or 1/2 cup pimento stuffed olive, sliced
3/4 cup mayonnaise
1/4 cup French dressing, store bought preferred

Steps:

  • In large bowl, combine lettuce, half the eggs, half the onions, and half the olives.
  • Toss lightly.
  • Garnish with remaining eggs, onions, and olives.
  • Cover and chill.
  • In small bowl, mix mayonnaise and French dressing until well blended.
  • Drizzle over salad.

"Egg Salad Sands" to go with that Cup of "cream of Tomato Soup" I have Posted, Makes a great Combination. One of My favorites and a Thrifty meal. There are as many Versions as I have Recipes. Here Is My version.

FILLING FOR EGG SALAD SANDS
6 eggs boiled, peeled and chopped
1/3 - 1/2 cup mayo
1/4 C chopped onion (i have used red or white)
2 chopped green onions, with the white parts also
1/3 C chopped celery
1 Tsp mustard ( i use dijon mustard or yellow)
salt and pepper to your taste buds
6 slices bread ( your choice) makes 3 sands

Steps:

  • 1. Mix filling ingredients and Set aside.
  • 2. To make Sands; Spread Mayo on 2 slices of bread. add a layer of Filling, a layer of Lettuce, top with another slice of Bread
  • 3. Serve with Sweet,or Bread and Butter Pickles or Dill Pickles, Tomato Slices, and a cup of Hot Soup. Enjoy A great Meal. Can't get any better than this!!!

1 large head cauliflower, cleaned
6 large hard boiled eggs, chopped
2 stalks celery, finely diced
1 cup mayonnaise
1/2 teaspoon yellow mustard
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 ⁄8 teaspoon garlic powder
Paprika, for garnish
Fresh parsley, chopped, for garnish

Steps:

  • Chop the cauliflower into small pieces (should make about 4 cups). Set a large pot of water over high heat and bring to a boil. Cook the cauliflower pieces in the boiling water for about 5 minutes, until tender. Drain cauliflower and immerse in an ice water bath to stop the cooking process. Drain cauliflower well and then pat dry between several layers of paper towels. Place the cauliflower in a bowl with all of the remaining ingredients, except the garnishes, and fold together. Sprinkle with the paprika and parsley, and chill for at least 1 hour before serving. Tip: Be sure to fold all of the ingredients together until the salad is a nice yellow color.

As far as Potato Salads go, this one is about as traditional and standard as they get. Some folks love a Dill Pickle flavor in their Potato Salad. I much prefer the Sweet Pickle Relish, myself. The addition of Cider Vinegar adds the tartness to counter balance the flavors. The inclusion of Chopped Eggs is what makes this Old Fashioned for me. I believe making a Potato Salad is one of the smartest dishes you can make ahead, when you are entertaining. It goes with so many things, and you're not in the kitchen, at the last minute, mashing Potatoes. I'm all for making things ahead.
