1 cup sugar
1/3 cup baking cocoa
1/4 cup all-purpose flour
Pinch salt
2-1/4 cups water
1 tablespoon butter

  • Unroll crust into a 9-in. pie plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack or until edge is golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer or. 5 Eggs, separated
1/2 cup Cocoa
1-1/2 Tablespoons Vanilla Flavoring
2 cups Sugar
3-1/2 cups Milk
1 cup Flour
1 stick Butter or Margarine
5 egg whites, from above
3 Tablespoons Sugar
Pinch of Cream of Tartar

Steps:

  • Pre-bake the two pie shells. Set aside and let cool.
  • Separate the egg whites from the yolks.
  • Place egg whites in a clean glass or metal mixing bowl, let come to room temperature.
  • Place egg yolks in a large mixing bowl.
  • Add cocoa.
  • Add vanilla flavoring.
  • Add sugar.
  • Add milk.
  • Add flour.
  • Mix well with an electric mixer.
  • Place mixture in a sauce pot over Medium heat.
  • Add the butter, stirring constantly as mixture heats up.
  • Cook until mixture is thick, stirring constantly. About 10 minutes.
  • Remove from heat and let mixture cool for about 10 minutes.
  • Beat the egg whites until soft peaks form.
  • Add the sugar.
  • Add the Cream of Tartar.
  • Beat egg whites until stiff peaks form.
  • Divide the cooked chocolate mixture into the two pie shells.
  • Divide the meringue over the top of the pies.
  • Bake at 350F degrees until top is lightly browned.
  • Remove from oven, place on wire racks to cool.
  • Refrigerate, uncovered for 2-3 hours to firm up.
  • Enjoy!

1/4 cup shortening
3/4 cup sugar
1 egg
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1 unbaked pastry shell (9 inches)
2 tablespoons chopped nuts, optional

Steps:

  • In a small saucepan, bring the water, chocolate and butter to a boil; boil for 1 minute. Remove from the heat; stir in sugar and vanilla until smooth. Set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. , Pour into pastry shell. 1 cup sugar
¼ teaspoon salt
2 cups milk
2 Tablespoons butter
6 Tablespoons cocoa powder
4 Tablespoons cornstarch
3 egg yolks, beaten (at room temperature)
1 pre baked pie crust
Whipped cream for topping and cocoa powder for dusting (optional but highly recommended!)

Steps:

  • In a saucepan mix together cornstarch, cocoa, sugar, and salt. Add milk and cook on medium heat constantly whisking until thickened, about 15 minutes. In a small bowl beat egg yolks. Set aside.
  • Ladle out some of the chocolate mixture into beaten egg yolks, stirring constantly being sure not to scramble the eggs. This allows the eggs to come to proper temperature (the fancy term is called tempering). Then, add egg yolk mixture back into saucepan. Cook again until thickened, another 5 minutes.
  • Take off the heat and add butter.
  • Pour into the baked pie shell and refrigerate overnight. Top with whipped cream and a dusting of cocoa powder before serving.

This is your grandma's puddin' pie, only it's vegan - a smooth, cool and creamy pudding in a classic graham cracker shell. To make life even easier, you can use a store-bought crust. For added grandma love, serve with vegan whipped cream and shaved chocolate. 1 3/4 cups finely ground graham crackers (made from 10 ounces of whole graham crackers)
3 tablespoons sugar
4 tablespoons melted nonhydrogenated margarine, melted coconut oil or canola oil
1 tablespoon plain soy milk or almond milk
3 cups almond milk
1/4 cup cornstarch
1/3 cup sugar
3 tablespoons unsweetened cocoa powder
Big pinch of salt
1/4 cup semisweet chocolate chips
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees and lightly spray a 9-inch pie plate with nonstick cooking spray.
  • In a mixing bowl, combine the graham crumbs and sugar. Drizzle in the oil or melted margarine. Use a spoon to blend the mixture thoroughly to moisten the crumbs, then drizzle in the soy milk and stir again to form a crumbly dough.
  • Pour the crumbs into the pie plate. Press crumbs into the sides of the plate first, then work your way down to the bottom. Bake for 8 to 10 minutes until firm. Let the crust cool before filling.
  • In a small (2-quart) saucepan off the heat, combine 1 cup of the almond milk and the cornstarch. Use a fork to whisk until the cornstarch is good and dissolved. Whisk in the remaining almond milk, the sugar, cocoa powder and salt. It's O.K. if the cocoa is a bit clumpy at first; it will dissolve eventually.
  • Bring the mixture to a boil, whisking occasionally. Keep a close eye because once boiling, you want to lower the heat and bring it to a slow rolling boil. Whisk consistently until the mixture is thickened, which should be about 7 minutes.
  • Add the chocolate chips and mix to melt. Stir in the vanilla extract. Pour the pudding into the prepared pie shell and let cool for about 15 minutes on the counter, just until it stops steaming like mad. To keep a skin from forming, place a circle of parchment paper over the filling. Refrigerate and let set for at least 3 hours.

3/4 cup sugar
5 tablespoons baking cocoa
3 tablespoons cornstarch

2 cups whole milk
3 large egg yolks, room temperature, beaten
1 teaspoon vanilla extract
3 large egg whites, room temperature
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack.
