Before the days of the cornbread mix casserole Grandma made this corn casseole ands it is GOOD!

8 slice bacon, cooked and crumbled
1 (15 ounce) cans cream-style corn
2 eggs, beaten
1/2 c chopped onion
1/2 c chopped green bell pepper
1 c milk
16 crushed saltine crackers

Steps:

  • 1. Preheat oven to 350 degrees, and grease a 9x13 inch baking dish.
  • 2. Mix corn, crumbled bacon, eggs, onion, bell pepper, milk, and crushed crackers in prepared baking dish, and bake in the preheated oven for 1 hour, until the casserole is thickened and bubbling.

I have inherited my grandma's recipe box.... I have been going through and reviewing them and decided to begin sharing them with you all... Some of these were passed to her from her mother, and some she had cut out of magazines or newspapers and placed in her box.... This one was one of hers wrote on a recipe card.... It is wonderful...

2 (15 ounce) cans creamed corn
3 eggs
4 tablespoons sugar
4 tablespoons flour
4 tablespoons butter, melted
1 1/2 cups American cheese, grated
1 (4 ounce) jar pimentos

Steps:

  • Mix all ingredients together in a large bowl.
  • Pour into a buttered 12 X 9 (I think that's the size, the card is faded) casserole pan.
  • Bake at 350 for 35-40 minute or until center is set.

It's amazing to know that this corn pudding originally appeared in a Kansas cookbook dated 1854! This time-tested recipe is wonderful, and I've served it often to my family and guests. It's also a recipe I've shared with many of my friends who've requested it.

3 large eggs
2 tablespoons butter, melted
2 tablespoons all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup whole milk
1 can (16-1/2 ounces) cream-style corn

Steps:

  • In a bowl, beat eggs. Add butter, flour, sugar and salt; mix well. Stir in milk and corn. Pour into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 35 minutes or until a knife inserted in the center comes out clean.
