PA'S OLD-FASHIONED JOHNNY CAKE / CORNBREAD
The plain version was a staple during my dad's Depression-years childhood; but we rarely had it when I was growing up. My children expect this at least once a month as a regular feature on our Saturday morning breakfast menu OR when we have breakfast-for-supper. Prepare the optional sausage and hard-boiled eggs ahead of time, and it goes together quicker-n-anything!

Steps:
- Preheat the over to 400 degrees fahrenheit. Combine powder, soda, salt, sugar, cornmeal and flour in a large bowl. Combine buttermilk and eggs in a bowl. Place your iron skillet in the oven and put the 2 tablespoons butter into the skillet to melt. (You can substitute a 8x8 pyrex but it's not the same) Pour the buttermilk and egg mixture into the flour mixture and mix until just combined. Then add the melted butter. The batter should be lumpy and just a bit on the dry side. Pour this mixture into the hot iron skillet then bake for 20 minutes or until a knife inserted into it comes out just shy of clean. The primary difference in this recipe is the addition of the sugar. It makes a a sweeter recipe. I also increase the cornmeal and decrease the flour because I like my cornbread to be a bit "cornier."
OLD FASHIONED SOUTHERN CORNBREAD DRESSING
I have been making this dressing for years. I found it in one of those community recipe cookbooks. You can use your favorite regular cornbread recipe with this (but not sweet cornbread).

- Mix with remaining ingredients except broth in large bowl.
- Moisten with broth to your taste (I like mine pretty wet, I usually get closer to the 3 cups).
- Place in a casserole dish or aluminum pan.
- Bake at 400°F for 25 to 30 minutes, or until a nice crust develops on the top.
- **May use to stuff a 10 to 14 pound turkey. If stuffing a turkey, add very little broth. It will absorb additional moisture in the turkey. Pack loosely.

OLD FASHIONED MEXICAN CORNBREAD
Spend some time looking for the right product to make this with. It is not cornmeal mix or cornbread mix, such as Aunt Jemimah. It is just plain, self-rising cornmeal, and I usually get mine from a specialty store, but I can occasionally find it in the grocery store. It will have only cornmeal and leavening in it (baking powder...

Steps:
- 1. Place the bacon grease in the bottom of a well-seasoned 9" or 10"cast iron skillet. Preheat it at 425°F for 10 minutes. Meanwhile, mix up batter: Stir together cornmeal, egg, milk, corn, chilies, jalapeños, and cheese to a thin batter. Use more milk if necessary to produce a batter thinner than cake batter.
- 2. When skillet is preheated, pour batter into skillet. It will sizzle and start to form a crust - don't be alarmed. Bake the skillet of cornbread at 425°F about 25 minutes, until nicely browned. Cut into wedges. Serve immediately with lots of butter.
OLD FASHIONED SOUTHERN CORNBREAD
Got this recipe from the Lodge Cast Iron Cookbook, made in my cast iron skillet. I added the sugar to it; most cooks in the South refuse to put sugar in their cornbread. This uses plain self-rising cornmeal, no flour added.

OLD-FASHIONED HOT WATER CORNBREAD RECIPE - (4.4/5)

Steps:
- Heat oil and bacon fat in a deep fryer or in a pot or heavy skillet over medium-high heat. (It needs to be deep enough to cover the spoons of batter.) Whisk the cornmeal and salt together. Using a spoon to mix, stir in just enough boiling water for the batter to stick together. It should be about the consistency of mashed potatoes. (I used about 1 1/4 cups.) When oil is hot, spoon walnut-sized tablespoons of batter into your hands and smooth out a bit. (It helps to wet hands first.) Drop into hot oil, a few at a time. Fry until golden brown. Drain on paper towels. Makes about 20.

CURLEY'S OLD FASHIONED CORNBREAD
This is my mother's recipe. It was on the menu at every cafe she cooked. This cornbread has a great crisp crust yet the inside is soft and tender. It is a perfect accompaniment to soups, stews and the southern standard, "a big ole pot of brown beans."

- Combine all DRY ingredients in a large bowl. Set aside. In separate bowl, mix honey, egg & butter until well incorporated. Add buttermilk & mix to combine thoroughly. Create a well in the dry ingredients and pour in the wet ingredients. Mix until just combined. It will be soupy & you won't believe that it will amount to anything when it grows up. You'll beat yourself up, thinking, "I should have done more. I should have added more dry ingredients. I should have saved it." But trust me. Just pour the mixture into an 8″x8″ (or 9″x9″) square baking dish, and place it in a 400 degree oven. Bake for 25-30 minutes. Just do it! Have I ever led you astray? Now behave yourself & I'll consider posting my cornbread apple stuffing recipe another day.
